Vegan Peanut Sauce is ready in just 5 minutes with a handful of pantry staples you probably have on hand right now! It can be used as a dipping sauce, salad dressing, in noodle dishes or drizzled on buddha bowls.

Vegan Peanut Sauce

peanut butter

rice vinegar

soy sauce (use tamari

maple syrup OR agave

ground ginger (or 2 teaspoons fresh grated ginger)

Sriracha hot sauce

unsweetened coconut milk, as needed (SEE NOTE)

In a medium sized bowl, whisk all the ingredients together until smooth. Start with just 2 tablespoons of coconut milk, and add more as needed to thin the sauce.

If serving as a dip, sprinkle with crushed peanuts. The sauce also goes well with noodles, buddha bowls, fresh spring rolls, tofu and salads.

Store in a covered container in the refrigerator for up to 1 week. It can also be frozen in a freezer safe container.

The Best Vegan Thai Peanut Sauce

peanut butter (made

soy sauce

maple syrup

tbsp toasted sesame oil

tbsp rice vinegar

water

tsp ground ginger

garlic (finely minced)

lime juice

1/4-1/2 tsp red pepper flakes

Finely mince the garlic (I suggest using a garlic press so you don't have any large chunks) and add to a large mixing bowl.

Add all ingredients aside from the water and whisk together until smooth.

Slowly pour in the water until your desired consistency is reached. Start with 1/4 cup and add more as needed. I usually add more for a dressing and a bit less for a sauce.

Taste and adjust seasonings as desired. You may want more soy sauce, sweetener or red pepper flakes. Serve with noodle bowls, tofu, tempeh, chicken, stir fries etc!

10-Minute Peanut Spring Roll Sauce

These healthy vegetable summer rolls with a peanut dipping sauce can be turned into a refreshing snack, light meal, or even a beautiful party appetizer. Summer rolls are a fun way to eat what is otherwise basically a salad, and of course, the peanut sauce is the star of the show. 

Healthy Vegetable Summer Rolls with Peanut Dipping Sauce

Vietnamese spring roll wrappers

baby butter lettuce

purple cabbage

carrots

red bell pepper, julienned

cucumber,

basil

mint

coconut aminos

honey

½ teaspoon pure sesame oil

lime, juiced

chili garlic sauce

To make the dipping sauce, combine all of the ingredients in a small bowl and whisk to combine, saving the water for last. You may need to add more water if you would like a thinner consistency (it will thicken up once chilled).

To make the rolls, fill a square baking dish with warm water. Soak one rice paper sheet in the water for about 15 seconds, until beginning to soften, but not gummy. Place the sheet on a wood cutting board or surface, leaving the end hanging over the board. Add the fillings of your choice, being careful not to overstuff, leaving ½” space between the edge of the sheet and the fillings. I recommend placing 2 to 3 baby butter lettuce leaves down first, then layer in this order: cucumber, bell pepper, shredded carrots, shredded cabbage, green onion, basil and mint leaves. Fold in the sides and roll the rice paper and the fillings as you would a burrito, making sure the ingredients are tightly packed as you roll. Move it to the side and soak a second rice paper sheet. Repeat the rolling process to secure the fillings and reinforce the first rice paper sheet.

Repeat this process until all of the fillings have been used and the number of desired rolls has been reached. Cut the rolls in half with a dry, clean knife and serve with the peanut dipping sauce.

1½ tbsp rice vinegar

lime (juiced)

Coconut Milk ((120 milliliters) Canned, Full Fat, Unsweetened)

Soy Sauce ((60 milliliters))

Add the peanut butter, coconut milk, soy sauce, rice vinegar, maple syrup, garlic powder, ground ginger, fresh lime juice and dried chili flakes to a measuring jug.

Whisk until smooth.

Garnish with some crushed peanuts (optional) and serve.

Recently found this recipe to go with Gado Gado - it went perfectly during our super hot summer Christmas holiday.  I have tried many satay type recipes before, but this one was absolutely the best ... and easiest!  I have never seen any of my satay sauces disappearing at the dinner table as quickly as this one (I must remember to double it next time!)

Really tasty and easy, I had coconut milk powder and crunchy  peanut butter ...just used the immersion blender. Mine was a tiny bit more watery because of the coconut powder ..perfect for a veggie stir fry!

This is honestly one of the best (and easiest) peanut sauce recipes I’ve ever made. It’s insanely creamy and flavourful - we’re obsessed!!!! I did sub in real garlic and ginger, because we did not have powdered of either and it was incredible. Very pleased!!!
