Simple and delicious Mediterranean inspired vegetarian Roasted Chickpea Gyros with refreshing tzatziki sauce.

Roasted Chickpea Gyros

15 oz can chickpeas (425 g, 1 ½ cup soaked chickpeas

olive oil (15 mL)

Tbsp paprika* (7 g)

tsp black pepper (3 g)

cayenne pepper (1.5 g)

salt (1.5 g)

pita flatbreads

tzatziki (click

onion

lettuce leaves (roughly chopped)

tomato (sliced)

Prep: Preheat oven to 400 degrees F (204 C). Pat dry chickpeas with paper towel, removing any skins that may come off.&nbsp;Gently toss chickpeas with oil, paprika, black pepper, cayenne pepper, and salt.

Roast: Spread chickpeas onto a greased rimmed baking sheet and roast for about 20 minutes, until lightly browned but not hard.

Assemble:&nbsp;Spread some tzatziki onto one side of the pita, then sprinkle in ¼ of the chickpeas and add veggies. Fold in half and enjoy!

This easy, weeknight meal can be ready in about 30 minutes or less if you’ve got an air fryer! (Air Fryer and Oven Instructions included.)

Vegetarian Gyros

(15 oz.; 439 grams) chickpeas (garbanzo beans)

olive oil

EACH: paprika, dried oregano

EACH: garlic powder

Fine sea salt & cracked pepper

For serving: green leaf lettuce, halved

(35 grams) grated English/Persian cucumber

(54 grams) plain whole Greek yogurt ((we love Greek Gods))

red wine vinegar

lemon juice

PREP: Preheat oven to 400 degrees F (200 C). Drain and rinse chickpeas and then dry in a salad spinner or with paper towels (wet chickpeas won&#039;t roast as nicely). Generously grease a sheet pan with cooking spray.

CHICKPEAS: Add chickpeas to the prepared pan. Drizzle on oil, seasonings, salt, and pepper to taste (I add 1/2 teaspoon salt and 1/4 teaspoon pepper). With your hands, toss everything until well coated; spread the chickpeas out in an even layer (not overlapping) on the tray. Roast for 18-22 minutes, tossing or shaking the tray at the halfway mark. (We like them best at 20 minutes). Roast until they&#039;re crisp, but not hard. Remove and set aside. (See Note 1 for Air Frying Directions)

TZATZIKI: Meanwhile, grate cucumber with the large holes of a cheese grater. Line a small bowl with a few paper towels (or a clean kitchen towel) and place the grated cucumber on top. Squeeze out as much extra moisture as you can from the cucumber to keep the sauce from being watery. Once it&#039;s drained, add to a medium-sized bowl with the rest of the sauce ingredients. Season to taste with salt and pepper (I add 1/8 teaspoon salt and a pinch of pepper). Cover the bowl and place in the fridge until ready to serve.

CHAR THE PITA BREAD: Spray both sides of the pita bread with olive oil cooking spray and &quot;grill&quot; the bread on the stovetop over an open flame (on medium heat) until slightly charred, about 10-15 seconds per side (flip with tongs). Once charred, immediately fold in half and cover with a clean towel until ready to serve. Alternatively, warm (covered with a damp paper towel) in the microwave.

ASSEMBLY: Spread hummus or tzatziki sauce on one side of the warmed pita bread. Add half of the chickpeas (press into sauce to help them stay better) and then add desired toppings such as thinly sliced red onions, thinly sliced cucumbers, diced cherry tomatoes, and feta cheese. Drizzle tzatziki sauce generously over everything. If desired, squeeze fresh lemon on top. Fold up and enjoy immediately!

A seriously flavorful, high protein, plant-based weeknight meal that&#39;s super satisfying and delicious for all eaters.

Epic Vegan Gyros with Tzatziki

block extra firm tofu

olive oil (divided)

soy sauce

onion powder

black pepper

vegan chicken bouillon powder (optional)

mushrooms

vegan mayonnaise or plain Greek yogurt

lemon juice + zest from lemon

smoked paprika powder

cumin

oregano

salt

red pepper flakes

brown sugar

romaine, shredded

tomatoes, diced or sliced

red onion, thinly sliced

pitas oregano (warmed)

parsley

fries (optional)

Preheat oven/ for fries: If making fries, double check the directions for cooking time. Toss the fries with some oil, a sprinkle of garlic powder, and  a pinch of salt. Pop them into the oven/air fryer to be ready when the gyros are ready to serve.

Dairy-free tzatziki: Whisk the tzatziki ingredients together if making from scratch. Chill until needed. This sauce can be made up to several days in advance (recommended).

Prepare the tofu and mushrooms: Use extra firm tofu or press softer tofu* for 30 minutes while you prepare the other recipe components. *Tofu can be pressed a day or two in advance and stored in the refrigerator as needed.

Make the marinade: Whisk the gyros meat marinade ingredients together in a small bowl or measuring cup.

Shave the mushrooms using a mandoline or sharp knife (see photos).

Cook the mushrooms: Add some olive oil or butter to a large skillet and pan fry the sliced mushrooms over medium high heat until golden and crispy around edges (~5-7 minutes). Pro Tip: You can cook the mushrooms with the tofu, but you don&#39;t get as much flavor and texture IMO. Transfer the mushrooms to a bowl.

Shave the tofu using a mandoline or sharp knife while the mushrooms are cooking. (Newbies, shave your mushrooms and tofu before starting so you&#39;re not doing two things at once.)

Cook the tofu: Toss the shaved tofu with the seasonings in a bowl. Reheat the skillet (from the mushrooms) with ~1 tablespoon oil (or cooking spray) over medium-high to high heat. Add the seasoned tofu and cook, gently stirring frequently until golden with some crispy edges (~5-7 minutes).

Prep the vegetables: While the tofu is cooking, prepare the veggies: romaine, tomatoes, red onion, and cucumbers.

Finish the gyro meat: Pour ~3/4 of the &#39;marinade&#39; sauce into the pan with the tofu - toss it all together and let it cook over medium heat for 3 or 4 minutes until the sauce sticks to the tofu. Add in the mushrooms and the remaining marinade sauce - toss together and let cook another minute or two until heated through.

Pitas: Just before serving, warm the pitas in the microwave to make them more pliable. OR for an extra layer of flavor: Pour some olive oil into your hands and rub it over both sides of the pita (like applying suntan lotion), sprinkle with garlic powder and oregano and heat on a grill pan or in a large skillet until warm and pliable.

Assemble the gyros: Spread tzatziki on the warm pita. Then add shredded lettuce, gyros meat, fresh veggies, a pile of Greek fries (if using), and more dollops of tzatziki on top. Fold over and enjoy!

These gyros wraps present beautifully and are packed with flavour punctuated with the perfect amount of crunch.  My husband devoured two !   Wouldn't hesitate to serve to the pickiest foodie! Include in your family BBQ or just serve as main course.    10/10

I am becoming a true tofu-atarian! This is an outstanding recipe, easy to make, and over-the-top delicious. My only complaint: need to make more!

These gyros are so damn good. The texture and flavors are spot on. I could eat them every day. The dairy free tzatziki is out of this world delicious. Really it would taste incredible on everything!

These are so good! It's spicy from the gyro meat, tart and garlicky from the tzatziki, and crunchy from the vegetables. It definitely benefits from a high quality pita.
