I leggerissimi vol au vent (volo al vento) sono dei cestini fatti da più strati sovrapposti di pasta sfoglia, spennellati con uovo e cotti in forno. Si servono come antipasto o finger food, farciti nei modi più vari. La ricetta base che vi proponiamo spiega, passo dopo passo, come realizzare questi fragranti canestrini pronti per mille ripieni diversi, dal salato al dolce.

Per preparare i vol au vent iniziate con lo srotolare il primo disco di pasta sfoglia e, utilizzando un tagliapasta circolare da 6 cm di diametro, ricavate tanti dischetti cercando il più possibile di evitare avanzi di pasta. Procedete in questo modo anche con il secondo rotolo di sfoglia. Tenete da parte 10 dischetti e disponeteli su una teglia foderata di carta forno. Sui dischetti restanti praticate un foro centrale utilizzando un tagliapasta più piccolo (circa 3-4 cm di diametro) in modo da ricavare tante corone.

Bucherellate con i rebbi di una forchetta i 10 dischi pieni e spennellateli con l'uovo sbattuto. Su ciascuno di essi posizionate 3 corone avendo cura di pennellare sempre con l'uovo sbattuto anche nei bordi. Questa operazione non solo serve a fissare le corone tra loro, ma ha la funzione di consentire la caratteristica colorazione dorata dei vol au vent.

Cuoceteli nel forno già caldo a 200° per 10-15 minuti o comunque fino a quando i vol au vent appariranno gonfi e dorati.

Place la grille au centre du four. Préchauffe le four à 180 °C (350 °F).

Tartine un côté des tranches de pain avec du beurre. Enfonce chaque tranche de pain dans un moule à muffins, côté beurré vers le bas, pour former des petits bols. Cuis-les bols au four environ 20 minutes ou jusqu’à ce qu’ils soient dorés et croustillants. Mets-les de côté.

Pendant la cuisson des vol-au-vent, fais la béchamel.

Ajoute 500 ml (2 tasses) de poulet cuit, coupé en dés et 250 ml (1 tasse) de petits pois surgelés à ta béchamel. Poursuis la cuisson de 3 à 4 minutes ou jusqu’à ce que les pois soient tendres. Rectifie l’assaisonnement. Verse la sauce dans les coupelles de pain grillé en la laissant déborder de chaque côté.

Merci Ricardo pour cette alternative. Je vais les cuisiner maintenant. Je ne veux pas acheter les vols au vent du commerce. À 8$ le paquet, c'est nettement exagéré. Qu'ils les gardent.

J' ai mis des légumes congelés  que j' ai décongelé , coupé en petits morceaux puis rajouter avec le poulet. Très bon, les petits enfants ont bien aimé.

Facile et rapide à faire....mais surtout bon.

Excellent!!! Simplement envie de partager que j'ai ajouté 1 c.à.soupe Bovril Poulet dans béchamel pour couper le goût laiteux et de très petits cubes de carottes & céleri attendris dans la poêle.. Les petits pois en canne doivent être ajoutés qu'à la fin.

Excellent pâté au poulet minute! En individuel, avec une croute sur le dessus seulement !

J'ai fait les petits bols avec du pain sans gluten et c'était parfait. Pour la béchamel, j'ai utilisé du lait d'amande et de la margarine; elle était excellente!

Quel lait soya, riz, amande... puis-je utiliser pour éviter le contact lactose ?  Pour une béchamel réussie
