Red, White &amp; Blue Salad ~ a refreshing, patriotic dessert packed with fresh blueberries and strawberries!

Red, White & Blue Jello Salad

water (divided)

c. water (divided)

blueberries

gelatin

c. milk

sugar

sour cream

vanilla

strawberries (chopped)

oz cool whip (room temperature)

In a bowl dissolve strawberry jello in 2 c. boiling water. Then stir in 2 c. of cold water. Add strawberries. Refrigerate until firm, which is about 2-3 hours. Make sure it is firm before next layer.

Put 1/2 c. cold water in saucepan. Sprinkle unflavored gelatin over water. Let stand for 1 minute. Add milk and sugar, cook and stir over medium heat until gelatin and sugar are completely dissolved. Cool this mixture to room temperature then whisk in vanilla and sour cream. Pour over strawberry jello and refrigerate until firm, about 2 hours.

Dissolve blue jello and 2 c. of boiling water in a medium bowl. Stir in 2 c. cold water and add blueberries. Spoon this mixture over white layer in trifle bowl. Chill until set about 4 hours.

Top with Cool Whip, blueberries and strawberries.

This fresh and delicious patriotic salad combines strawberries, blueberries and mozzarella cheese for a red, white and blue side dish perfect for Memorial Day and the 4th of July! Topped with toasted pine nuts, fresh basil and balsamic vinaigrette this Caprese inspired salad is sure to wow your friends and family!

4th of July Salad

olive oil

balsamic vinegar,

garlic, crushed

tbsp maple syrup

thyme

salt & pepper

lettuce, mix spinach

strawberries,

mozzarella,

pine nuts

basil,

Heat a skillet over medium heat. Do not add oil or cooking fat. Add pine nuts to the skillet and cook on medium heat for 2-3 minutes until lightly toasted, shaking constantly so they do not burn. Remove from the heat and allow to cool completely before adding to the salad. *Note* If the pine nuts burn they will taste very bitter in the salad so watch them closely.

Toast the pine nuts

Combine all ingredients in a mason jar or other jar with lid. Screw the lid on tight and shake the dressing until well combined. Set aside.

Make the Maple Balsamic Vinaigrette

Add lettuce to a serving bowl. Arrange blueberries and strawberries evenly over the top. Then add mozzarella pieces. Sprinkle with slivers of fresh basil and (cooled) toasted pine nuts. Serve with Maple Balsamic Vinaigrette or your favorite balsamic dressing. Enjoy!
