(2 and 1/2 cups) of Rice Bubbles or Rice Krispies

(1/2 cup) desiccated coconut

(1/2 cup) pistachios

(1/2 cup) dried cranberries

(1/2 cup) sultanas or raisins

Line an 8 inch square baking pan with baking or parchment paper. In a large mixing bowl, add rice cereal, coconut, pistachios, cranberries and sultanas. Give it a quick mix together. 

Add chocolate to a heatproof bowl and place in the microwave. Heat, stirring every 30 seconds, until melted and smooth. 

Pour chocolate over dry ingredients and stir quickly until all the ingredients are fully coated. Transfer mixture to your baking pan and press down using the back of a spoon to form one even layer.

Place slice in the fridge for at least 2 hours or until the chocolate has set and the slice is firm. Cut into small squares to serve.

This easy to make White Christmas Slice contains only six ingredients and can be whipped up in less than 10 minutes.

White Christmas Slice

½ Cups Rice Bubbles

½ Cup Shredded Coconut

½ Cup Pistachios

½ Cup Sultanas

½ Cup Dried Cranberries

Line a slice tray with baking paper, ensuring that the paper goes well above the top of the sides..

In a large mixing bowl, add the Rice Bubbles, coconut, chopped pistachios, sultanas and cranberries. Mix to combine.

In microwaveable jug or bowl, add the white chocolate. Heat in 30 second increments, stirring between each heat session, until melted and smooth. This step can also be done in a double boiler.

Pour the melted chocolate over the Rice Bubble mixture and stir quickly to combine.

Transfer the mixture to the prepared tray and press down using the back of a spoon.

Place the slice in the fridge for at least 4 hours or until set.

Once set, take out of fridge and leave on the bench for around 15 minutes before cutting into small squares to serve.

Mini Christmas pudding jellies are a jelly version of a classic Christmas dish, and are perfect for individual servings.

12.00 gm gelatine powder

(1/2 cups) caster sugar

dark chocolate, chopped

Arnott’s Choc Ripple biscuits

white chocolate, melted

Spearmint leaf lollies, chopped, to decorate

Red M&M’s Minis, to decorate

Step 1

Place the 125ml (1/2 cup) water in a small bowl. Sprinkle with the gelatine and stir until well combined. Place the sugar and 250ml (1 cup) water in a saucepan over medium heat. Cook, stirring, for 2 minutes or until the sugar dissolves. Bring to the boil then remove from heat. Add the chocolate and stir until melted and smooth.

Step 2

Pour the gelatine mixture over the warm chocolate mixture. Stir until the gelatine dissolves. Place in the fridge, stirring occasionally, for 30-40 minutes or until slightly thickened.

Step 3

Stir the mixture until smooth. Place a 6-hole 100ml (7cm diameter) silicone dome mould on a baking tray. Divide the mixture evenly among the holes. Place a biscuit on top of each one. Place in the fridge for 6 hours or overnight until set.

Step 4

Gently loosen each jelly from the mould by pulling it away from the edges. Place a serving plate or board larger than the dome mould on top and flip so the mould is upside down on top of the plate or board. Gently squeeze each mould to release the jellies.

Step 5

Drizzle a little white chocolate over each jelly then top with spearmint leaves and M&M’s to decorate.

62.50 ml red glace cherries, coarsely chopped

40.00 ml dried cranberries

40.00 ml dried blueberries

Line a 19cm x 29cm slice pan with baking paper, extending paper 3cm over long sides.

Place chocolate, milk and rosewater in a heatproof bowl over a boiling saucepan of water. Stir gently until melted and combined. Stir in fruit. Spread mixture into prepared pan. Refrigerate for 2 hours or until set.

In a small bowl, add water and gelatin powder. Set aside for gelatin to bloom for 5-10 minutes.

Prepare an ice bath large enough for your saucepan to fit into, set aside until step 4.

In a large saucepan, mix together 1/3 cup granulated sugar, flour, salt, and milk. Bring mixture to boil over medium heat and boil for 1 minute while stirring.

Whisk in the gelatin mixture, then remove pan from heat. Mix in almond and vanilla extracts then place pan in the ice bath to rapidly cool.

In a small bowl, beat 1/2 cup heavy cream until stiff peaks form, then set aside.

In another small bowl, beat egg whites, cream of tartar, and the remaining 1/3 cup sugar until stiff peaks form, then set aside.

Transfer the saucepan mixture into a large bowl and use an electric mixer to mix until creamy. Fold in the whipped cream, egg white mixture, and shredded coconut just until combined.

Transfer mixture to the pie crust and spread into an even layer.

Whip remaining 2 cups heavy cream until stiff peaks form and spread or pipe cream onto pie.

Chill for at least 1 hour before serving.
