Rice pudding

grams/1½oz butter

grams/3½fl oz pudding rice (or Spanish paella rice)

75 grams/2½oz caster sugar

litre/1¾pints full-fat milk

150 milliliters/5fl oz double cream

vanilla extract

A warm, soft and squidgy pudding cake, this is both embracingly cosy and almost regally sumptuous.

Chocolate tahini pudding with tahini cream and date molasses

tbsp oil

grams/1¾oz tahini,

grams/1¾oz full-fat Greek-style yoghurt,

free-range egg,

grams/1¾oz caster sugar

grams/1¾oz soft dark brown sugar

This sharing chocolate fondant is the perfect pudding for a family lunch or dinner. Much less faff than individual ones.

If you're feeling brave, you could try and turn it out like we did for the photo, but it's much easier to leave it in the dish!

Sticky, gooey and surprisingly light and easy, Mary's sticky toffee pudding is a winner. 
Baked in a large dish, this is a family-sized pudding, spooned out or cut into squares to serve.

For this recipe you will need a 1.7-litre/3-pint ovenproof dish and an electric whisk.

James Martin’s classic rhubarb crumble recipe will take you to comfort food heaven in six short steps and under an hour.

A great family favourite as pudding to follow a weekend lunch. I have to admit, the recipe is not economical – just delicious! Ideally use a rectangular dish simply because the bread fits it better. If you are not keen on sultanas, just leave them out.

Mary Berry’s bread and butter pudding

100 grams/4 ounces butter, melted

300 milliliters/½ pint double cream

150 milliliters/¼ pint milk

tbsp demerara sugar

An old-fashioned English bread and butter pudding that goes easy on the wallet. Day-old bread works best in this recipe.

Each serving provides 408 kcal, 12.5g protein, 44g carbohydrates (of which 20g sugars), 20g fat (of which 11g saturates), 2g fibre and 0.9g salt.
