Step 1
Preheat your air fryer to 350°F (175°C).
Step 2
Microwave the whole butternut squash on high for 2 minutes to soften it slightly. This will make it easier to cut.
Step 3
Carefully cut the softened squash in half lengthwise and scoop out the seeds with a spoon.
Step 4
In a small bowl, mix together the olive oil, brown sugar, salt, and black pepper.
Step 5
Brush the cut sides of the squash with the prepared mixture.
Step 6
Place the squash halves in the air fryer basket, cut side up.
Step 7
Air fry for 35 minutes, or until the squash is tender and easily pierced with a fork.
Step 8
Allow to cool slightly before serving
