Pack in the flavour with this spicy steak burrito bowl, which takes just 10 minutes from prep to plate. Ideal as a speedy supper on busy weeknights

Coat the steak with half of the fajita seasoning and 1 tbsp of the olive oil. Heat a frying pan over a high heat and add the steak, cook for 2 mins on each side for medium rare, remove from the pan and set aside.

Turn down the heat to medium and add the remaining oil to the pan. Tip in the rest of the fajita seasoning, the rice and red peppers. Stir well so everything is coated and cook for 2 mins, until hot through. Add a splash of water if it starts to stick. Add the lemon juice, stir through half the parsley and season.

Cut the steak into strips. Tip the rice into bowls and top each with the steak and a dollop of yogurt. Scatter with parsley and serve with a lemon wedge.

There’s scrambled eggs, and then there’s miso butter scrambled eggs! This is the perfect dish to wake up to any day of the week, and it’s full of creamy, savoury-packed, cheesy goodness. How to make it better? Serve it as breakfast in bed to a loved one!

Miso Butter Scrambled Eggs | Marion&#039;s Kitchen

(3.5 oz) unsalted butter, room temperature

tbsp shiro miso paste*

eggs

buttered toast

sichimi togarashi*, to serve (optional)

Step 1.First make the miso butter by combining the butter and miso until well mixed. Place in the freezer for 10-15 minutes or until firm, before using.

Step 2.When ready to cook, whisk the eggs and salt until just combined.

Step 3.Heat a pan over low heat. Add a heaped tablespoon of butter and wait for it to melt (it shouldn’t foam or brown). Then pour in the eggs and let them set for a minute or until they just starting to show signs of setting at the sides. Use a spatula to swirl and create large egg curds. Then start to stir more vigorously to break the large curds into smaller curds. Add another heaped tablespoon of cold butter to the eggs and keep stirring until thick and glossy. Pour out the eggs onto some toast.

Step 4.Top with parmesan cheese and sichimi togarashi, if using. Serve right away.

Notes: – Shiro miso is a white miso paste and is commonly found in the Asian aisle of most supermarkets or from an Asian grocery store.

– Sichimi togarashi is a type of Japanese chilli powder.

This quick and tender stir-fry recipe blends Mongolian beef with chewy udon noodles for an Asian fusion dish the whole family will love. Perfect for midweek.

Mongolian Beef Udon Noodles

Marinade:

½ tsp bicarbonate of soda (baking soda)

tsp cornflour (cornstarch)

1.Place a large pot of water over high heat and bring to the boil. In the meantime, place the beef and the marinade ingredients in a bowl. Mix until well combined.

2.Heat the vegetable oil in a wok over high heat. Pour in the oil. Add the onion and stir-fry for 1-2 minutes or until the onion is starting to colour. Add the beef and use a spatula to spread it out in the pan. Allow to sear for 2 minutes. Then stir-fry and allow to settle and sear again for another minute. Add the ginger, garlic, carrot and zucchini. Stir-fry until just combined. Turn the heat off while you prepare your noodles.

3.Place the noodles in your pot of boiling water. Use tongs to gently separate the noodles. As soon as they have come loose, use tongs to transfer the noodles to the pan with the beef. Turn the heat back on and add the soy sauce, oyster sauce and Chinese wine. Toss until everything is well combined and the sauce is shiny and thickened slightly. Toss through the spring onion. Remove from the heat and serve.

Spicy Peanut Noodles

In a heat-proof bowl, add crushed chilli flakes, minced garlic, and sesame seeds. In a small pot, heat neutral-flavour oil until smoking hot. Turn off the heat once the smoke starts to appear. Gently pour hot oil over the chilli garlic bowl and let it sizzle for a few seconds. Stir it well and set it aside. ( If you are using store-bought chilli oil, you can skip this step. )

Fill the pot with water and bring it to a boil. Add noodles and cook the ramen noodles for 3-4 minutes or until al dante. ( Cooking time can be varied depending on the types of noodles you use. ) 

While the noodles are cooking, you can prepare the peanut sauce. In a ramen bowl or large serving bowl, add the prepared chilli oil, peanut butter, regular soy sauce, dark soy, rice vinegar, and sesame oil. Scoop a couple of tablespoons of boiling noodle water and pour it into the sauce. Mix everything well until the sauce becomes smooth and creamy. 

Once the noodles are cooked, drain the water out and place it in the peanut sauce. Coat the noodles well with the sauce. ( Add more hot water if the sauce is too thick and sticky. ) Divide the noodles into each serving bowl. Garnish with toasted sesame seeds, crushed peanuts, and chopped spring onions.

1.Using your hands, break the morning glory into 5cm (about 2 inches) pieces and place in a large bowl.

2.With a mortar and pestle, pound the garlic and chillies to a rough paste, then add to the morning glory. Next, add the oyster sauce, sugar and fish sauce to the bowl. Give everything a good mix until all the ingredients are incorporated.

3.Place a wok over high heat. When smoking hot, empty the contents of the bowl into the hot wok and stir-fry for 2 minutes or until just wilted. Transfer to a serving plate.

1½ tbsp Cornstarch (Mix with 3 tbsp water to make cornstarch slurry)

Beat the eggs with a pinch of salt and set it aside. 

Add chicken broth/stock to a pot and bring it to a boil.

Add minced garlic, white pepper, and salt. Reduce the heat and bring it to a simmer. 

Pour the egg gently and keep stirring the soup slowly.

Now add cornstarch and water mixture. Stir well until the soup reaches the desired consistency.
