Almond Flour Apple Crumb Cake

Preheat the oven to 350ºF and lightly grease a 11&#8243;x7&#8243; baking dish, (4-5&#8243; deep).

Whisk together the almond flour, tapioca starch, cinnamon, sea salt, baking powder, and baking soda until no lumps remain. Stir in the lemon zest, then add the maple syrup, eggs, melted ghee/butter/avocado oil, and vanilla extract. Mix until just combined, then stir in the apples.

Pour the cake batter into the prepared baking dish. In a small bowl stir together the ingredients for the streusel topping until combined. Using your hands, crumble the streusel topping evenly over the cake.

Bake the cake until puffed and toothpick inserted into the center comes out clean, or with moist crumbs.

Remove the cake from the oven and let it cool to room temperature on a cooling rack before frosting it.

For the frosting, start by placing the butter in a small saucepan over medium heat. Cook swirling it around the bottom until it smells toasty and has browned, 2-3 minutes, (skip this step if using ghee or avocado oil). Add it to the sifted powdered sugar along with the maple syrup, pinch of salt, and vanilla extract. 

Stir to combine, then drizzle it evenly over the cake. Serve within the first day for the best texture, although we enjoyed this cake for 3 days before it started to be a bit dry.

I love the almond flour in here for flavor purposes but also because it makes it a little bit healthier!

German Apple Cake Recipe

apples

unsalted butter (room temperature)

sugar

tsp vanilla sugar (or vanilla extract)

lemon juice

cake flour ((see instructions above))

tsp baking powder

tsp salt

tbsp milk

Preheat oven to 350°F (175°C) and grease the bottom of a 9- or 10-inch springform or use parchment paper.

Peel, quarter, and core the apples.  Thinly slice each quarter lengthwise without cutting all the way through (like in the image above).

In the bowl of a stand mixer fitted with the paddle attachment, beat butter until creamy, about 1 minute. Add sugar and mix until light and fluffy, about 2 minutes.

Add eggs one at a time and beat for 30 seconds on high speed after each addition.

Add vanilla sugar (or extract), salt, and lemon juice. Beat until combined.

Combine cake flour, baking powder, and salt. With the mixer running on low speed add half of the flour, then 1 tbsp milk, followed by the remaining flour, and then the remaining milk. Beat until just combined. Don't overmix!

Transfer batter into prepared pan and smooth the top with a spatula. Distribute the apples with the sliced side up on top (see image above).

Bake in the lower third of the oven for 45 minutes, until lightly browned and a skewer comes out clean.

Transfer to a cooling rack and remove the springform ring. Let cake cool on the bottom of the springform pan to room temperature.

Sprinkle powdered sugar over the cooled cake and serve with sweetened whipped cream.

German Apple Cake (Versunkener Apfelkuchen) is a traditional German dessert that is so easy to make even if you aren’t totally kitchen confident!

This Gluten-Free Apple Cake is a family favourite. Studded with caramelised cinnamon apple chunks for a comforting homely bake. Plus, no xanthan gum!

Gluten-Free Apple Cake

400 g bramley apples (2-3)

unsalted butter

caster sugar

150 g sorghum flour*

80 g potato starch* (not potato flour)

220 g ground almonds

baking powder

salt

90 ml whole milk

vanilla extract

Melt the butter, sugar and cinnamon together in a large flat based saucepan for about 3 minutes until the sugar has melted. Pour in the apple cubes and coat with the cinnamon caramel. Gently cook for 5 minutes until the apple is just starting to caramelise.

Remove from the heat and spread the apples out on a tray in a single layer to allow to cool whilst you prepare the rest of the cake.

Pre-heat the oven to 180°C/ 160°C fan / gas mark 4 and line and grease an 8x4” round cake tin.

Cream the butter and sugar on a high speed in a food mixer for about 5 minutes until very light and fluffy.

Add the eggs one at a time and mix until completely incorporated. Then add the vanilla extract.

Whisk the sorghum flour, potato starch, ground almonds, baking powder and salt together in separate mixing bowl.

Take 2 tablespoons of the flour mix to sprinkle over the cooled apples. Toss to coat and set aside.

Add the flour mix into the rest of the ingredients, alternately with the milk, adding the flour in three additions and the milk in two (begin and end with the flour), scrape down the sides of the bowls as needed and mix until just combined.

Pour 1/3 of the cake batter into the tin. Followed by half of the apples. Then add another 1/3 of cake batter, followed by the rest of the apples. Cover the apple with the final 1/3 of cake batter and smooth the surface.

Bake for 50-55 minutes or until an inserted cocktail stick comes out clean.

Remove the cake from the oven and leave to settle for 5 minutes in its tin, then turn out onto a cooling rack and leave to cool completely before scattering with icing sugar.

This easy apple cake recipe is the perfect fall treat! It&#x27;s moist, lightly spiced, and jam-packed with tender apples. If you don&#x27;t have an 9-inch round baking pan, you can bake this cake in an 8-inch square pan or a 9x5-inch loaf pan. See the post above for baking times. Position a rack in the center of your oven and preheat the oven to 350°F. Butter or coat a 9-inch round baking pan with nonstick spray. Line the bottom of the pan with a round of parchment paper.

In a large bowl, whisk the brown sugar and eggs until pale and foamy, about 1 minute. Add the oil, vanilla, cinnamon, nutmeg, salt, and whiskey and espresso powder, if using. Whisk until smooth and emulsified.

Add the flour, baking powder, and baking soda and whisk until well-combined and smooth.

Use a rubber spatula to fold in the apples and ¼ cup of the nuts.

Pour the batter into the prepared pan and use an offset spatula to gently smooth the top, making sure the apples are well dispersed and go all the way to the edges of the pan. Tap the pan gently on the counter to release any air bubbles. Sprinkle the remaining ¼ cup nuts over the cake.

Bake until puffed and golden, and a tester inserted into the center comes out clean, 30 to 40 minutes. There may be a bit of moisture on the tester from the apples. Set the pan on a rack to cool for about 15 minutes. Run a thin knife around the edge and carefully turn the cake out onto a cooling rack. Then invert it again so that it&#x27;s puffy side up, if desired.

Store the cake, wrapped tightly, at room temperature or in the fridge for up to two days.

This French Apple Cake is fluffy and delicious with sweetness from the powdered sugar on top and crispness of the apples in every bite!

French Apple Cake

This Easy Apple Cake has sweet tender apples, cinnamon and carrots with a delightful cream cheese layer.

Easy Apple Cake Recipe

eggs (room temperature)

apples (chopped and peeled)

carrot (shredded)

cream cheese (8 oz, softened)

brown sugar (packed)

butter

heavy cream

vanilla

Preheat oven to 350°F. Brush a 10″ tube pan with cake release (below) or grease and flour well.

Beat cream cheese and sugar with a hand  mixer until fluffy. Add egg and combine until smooth.  Set aside.

Combine flour, baking powder, cinnamon, salt and baking soda.

Whisk together sugar, oil and eggs.  Add the flour mixture a little at a time, stirring to combine.

Mix in apples, carrots and walnuts.

Pour half of the batter into the greased pan.  Gently spoon the cream cheese mixture over the batter keeping it in the center.  Top with remaining carrot apple batter.

Bake 50-60 minutes or until a toothpick comes out clean. Cool 15 minutes in the pan, gently loosen the edges and invert onto a wire rack to cool completely.

Bring brown sugar, butter and cream to a boil over medium high heat.  Allow to boil 1 minute, stirring constantly.

Whisk in powdered sugar and vanilla until smooth.

Drizzle over cake while warm.

This Caramel Apple Blondie Cheesecake is pure caramel apple heaven, I kid you not. It has layers of apple spice blondie and no-bake caramel cheesecake, and it's topped with cinnamon apples and caramel sauce!

Caramel Apple Blondie Cheesecake

(216 grams) brown sugar, unpacked

(195 grams) flour

tsp apple pie spice

tsp baking soda

(79 grams) chopped apple (about 1/2 an apple)

oz cream cheese, room temperature

(104 grams) sugar

(72 grams) brown sugar, unpacked

caramel sauce*

+ 2 tbsp heavy whipping cream, cold

tbsp (44 grams) powdered sugar

tsp vanilla extract

apples, thinly sliced

tbsp (56 grams) brown sugar

(120 milliliters) heavy whipping cream

(29 grams) powdered sugar

1. Line the bottom of a 9 inch springform pan with parchment paper and grease the sides. Preheat oven to 350 degrees.

2. Melt the butter in a microwave safe bowl, then transfer to a mixing bowl.

4. Add the vanilla, egg and egg white and whisk until incorporated

5. In another bowl, combine dry ingredients.

6. Slowly add dry ingredients to wet ingredients until combined.

8. Pour batter into springform pan and bake for 25-30 minutes.

9. Allow to cool for about 5 minutes, then remove to finish cooling.

10. Make the caramel sauce and allow to cool completely.

11. Once the blondie and caramel are cool, make the cheesecake. Beat cream cheese and sugars until smooth.

12. Add the caramel sauce and apple pie spice and mix until combined. Set mixture aside.

13. Add the heavy whipping cream, powdered sugar and vanilla extract to a large mixer bowl and whip on high speed until stiff peaks form.

14. Gently fold the whipped cream into the cream cheese mixture in two parts.

15. Place blondie back into the springform pan.

16. Spread cheesecake evenly on top of blondie, then put in refrigerator until firm about 3-4 hours.

17. Combine apples, lemon juice, nutmeg, cinnamon and brown sugar in a medium saucepan and toss to coat.

18. Add butter and cook apples on medium-high for about 15-20 minutes, or until at preferred softness.

19. Allow apples to cool for 10-15 minutes, then put on top of cheesecake.

20. To make cinnamon whipped cream, freeze a metal bowl and whisk attachment for 10-15 minutes.

21. Remove bowl from freezer, add heavy whipping cream, and whip on high speed until it begins to thicken.

22. Add powdered sugar and cinnamon and whip until it you get stiff peaks.

23. Pipe whipped cream around edges of cheesecake.

24. Drizzle more caramel sauce over finished cheesecake, if desired.

*Recipe for caramel sauce makes about 1 1/2 cups worth of caramel. I made a whole recipe and used about half of it in the cheesecake and then drizzled more over the top of the cheesecake. You&#8217;ll end up with leftover caramel.

this was amazing and so easy to follow! I was a little nervous about the cheesecake coming out soft, but came out perfect.  We all enjoyed it.  love all the recipes I have tried so far!

I made this recipe for Thanksgiving, and while the flavors were all amazing, the apple topping didn't turn out quite right for us, so I would change that a bit.  I ended up doubling the apples and it still didn't turn out quite right.  Next time, I'll chop the apples instead of slicing them, I think.

This is wonderful! I've made it several times and it's always a hit. The no bake cheesecake keeps things simple and it looks so pretty too!
