Spiced Apple Coffee Cake {gluten free}

Almond flour (See notes for substitutes)

applesauce or plain yogurt

tbsp unpasteurized apple cider vinegar

cinnamon

tsp nutmeg

chopped apple plus extra apple for topping

apple slices or 1/2 c chopped apple

-3 tbsp melted clarified butter coconut oil

sugar

Preheat oven to 350F. Line a baking pan (8&#215;8 or 9&#215;9) with parchment paper. See notes for baking in ramekins.

In a large bowl, sift the flours together and then mix in the sugar, baking soda, salt, and baking powder. Set aside.

In another bowl, whisk eggs, vanilla, and milk then gently mix the egg-milk mixture in with the dry mixture. Stir until smooth or use a hand mixer to blend until batter is consistent texture.

Add the yogurt or applesauce, apple cider vinegar, spices to the bowl, and mix together.

Fold in the chopped/diced apple. If batter is too dry, add more milk.

Pour batter into lined baking dish. Optional thinly sliced apples on top. Set aside.

In a small bowl, mix melted butter and sugar. Add flour and stir until combined, making a crumble like texture. Spread over apple cake mix in pan. This will not cover the whole pan so feel free to double if desired.

Place in oven for 28 to 35 minutes (cover with foil after 20 minutes to prevent edges from browning). Bake until top is browned and flour is baked in center.

Once cooked, place on a towel in fridge for 20 minutes; this just helps it set. You can reheat again before serving, if desired. Or serve with yogurt or ice cream after it’s cooled.

Keep in refrigerator for 5-7 days or freeze in airtight container or ziplock for up to 3 months.

Cinnamon Apple Crumb Cake

flour

brown sugar

salt

nutmeg

butter -melted

vanilla

large (or 2 small) tart apples-peeled and chopped

Tablespoons butter

sour cream

baking soda

baking powder

apple cider

Preheat the oven to 350 F. Grease 8 inch springform pan and line the bottom with parchment paper, set aside.

To make cinnamon streusel crumb, first  in a bowl, whisk together dry ingredient. Then add melted butter and vanilla and stir until the mixture is evenly moist, set aside, too.

To make the cake in a large bowl, cream together 4 tbsp butter with 1/2 cup sugar until light and fluffy, then add egg and beat well. Finally, add vanilla and sour cream and beat again.

In another bowl, stir together 1 cup flour, baking soda, salt, and baking powder and add to the butter mixture, stir until just combined.

Spread half the batter at the bottom of the pan ( it will be very thin layer). Spread the apple chunks evenly over the batter, then sprinkle about 1 cup of the cinnamon streusel crumbs over the apples. Spread the remaining batter over the crumbs and on top spread the rest of the cinnamon streusel.

Bake 35-40 minutes or until a tester inserted in the center comes out clean.

Before remove the ring of springform pan run a thin knife around the cake.

To make the glaze, whisk together powdered sugar with apple cider and drizzle over the cake.

I don't have a 8 inch spring pan. Could I use a 9 inch? And do I need to add more ingredients?

I made this cake in a 9 inch springform pan. Instead of layering I put cake batter first then apples next and topped with crumb mixture.  Baked 35 min, came out perfect.  Topped with a salted caramel glaze! So delicious!!

I just assembled this and also found it very difficult to spread the batter (both the bottom and top.) Actually the top was harder since it was over the crumbs. I'm sure it will come out fine, but if it is a hit I am going to try to double the batter next time. Thanks :)

This was the best cake in the world! The only things I added was I used 2 large apples (an apple per layer, because I can't get enough apples!) and I made this cinnamon brown sugar glaze thing by melting 4 tbs of butter and adding the brown sugar and cinnamon to my liking. I just spread this mixture on top of the batter for each layer before adding the apples and crumbs. I found that this helped with spreading the top layer. Also, I added about 1/4-1/2 a cup of buttermilk because I thought my batter looked a bit dry.

Super simple to make and smells heavenly as it bakes. Great texture and flavor. 5 stars!

This cake was amazing!  I took the advice of someone below who said to put more apples (almost one on each layer) and a cinnamon, Sugar, and butter drizzle on each layer (4T butter, 1/3 cup brown sugar, and 1/2 t cinnamon), and double the batter or it won't be enough to spread. I actually tripled the recipe for a 9x13 pan. It makes a big cake but that's how we like it at my house. It cooked for almost an hour and a half. Amazing!  Make this cake! This was delicious!  Followed the recipe exactly and didn’t have any issues with the amount of batter.  I used a small offset spatula and put the batter on in spoonfuls all over the pan which makes it easier to spread.  Will make3 this again and again.

Absolutely fabulous!! Doubled the crumbs, tripled the batter and subbed ripe pears for apples. I folded the fruit into the dough. Baked in a 13x9 springform pan for 45 minutes couldn’t have turned out better. Will definitely be making this one again.

This recipe is great! I invited friends over for coffee and dessert. This apple crumb cake did not last more then 20 mins. I would however make an extra layer next time to make it thicker.

O.M. G.  I was craving dessert but also wanted to make this for my boyfriend because he LOVES coffee cake and to have something quick for breakfast before work. So I made this tonight so it’s ready tomorrow and I just had to try a slice right after it came out of the oven! I subbed vegan butter and vanilla Greek yogurt and it’s just so rich and moist and soft! I can’t even describe it! I also used vanilla almond milk instead of apple cider vinegar. And it just came out amazing. First time ever making a crumb/coffee cake and this will be my go to recipe! Thank you!!

Just made this and it came out delicious, I didn’t make the drizzle on here I made my own cream cheese drizzle, and added extra apples to the first and second layer! Although it took longer to bake than recommend it took me about 1hr 15 mins.  Either than that I would absolutely recommend this tasty recipe!

This was absolutely delicious!!! My husband and I really enjoyed it and I will be making it again in the near future. I too thought the batter was thick and hard to spread, especially over the crumb mixture, but it worked out

Apple Coffee Cake

butter

all-purpose flour

granny smith apples, (peeled and chopped)

brown sugar, (firmly packed)

unsalted butter, (warm, melted)

Spray a 9X13 inch baking dish with nonstick cooking spray; Set aside. Preheat the oven to 350 degrees.

In a large bowl, using a hand-held electric mixer, cream together the butter and granulated sugar until light and fluffy. Add in the eggs one at a time, mixing until yellow disappears. Mix in vanilla. 

In a separate bowl, whisk together flour, cinnamon, baking powder, baking soda, and salt. Add to cream mixture alternating with the sour cream until well combined. 

Add flour mixture to butter mixture alternating with the sour cream until well combined. Fold in the apples.

Pour batter into the prepared baking dish, spread evenly with an offset spatula.&nbsp;

Bake in preheated oven for 20 minutes.

Meanwhile, make the Topping.&nbsp;Whisk together both sugars, cinnamon, nutmeg, and salt until combined. Add warm melted butter and stir until combined.

Add flour and mix with fork until clumps form (topping should look a bit wet). Set aside.

Remove cake from oven and spread crumb topping clumps (don't press them down) evenly over partially baked coffee cake, covering completely. Topping will be thick.

Return to oven and bake until a toothpick inserted in the center comes out with just a few moist crumbs (not batter). About 20-25 minutes.

Cool on wire rack at least 30 minutes.

Original Bisquick™ mix

medium cooking apples, peeled and thinly sliced (2 cups)

Heat oven to 400°F. Spray 9-inch square pan with cooking spray. In smal bowl, mix 2/3 cup Bisquick mix, brown sugar, cinnamon and nutmeg. Cut in butter, using pastry blender (or pulling 2 knives through ingredients in opposite directions), until crumbly; set aside.

In medium bowl, stir together 2 cups Bisquick mix, 2/3 cup milk, the granulated sugar and egg; beat vigorously 30 seconds with spoon. Spread half of batter in pan. Arrange apple slices on batter; sprinkle with half of streusel topping. Spread with remaining batter; sprinkle with remaining topping. Sprinkle with nuts.

Bake about 25 minutes or until toothpick inserted in center comes out clean. Cool in pan on cooling rack 20 minutes. In small bowl, stir glaze ingredients until smooth enough to drizzle. Drizzle glaze over warm coffee cake.

In a large bowl, combine apples, brown sugar, melted butter, flour, cinnamon and salt. Make sure the apples are evenly coated. Set aside.

Apple Mixture

Transfer half of the cake batter into the prepared baking dish. Top with half of the apple crumble. Spoon the remaining batter on top of the apples and finish with remaining apple crumble mixture.

Bake the coffee cake for 45 to 55 minutes or, until an inserted toothpick, comes out mostly clean, with a few moist crumbs. Let cool to room temperature.

Assemble

Combine glaze ingredients in a small bowl and whisk together until smooth. Drizzle over room temperature coffee cake and let set up for a few minutes before serving. Enjoy!

Our apple trees are full! I doubled the recipe to make 2 for National Coffee Day tomorrow: one for me to take to share with my JH co-teachers, and one for my husband to take to work. They are in the oven now and smell wonderful! I can't wait for breakfast. My apple mixture didn't "crumble"... it was thick like frosting. Caramel Apple Coffee Cake

caramel ice cream topping

Tablespoons milk

Grease and flour (or use baking spray) a 13x9 baking dish and set aside.

In a mixing bowl, beat flour, sugar, baking powder, baking soda and salt on low until blended. Beat in softened butter until crumbly.

Add in eggs, vanilla and milk and beat for several minutes until fluffy and fully combined. Pour batter into prepared baking dish. Top batter with sliced apples.

For the cake:

Combine sugar with cinnamon and salt.
