Apple turnovers made from scratch using my all-time favorite pie crust!

Apple Turnovers

apples,

light brown sugar (tightly packed (135 grams))

Tablespoons butter ((42 grams))

cornstarch

cinnamon

vanilla extract

salt

egg egg

Tablespoons coarse sugar (for sprinkling, optional)

sugar ((125 grams))

Preheat oven to 400F (205C)

Break your chilled pie dough into two pieces that are roughly the same size.

Transfer to a lightly floured surface and roll one piece into a rectangle about 1/8" thick. &nbsp;

Using a pizza cutter (or a knife and a straight-edge, such as a clean ruler), neatly cut dough int 4.5" squares and transfer to a parchment-paper-lined baking sheet (you will need to gather the scraps and re-roll them out to make all 10 turnovers).

Place squares on a parchment paper lined cookie sheet and return to the refrigerator. &nbsp;

Repeat rolling and cutting with your second half of pie dough.

Prepare your apple filling by combining your apples, brown sugar, and butter in a medium-sized saucepan over medium-low heat. &nbsp;

Stir frequently until butter is melted, then add cornstarch, cinnamon, vanilla extract, and salt. &nbsp;

Increase heat to medium and bring to a simmer and simmer for 5 minutes, stirring occasionally.

Remove from heat and allow mixture to cool (at least 15-20 minutes) before proceeding.

Prepare egg wash by combining egg and teaspoon of water in a small dish and stir/scramble well.

Lightly brush the insides of your pastry squares with egg wash.

Portion about 2-3 Tablespoons of apple pie filling into the center of each square. &nbsp;Gently fold over one corner to the other to envelope the apple filling. Use the tines of a fork to press and seal the turnovers.&nbsp;

Brush the outside lightly with egg wash, cut small slits across to vent, and sprinkle with coarse sugar, if desired.

Bake on 400F (205C) oven for 25 minutes, until pastry is beginning to turn golden brown.

Allow to cool before drizzling with glaze.

Whisk together powdered sugar, 2 teaspoons of milk, and vanilla extract in a small bowl. If mixture is too stiff to drizzle, add more milk, another teaspoon at a time, until a fluid consistency is reached.

Drizzle over slightly cooled turnovers. &nbsp;Enjoy while still warm or allow glaze to harden before enjoying.

Vanilla Glaze

This moist cinnamon-spice Applesauce Coffee Cake recipe is made with homemade applesauce and topped with a sweet, crunchy walnut streusel.

Applesauce Coffee Cake Recipe

In a bowl, cream the flour and butter together using a fork or pastry cutter.

Stir in the rest of the ingredients and set aside.

For the Streusel Topping

Preheat the oven to 375 degrees F for 9x13 inch baking pan, or 350 degrees F for 8 x 8 inch baking pan. Grease pan with nonstick spray. (See Note below)

In a bowl, cream the butter and flour together using a pastry cutter.

Add the rest of the ingredients and mix well.

Pour the batter into the baking dish and level off the batter.

Drizzle on the streusel evenly over the top of the batter.

Place in the oven and bake on center rake in oven. Begin checking for doneness at 30 minutes with a toothpick that has been inserted in the middle of the cake and comes out clean. Keep in mind that a deeper pan (8x8) will take longer to bake, so allow for an increase of bake time accordinging.

Once done, remove cake from the oven and allow to cool 10 minutes before slicing. Enjoy!

For the Coffee Cake

A delicious, soft cake-like cookie filled with oats, loaded with tiny chunks of apples and swirled with plenty of cinnamon. The perfect cookie to make on fall weekends!

Apple Cinnamon Oatmeal Cookies

(177 grams) all-purpose flour

(120 grams) rolled old fashioned oats

(113 grams) unsalted butter, (softened)

(160 grams) packed light brown sugar

tsp vanilla extract

lemon juice

Preheat oven to 350 degrees. Line two 18 by 13-inch baking sheets with silicone baking mats or parchment paper.&nbsp;

In a mixing bowl whisk together flour, oats, cinnamon, baking soda and salt for 20 seconds, set aside.

In the bowl of an electric stand mixer fitted with the paddle attachment cream together butter and brown sugar until combined.&nbsp;Mix in egg and vanilla extract.

Toss apples with lemon juice in a small bowl. Add flour mixture to egg and vanilla mixture and mix until combined, then mix in apples.&nbsp;

Scoop dough out using a medium cookie scoop, or 2 Tbsp at a time, and drop onto prepared baking sheets spacing cookies 2-inches apart. Flatten them just slightly.

Bake one sheet at a time in preheated oven until cookies are set, about 14 - 15 minutes.&nbsp;

Let cool on baking sheet several minutes then transfer to a wire rack to cool completely. Store cookies in an airtight container.

Green apples,Rice,Ghee,Bay leaves,Black peppercorns,Cinnamon,Green cardamoms,Cloves,Almonds,Cashewnuts,Ginger,Fennel seeds

Heat ghee in a deep non-stick pan. Add bay leaves, black peppercorns, cinnamon, broken green cardamoms, cloves, 1.almonds, cashewnuts, ginger, fennel seeds and green chillies and sauté for till fragrant.

Deseed and cut Washington Apples into small pieces, add to pan and mix. Add dried pomegranate seeds, chilli powder and salt, mix and cook for a minute.

Add drained rice and mix. Increase heat, add 3 cups water, mix, cover and cook till rice is done.

Place 2-3 mint sprigs in a bowl and put some apple pulao. 

Serve hot garnished with a mint sprig and some browned onions.

My apple fritters (no yeast!) are sweet, tender, and fluffy, and are absolutely packed with flavor. Dip them in a 3 ingredient apple cider glaze or roll them in cinnamon/sugar and enjoy! 

Apple Fritters

Vegetable or canola oil (for frying)

cinnamon (divided)

all purpose flour ((250 grams))

sugar ((66 grams))

Tablespoons brown sugar

Tablespoons baking powder

eggs (room temperature preferred)

milk ((235 milliliters))

unsalted butter (melted and cooled several minutes)

sugar ((250 grams))

Combine your apples and ½ teaspoon cinnamon in a bowl and toss until apples are coated with cinnamon. Set aside.

In a separate, large bowl, combine flour, sugars, baking powder, remaining ½ teaspoon of cinnamon, and salt in a large bowl and whisk until well-combined.

Crack your eggs in a separate bowl and use a whisk to beat until pale yellow and frothy (about 15 seconds). Add milk and vanilla extract and whisk together.

Slowly, while whisking, pour melted butter into wet ingredients and whisk until well-combined (mixture may look slightly curdled).

Pour wet ingredients into dry and use a spatula to fold ingredients together until about halfway combined. Add cinnamon coated apple pieces and continue to fold into batter until all ingredients are just combined.

Set the batter aside and fill a Dutch oven or large saucepan 2-3" deep with oil for frying. Fix a candy thermometer to the edge (make sure it is in the oil but not touching the bottom of the pan) and set your heat to medium-low. Oil will need to reach 360-365F (175-185C) before you can continue.

While oil is heating, prepare your glaze by whisking together sugar, apple cider (or substitute) and vanilla extract until smooth. Set aside.

Once oil has reached temperature, use a large spoon or an ice cream scoop (this is my preferred method) to scoop about 3 Tablespoons of batter and *carefully* drop into the oil. Repeat with 2 more scoops of batter and fry each for 60-75 seconds on each side, or until golden brown.

Use tongs to remove apple fritters to a paper-towel lined plate and allow to cool several minutes before dipping in glaze and transferring to a cooling rack to allow glaze to set. Be sure to allow the oil to return to the correct temperature before frying more fritters.

Apple fritters are best enjoyed warm the same day they are made for best quality.

Recipe video above. This is a great, relatively quick-to-make sweet loaf bread ideal for afternoon tea or breakfast treat. The most time-consuming part is chopping the apple because there&#39;s quite a lot of the fruit in this! Yogurt and oil make the crumb beautifully moist so it will stay fresh for days. Preheat oven to 200°C/390°F (180°C fan). Position shelf in the middle of the oven.

Loaf pan (Note 7): Use a 21.5 x 11.5 x 7 cm / 4.5 x 8.5 x 2.75&quot; pan. Spray with canola oil then line the long side + base with a single piece of paper leaving some overhang (don’t worry about lining short sides).

Topping: Mix the Demerara sugar and cinnamon in a small bowl. Set aside.

Cinnamon Apple: Mix Cinnamon Apple ingredients in a bowl. Set aside while you prepare the batter (the sugar will make the apple sweat = good thing!).

Batter: Whisk the Dry ingredients in a bowl. In a separate bowl, whisk Wet ingredients. Pour Wet mix into the Dry bowl, whisk just until smooth. Stir in apples (including all juices) and walnuts. Batter should be thick but dollop-able (not pourable in thin stream, nor thick like sticky bread dough). Scrape into loaf pan, smooth surface.
