Canned Artichoke Hearts with Parmesan Bread Crumb Topping

artichoke hearts

lemon (juiced)

tbsp butter (or olive oil)

garlic

anchovy

Italian style bread crumbs

flat leaf parsley (chopped)

Parmesan (fresh, shreaded)

black pepper

Preheat oven to 400 degrees F.

Drain artichoke hearts well, squeezing them of any excess water. Arrange the artichokes, cut side up, in a baking dish (the tart pan was perfect).

Squeeze the juice of one lemon over the artichoke hearts.

Meanwhile, in a medium size skillet melt the butter over medium-high heat. Add the anchovies and garlic, breaking up the anchovy fillets with a spoon. Continue to cook until anchovies have dissolved in the butter.

Add the breadcrumbs to the skillet and mix well with the anchovy-garlic mixture. Toast the bread crumbs until golden brown, stirring continuously.

Remove from heat and stir in parsley, Parmesan cheese, and fresh pepper. Carefully pour the breadcrumb mixture over the artichoke hearts and bake at 400 degrees for 15-20 minutes.

Best served warm.

Canned artichoke hearts are topped with a garlic-lemon-white wine-breadcrumb mixture and baked until golden.

Baked Artichoke Hearts with Seasoned Breadcrumbs

olive oil

artichoke hearts (rinsed and drained)

garlic (minced)

red pepper flakes

breadcrumbs

Parmigiano Reggiano (grated)

parsley (minced)

lemon juice

salt

dry white wine (pinot grigio, sauvignon blanc, etc...)

Preheat oven to 375f and set to middle rack.  Mix seasoned breadcrumbs ingredients together and set aside.

Mix the minced garlic and olive oil together in a bowl.  Spoon half of the garlic oil into a large baking dish and spread it around to evenly distribute.

Next, place the artichoke hearts into the baking dish and top them with the remaining garlic oil. Sprinkle the hot red pepper all over the hearts.

Evenly sprinkle the seasoned breadcrumbs and bake for 15-20 minutes or until hot all the way through and the breadcrumbs have browned.   For more color, the artichoke hearts can be broiled for the last 45-60 seconds but watch carefully.  Enjoy!

This recipe came out so good and easy to make.  The leftovers were just as good. Great for parties.
