Preheat the oven to 300 degrees F, and line several baking sheets with parchment paper. Scrub the beets well with a veggie brush and cut off the tops.

Use a mandolin slicer to slice the beets paper thin (1/16-inch). When the beet slices are this thin, there is no need to peel them first. Hold the root end while dragging the beets across the mandolin and watch your fingertips closely.

Place the beet slices in a large bowl and pour the oil and salt over the top. Toss well. (If using red and golden beets, place in separate bowls and divide the oil and salt evenly.) Ready for the secret step? Now let the beets sit in the oil and salt until they release their natural juices, about 15-20 minutes. This is what allows them to retain a better shape and color.

Toss the beets again, then drain off the liquid. Lay the slices out in a single layer on the prepared baking sheets. Bake for 45-60 minutes until crisp, but not brown. Test after 45 minutes and only bake longer if necessary. Remove the beet chips from the oven and cool completely before storing in an air-tight container.

Pile all the sweet potato rounds into a large bowl and pour the olive oil over the top. Gently toss to coat every piece with oil. Then lay the sweet potato rounds out on the baking sheets in a single layer.

Sprinkle the chips lightly with Diamond Crystal® Kosher Salt. Bake for 20-25 minutes until crisp and golden around the edges. Remove from the oven and cool for 5 minutes on the baking sheets. Preheat oven to 450F. Wash and Cut rutabagas into fine slices. A mandoline slices works best to cut into about 1/4 to 1/2 in thick or slices. The thinner the slices, the faster they will bake.

In a small bowl or ziplock bag, place all your spices and oils.

Carefully coat your rutabaga chips in the bowl with oil and spices or in the bag.

Lay them flat on a cookie sheet and spread evenly. Place in oven.

If your chips are very thin, be sure to check on them often so they don&#8217;t burn. Bake for 25 minutes, turning them half way.

After 25 minutes, reduce to 350F and cook for an additional 5-10 minutes until crispy. Cover if they start to burn on edges.

Bake longer or shorter for texture to be more or less crispy.

Transfer to bowl or plate. Season with extra red pepper flakes or smoked sea salt if desired.

Just made these!  Actually still making these....  I have had them in the oven at 450 for 3o minutes so far and then at 350 for ad additional 30 minutes.  I don't use mandolins, bc trauma!  ah! , so i sliced them as thin as i could with a sharp kitchen knife.  I had one GIGANTIC rutabaga from #misfitsmarket.  Im hoping they are at least a little crispy soon!  Then I would trust that they would get crispy as they cool.  Is that what is supposed to happen?  I used a little extra oil as well in order to coat them thoroughly, but thinly.  I'm dying to try them!  They smell delish!  What a great idea!!

These were so amazing once again your recipes don’t disappoint. I didn’t have bbq seasoning so I just baked them plain. I used my food process chop setting disc so they came out perfectly crispy. I cooked them a total of 45 minutes. They came out beautiful. We tipped it with ketchup. So amazed how these taste like a potato. I hope you come out with other cookbooks soon
