Catfish makes us think of lazy summer days spent at the lake, and we love it for that. Baking your catfish makes this meal much easier, with no worry of oil getting everywhere. We still bread it in cornmeal and season it with some Cajun seasoning,﻿ so you won't miss anything at all! ﻿

Best Baked Catfish

c. extra-virgin olive oil, divided

I made this today for our Sunday Lunch. I did not have cornmeal so I substituted Jiffy cornbread mix, and used fresh catfish fillets following the exact same measurements. I served it with Mac n Cheese and Green beans. The meal was excellent. The Fish was cooked well, tender and had a wonderful flavor, I will make this again.

This was a fantastic & quick, easy recipe. I also used Old Bay as it’s my SO’s favorite seasoning.

I did a Maryland version with Old Bay rather than Cajun seasoning, and stale cornbread breadcrumbs, and there were no leftovers. Says it all.

I've made this recipe a few times and each time my husband and I love it.  Today I'm making it with Almond flour instead of cornmeal and old bay instead of cajun seasoning.  It is just as good this way. Perfect basic recipe to make it your own. Thanks

I googled how to cook catfish and boom this link popped up! I got right up and started it. I had fresh catfish and didn't know what to do with it but this was perfect! I find catfish to be oily to begin with so I'm not a fan of frying it.  This recipe turned out wonderful and I added a couple minutes under the broiler so the top half would be as crunchy as the bottom! I served mashed potatoes and peas with it. It was great!

Poor texture. Maybe it depends on your brand of cornmeal, but I deeply disliked how mealy it was, despite being a big fan of cornmeal breading in general. What brand did you use..?

There’s something about baked fish dinners that always wins. They’re easy, quick, light and super delicious! Today’s oven baked fish is loaded with flavors of the Mediterranean and it’s a simplified version of a family classic.

Mediterranean Baked Fish

olive oil

garlic

thyme

baby tomatoes (whole)

Pieces of Haddock fillets

salt and pepper

chilli flakes (optional)

Mezzetta sliced jalapeños

Mezzetta capers (drained)

Preheat the oven to 450 degrees F.

Place the baking dish with the olive oil in the oven to preheat for 6-8 minutes.

In the meantime season your fish with salt, pepper and chilli flakes.

Once the pan is preheated, immediately add in the garlic slices, half of the thyme sprigs, the tomatoes, fish fillets, and Mezzetta olives.

They will sizzle slightly and the aromas will begin to infuse.

Continue by topping the fish with Mezzetta sliced jalapeños and capers.

Drop the oven to 375 degrees and bake the fish for 15-18 minutes depending on the size of your fillets.

If you want a charred look to your fish, switch to broil after 15 minutes of baking and broil for 2 minutes.

Once the fish is ready, take the flavorful olive oil around the fish and drizzle it over the fish.

Garnish with the remaining fresh thyme sprigs and enjoy!

Heat oven to 200C/180C fan/gas 6. Put the potatoes in a large roasting tin and drizzle with the oil. Season and roast for 20-25 mins.

Take the roasting tin out of the oven, turn the potatoes over and add the tomatoes and asparagus, nestling among the potatoes.

Place the fish on top and squeeze over the lemon. Top each fillet with a smear of butter, season and return to the oven for a further 10-12 mins or until the fish is cooked and the vegetables are tender.

Mediterranean Baked Fish with Artichokes and Olives

yellow onion (chopped or 2 large shallots, chopped)

tomatoes (two 14 ounce cans, liquid drained)

basil (packed)

salt + pepper

feta cheese (crumbled)

artichoke hearts (liquid drained)

Roma tomatoes (roughly chopped)

kalamata olives

capers

lemon (sliced)

feta cheese, basil, and capers (for serving)

Preheat oven to 375 degrees F.

In a large oven-safe skillet, heat olive oil over medium heat (if you do not have an oven safe skillet, that's ok. You will just need to use two dishes). Once warm, add onion (or shallots) and garlic and sauté until fragrant, approximately 1-2 minutes. Add chopped tomatoes, basil, salt and pepper and mix well. Bring to just a boil and remove from heat.

In the same (oven-safe) skillet, place fish on top of the fresh basil tomato sauce. Sprinkle with feta cheese.&nbsp;

Gently place artichokes and chopped Roma tomatoes in the tomato sauce between the fish fillets, and place thin slices of lemon on top of the fish. Add the drained olives and capers on top of the fish and tomatoes.

Place skillet in the center of your preheated oven and bake for approximately 15-25 minutes, or until fish flakes easily with a fork (the time will vary depending on the size and thickness of your fish).

Garnish with fresh basil and feta cheese and serve with a side of fresh bread, couscous or quinoa.

This one-pan baked flounder recipe with garlic, Parmesan cheese, and vegetables is easy and so delicious (thanks to a bold and lemony sauce with Mediterranean spices!). If you can&#39;t find flounder, any mild white fish would work, such as Dover sole, halibut, or branzino filet will work. Choose thinner fish filets if possible. Serve baked flounder with potatoes or greens like broccoli or a green bean salad.

Easy Garlic Parmesan Baked Flounder Recipe (20 mins)

flounder fillet, (sole fillet will also work)

zucchini,

Kosher salt and black pepper

garlic cloves, (minced)

oregano

paprika

cumin

extra virgin olive oil

Heat the oven to 350 degrees F.

Pat the fish dry and season it well with kosher salt and black pepper on both sides. Arrange the fish in a large pan and add the zucchini and onions next to it and season them with salt and pepper.

In a small mixing bowl, add the garlic, spices, lemon juice, and olive oil. Whisk to combine.

Pour the sauce all over the fish and vegetables.

Bake in the heated oven for 7 to 10 minutes, then carefully remove the pan and sprinkle the grated parmesan all over the fish and vegetables. Return the pan to the oven and bake for another 3 to 5 minutes or so until the fish is flaky and the cheese has melted some. (Flounder fillets are thin and should not take too long to cook. Be careful not to overcook them).

This baked fish recipe uses simple ingredients for big Mediterranean flavor! It's a crowd-pleaser with any type of white fish.

Easy Baked Fish

cherry tomatoes, sliced

green olives,

red onion, thinly sliced

garlic cloves,

parsley, divided

Preheat the oven to 425 degrees Fahrenheit. Allow the fish to stand at room temperature while prepping the vegetables.

Chop the tomatoes, olives, red onion and garlic, as noted above.

Place the chopped vegetables, drained capers, and 1 tablespoon chopped parsley in the bottom of a 9 x 13″ baking dish. Mix with 1 tablespoon olive oil, 1/4 teaspoon salt, and fresh ground black pepper.

Pat the fish dry. Rub it with 1 tablespoon olive oil and 3/4 teaspoon kosher salt, split between the filets. Sprinkle both with the oregano and a few grinds black pepper. Place the fillets on top of the vegetables in the pan, then gently drizzle the fillets with the lemon juice.

Place the pan in the oven and bake for 20 to 25 minutes (depending on the thickness of the fish; check at 15 minutes for very thin fillets), until the fish is flaky and the internal temperature is 140 degrees Fahrenheit when measured with a food thermometer. Garnish with the remaining 1 tablespoon chopped parsley and serve immediately, adding a few spoonful of vegetables to each plate (over the top or next to the fish).

Made with two thick cut Atlantic cod fillets and used black olives as I keep those on hand. Used up the last of my summer cherry tomatoes. I liked how easy this was to put together and quick to cook. I roasted some broccoli on a separate pan at the same time and it was a perfect light and quick dinner for two.

I made this last night and it was obscenely delicious and so unbelievably easy. It will definitely be in heavy rotation for a while!

We got frozen tilapia fillets at home and they would be perfect for this. I've always loved to bake our dinners, you can just do other things while you wait for them to be cooked

Flounder in Garlic Lemon Butter Sauce Recipe

Flounder

Flour (for dusting seasoned with salt and pepper)

Lemon Olive Oil (or Regular Olive Oil)

Butter

Shallot

Salt and Pepper,

Lemon

White Wine (Sauvignon Blanc or Pinot Grigio)

Dill freshly chopped (plus whole sprigs for garnish)

Garlic chopped

Lemon lemon

Heavy Cream

Parsley chopped, for the potatoes

Cloves

Season flounder with salt and pepper and lightly dust with flour to coat. Shake off excess flour.

In an oven proof fry pan, heat lemon olive oil over medium heat. Sear the flounder on the presentation side first until golden, then flip.

Transfer the flounder to the oven to finish cooking, about 5-7 minutes, or until the fish reaches an internal temperature of 120°F (49°C).

Cook the Flounder:

In a reduction saucepan, add the butter and when hot, add the shallots and sauté until translucent.  Deglaze the pan with vinegar and white wine and le reduce by half.
