This cabbage roll soup&nbsp;has all the same flavors as classic baked cabbage rolls, but with way less work! This unstuffed cabbage soup is hearty, filling and the perfect choice for an easy dinner option.

carrots (peeled, quartered and sliced)

tomato sauce

rice

bay leaf

brown sugar

parsley

Heat the olive oil in a large pot over medium high heat. Add the ground beef and season with salt and pepper to taste.

Cook, breaking up the meat with a spatula, until beef is browned, approximately 4-5 minutes. Add the onion and garlic cook for 2-3 minutes.

Add the cabbage, carrots, beef broth, tomato sauce, rice, bay leaf and brown sugar to the pot. Season with salt and pepper to taste.

Bring to a simmer and cook for 25 minutes or until rice is tender. Remove bay leaf and discard.

Sprinkle with parsley and serve.

CABBAGE ROLL SOUP

Cabbage, onion, beef and bacon all tenderly prepared in a rich beef and tomato broth, slowly simmered in your crock pot. This creates a nutritious and tasty soup that will warm your belly from the inside out!

Crockpot Cabbage Roll Soup

bacon (diced)

onion

garlic (minced)

beef

cabbage (chopped)

tomatoes

tomato soup

thyme

Worcestershire sauce

salt and pepper (to taste)

In a skillet, cook bacon until crisp and drain on paper towels leaving about 1 tablespoon bacon grease in the skillet.

Brown onion and beef in the bacon fat. Once browned, drain excess fat and add to a 6qt (or larger) slow cooker.

Add all remaining ingredients to the low cooker and stir to combine (it will be very full).

Cover and cook on high 3-4 hours or low 6-7 hours until rice is fully cooked.

Stir in half of cooked bacon.

Spoon into bowls, top with remaining bacon and parsley if desired.

Easy Cabbage Soup Recipe

Tbsp oil (divided)

green cabbage (chopped, from ½ large head)

carrot (sliced)

celery rib (thinly sliced)

oz canned diced tomatoes (with their juice)

Tbsp brown sugar

bay leaves

In a dutch oven, heat 1 Tbsp oil over med/high heat. Once hot, saute the ground beef for about 4-5 minutes or until cooked through, breaking it apart with a spatula as it&#39;s cooked. Season with 1/2 tsp salt and 1/4 tsp pepper, or to taste.

Once the meat is browned, add 1 Tbsp oil and chopped onion, and saute for about 2-3 minutes or until onions are tender. Add in the minced garlic and saute for 30 seconds until fragrant.

Add in the chopped cabbage, carrot, celery, diced tomatoes, tomato sauce, beef broth, brown sugar, 1 tsp salt, pepper, and bay leaves. Stir to combine and bring to a boil then reduce heat to a simmer, cover and cook for 30 minutes.

Remove the bay leaves and add in the fresh herbs. Season to taste with salt and pepper. Serve with a dollop of sour cream.

Cabbage roll soup - all of the flavors without all of the work! This is easiest if you're using meat and cabbage leftover from preparing cabbage rolls.

Bring to a boil and simmer for 40 minutes to an hour. (The cabbage will cook more quickly if it was previously frozen.)

Season to taste with salt and pepper before serving.

Excellent recipe! I had a head of cabbage and carrots in the fridge that needed to be used, and this was perfect for it. This was a meal I made with what I had on hand, so I had to improvise a bit. I didn’t have enough tomato sauce or any parsley, so I subbed two of the 8oz cans with one can of petite diced tomatoes. Added a splash of Worcestershire and around 1 tsp Kasuri Methi (dried Fenugreek leaves) at the end and dang it was good! Definitely keeping this one bookmarked for future use.

Stuffed Cabbage Soup

In a large stock pot brown ground beef (drain excess liquid if desired), then add onion, garlic, and seasoned salt  until mixture is aromatic and onions are translucent. 

Add diced tomatoes, tomato sauce, Worcestershire sauce, and 4 cups chicken stock. Bring back to a simmer. 

Stir in cabbage and cook on medium/low covered about 20 minutes until cabbage is wilted and softened. Stir in rice and cover until rice is ready.&nbsp;

Stir in remaining chicken stock, as needed until desired consistency is reached. Enjoy!

STOVE TOP

In inner pot on saute mode, brown ground beef (drain excess liquid if desired), then add onion, garlic, and seasoned salt  until mixture is aromatic and onions are translucent. 

Add diced tomatoes, tomato sauce, Worcestershire sauce, 4 cups chicken stock, and cabbage.

Cover, set to &#039;sealing&#039; and cook on manual (high pressure) for 3 minutes.  Hit cancel, NPR ten minutes, then release remaining pressure.

Stir in rice and cover (pot should not be on, rice will cook with residual heat). Allow to sit for 5 - 7 minutes until rice is cooked to your liking.

Stir in remaining chicken stock,  if you wish, until desired consistency is reached, (bring back to a simmer on saute mod) . Enjoy!

INSTANT POT

Brown ground beef on stovetop (drain excess liquid if desired). Add all ingredients EXCEPT rice to slow cooker.

Cover, and cook on high for 4 - 6 hours or low for 8 - 10 hours. Stir in rice and cover. Allow to sit for 5 - 7 minutes until rice is cooked to your liking.

Stir in remaining stock, if you wish, until desired consistency is reached.

I only use one cup of rice as otherwise there is no broth. I also use mild Italian sausage in place of ground beef. You can add sauerkraut too if you like!

Making this right now! I usually don’t follow recipes, but this one is great! Made it with turkey and brown rice and added carrots and celery and more herbs. Very tasty and pretty simple!

This was wonderful! Next time I might cut the rice to 2 cups to make it a bit more soup like! That’s just a personal preference.

We loved this simple delicious recipe. We used cooked long grain rice instead of instant rice.

Oddly enough, it is great accompanied with CORNBREAD!!
