Funeral potatoes are easy to make (just 5 minute prep!) using hash browns, sour cream, creamy soup, and shredded cheese, yum!

Funeral Potatoes (Cheesy Hashbrown Casserole)

frozen hashbrowns (thawed, 32 ounces)

onion (finely diced)

sour cream

condensed 'cream of' soup (10 ounces)

milk

butter (melted)

salt

black pepper

cheddar (divided)

cornflakes

Whisk together the sour cream, cream of chicken soup, milk, ½ cup melted butter, salt and pepper.

Combine the thawed hashbrowns, diced onion, 2 cups of shredded cheddar and sour cream mixture.

Spread evenly in a 9x13 casserole dish.

Sprinkle the remaining ½ cup shredded cheddar evenly over the top.

Toss the crushed cornflakes with the ¼ cup melted butter to coat, then sprinkle over the shredded cheddar.

Bake at 350 degrees F for 45 to 60 minutes, until cheese is melted and casserole is bubbly.

Copycat Cracker Barrel Cheesy Hashbrown Casserole

(32 ounces) frozen shredded hashbrowns, thawed (or cubed hashbrown potatoes)

(10.6 ounces) cream of chicken soup (we used Campbell's)

(1 pint) sour cream, full fat

onion

parsley

Spray a 9x13-inch baking dish with non-stick cooking spray, or grease the casserole dish lightly with butter.

 In a large bowl, combine thawed hashbrowns, cream of chicken soup, melted butter, chopped onions, 2 cups of the shredded cheese, sour cream, salt &amp; black pepper. 

Transfer the potato mixture to prepared baking dish, smooth out with a spoon or spatula. 

Sprinkle remaining 1/2 cup cheese on top of the casserole.

Bake in preheat 350°F oven for 45 to 50 minutes. Cool for five minutes, then enjoy!

Pre-heat the oven to 350° F.

In a large bowl, combine the hash browns, melted butter, salt, pepper, minced garlic and onion, cream of chicken soup, sour cream, and shredded cheese.

Spread the potato mixture in a greased 9x13 baking dish.

In a smaller mixing bowl, mix together the slightly crushed Corn Flakes and melted butter.

Sprinkle the buttery Corn Flakes over the top of the casserole in the casserole dish.

Bake uncovered at 350° F for about 1 hour, &#39;til the casserole is golden brown.

5. Sprinkle the Corn Flakes over the hash brown mixture in the baking dish.
6. Bake uncovered at 350° F for about 1 hour.

*You'll need to thaw the hash browns before assembling the casserole. Just follow the instructions on the packaging for thawing, and allow time for this.
*I prefer to use extra sharp cheddar for added flavor, but sharp is fine, as well.

Crockpot Cheesy Potatoes Recipe

hashbrowns ((1 bag))

cheese

cream cheese (cubed (1 brick))

unsalted butter (melted (½ stick))

onion powder

garlic powder

½ teaspoon ground paprika

Add the hash browns, half of the cheddar cheese, and all of the cream cheese, sour cream, butter, onion powder, garlic powder, and paprika to a crockpot.

Stir

Stir to combine then sprinkle the remaining shredded cheese on top of the potatoes.

Cook

Place the lid on the pot and cook on high for 2½-3 hours, or until the edges start to crisp up and the cheese has fully melted on top.

Serve

Let it cool for 3-4 minutes then serve with freshly minced parsley.

Preheat your oven to 350F/175C

In a large mixing bowl, combine frozen shredded hashbrowns, mushroom soup, melted butter, sour cream, onion, dried thyme, salt, pepper, and half of the cheese, and mix until evenly combined

Pour the mixture into a greased 9 x 13 baking dish. Bake for approximately 45 minutes uncovered, then remove from the oven, scatter the remaining cheese and bake for a further 10 - 15 minutes until the cheese is bubbling. Serve immediately and enjoy your hash brown casserole!

Prep. Preheat the oven to 400º F. Lightly butter a 9x13 baking dish or spray with nonstick cooking spray.

Mix. Stir together the thawed diced or shredded potatoes, half of the cheddar cheese, cream of chicken soup, sour cream, melted butter, onion, and Stone House Seasoning in a large mixing bowl. Spread into the prepared baking dish.

Bake. Bake until the potatoes are fork tender, about 30 minutes and then top the hashbrown casserole with the remaining cheddar cheese. Return the hashbrown casserole to the oven until the cheese has melted.

Serve warm.

Stir together the the Corn Flakes, Ritz Cracker, or Panko with the melted butter until well coated. Spread on top of the casserole and bake as directed.

For the Optional Topping:

It was great, much better (moist) than Cracker Barrell's.  Will be making again, just needed to add baking time.  I went with the ritz cracker and butter topping and it was perfect!

I have frozen them a few times and I did NOT like the outcome. The taste was okay, but the consistency was off. I think it was the sour cream. 
I am a retired FACS (Home Ec) and have made huge batches of this recipe for school events. Easy to make ahead of time.
