Line a baking sheet with parchment paper.

Rinse strawberries and pat dry.

Pour white chocolate chips and semi-sweet chocolate chips into separate microwave safe bowls.

Microwave chocolate on high in 15 second increments, stirring in between, until melted and smooth.

Dip the strawberries in the melted chocolate, rotating between white and semi-sweet and place on parchment lined baking sheet.

Sprinkle with English toffee bits.

Chill until set, about 20 minutes.

Gourmet Chocolate Covered Strawberries

Ghirardelli Baking Chips (Bittersweet, semi-sweet, or milk chocolate)

Start by washing the strawberries and then drying them VERY well.  It's so important to dry the strawberries well because, as you may know, chocolate and water do not work well together! If the strawberries are the least bit wet the chocolate will not stick!

Next pour the milk chocolate chips and white chocolate chips into their own microwaveable bowls.

Pour the nuts and coconut onto their own small plates. Line a sheet pan with parchment or waxed paper.

Microwave the milk chocolate for 30 seconds intervals, removing and stirring at each 30 second interval, until the chocolate has melted.  Repeat with the white chocolate chips until they are melted. Stir often, making sure not to burn the chocolate!

Holding a strawberry by the stem, dip into the milk chocolate, lift and twist slightly, letting the excess chocolate fall back into the bowl. At this point you may dip the strawberry in coconut or nuts (or leave it plain) and then place the strawberry on the parchment paper. Repeat with the rest of the strawberries.&nbsp;

For a white chocolate drizzled strawberry, dip a fork in the melted white chocolate and drizzle the white chocolate over the dipped strawberries.

Chill the strawberries until the chocolate sets, about 15 minutes.&nbsp;

corn syrup (or honey)

For The Strawberry Brownies: Preheat the oven to 350 degrees F. Set out a 9X13 inch baking dish. Then line it with parchment paper or foil. Set aside.

In a large mixing bowl, combine the cake mixes, eggs, and melted butter. Stir until smooth.

Scoop the thick batter into the prepared pan. Spread it out in an even layer. Then  bake for 15-17 minutes. You want the edges to be set and the center to be just baked through, so the texture is fudgy.

For The Brownie Frosting: Allow the strawberry brownies to cool as you make the frosting. In a medium bowl, use a hand mixer to beat the softened butter and cocoa powder together until very smooth.

Scrape the bowl and beat in the corn syrup and vanilla extract. Then turn the mixer on low and beat in the powdered sugar and a pinch of salt.

Add one tablespoon of heavy cream at a time until the brownie frosting is smooth and spreadable.

Slather the frosting over the warm brownies and let them cool to room temperature.

Then lift the entire sheet of brownies out of the pan by the edges of the parchment paper. Cut and serve.

3.5 oz 100 grams 70% dark chocolate

Wash strawberries leaving on the green parts, then pat dry with a paper towel to make sure they are very very dry.

Reserve a little bit of both chocolates and chop into small bits on a chopping board. Melt rest of chocolate in a double boiler or microwave as instructed above in the blog post.

Take the strawberries by the green part between your fingers and dip the strawberries into the melted chocolate. Then place on a lined baking sheet and sprinkle with chopped chocolate.

Put in the fridge to harden for at least 1 hour, better several hours or overnight.

Chocolate Covered Strawberries are fresh plump berries that are dipped in milk chocolate and semi-sweet chocolate mixture, and hardens for a decadent dessert.

Thoroughly dry the strawberries after washing them.

Combine the milk chocolate chips and semi-sweet chocolate chips in a medium heat-proof bowl.

Place the bowl on top of a medium saucepan with about 1 inch of water in the bottom of the saucepan. Make sure the water isn't touching the bottom of the bowl with the chocolate chips in it.

Place over low heat and let the water simmer. Stir the chocolate chips until they're melted.

Once the chocolate chips are completely melted and smooth, turn the heat off. Leave the bowl on top of the saucepan to keep it warm while you're dipping the strawberries.

Line your work area with wax paper.

While holding the leaf of the strawberry, dip the strawberries in the melted chocolate. While still holding the strawberry, use the other hand to gently tap the wrist holding the strawberry to remove any excess chocolate.

Place the strawberry on the wax paper.

Allow the strawberries to harden. This will take 30 minutes to 1 hour at room temperature or transfer the wax paper with the strawberries to the fridge with a cookie sheet for the chocolate to firm up quicker.

Add any extra chocolate to a sandwich bag and cut a small hole in one of the corners.

Drizzle on the strawberry once the chocolate shell has hardened by quickly going back and forth over top of the strawberries while applying even pressure to the sandwich bag.

Store in an airtight container in the fridge.

Dip each strawberry into the chocolate, gently scrape the excess off the bottom using the lip of the bowl, then place on the paper-lined tray. 

If desired, drizzle the dipped strawberries with contrasting types of chocolate, either by dipping the tines of a fork into the bowl and flicking your wrist back and forth over the strawberries, or by using a piping bag. I simply cut the corner from a small ziploc bag and use that.

Or, if desired, dip the strawberries into bowls of chopped nuts, such as hazelnuts, almonds, or pistachios, or shredded coconut, then set back onto the tray.

Let the strawberries sit at room temperature for about one hour, until the coating firms. Serve and enjoy!
