Danish Butter Cookies

unsalted butter (room temperature)

all-purpose flour

Granulated sugar (for sprinkling)

Preheat oven to 350 degrees F. Line two baking sheeting with parchment paper or silicone baking mats.

Beat the butter and sugar on medium speed until combined and fluffy, 1 to 2 minutes. Add the salt, vanilla and egg, and beat until combined, about 1 minutes. Reduce the speed to low and gradually add the flour until mostly combined. Give a final few stirs with a rubber spatula to ensure the flour is totally incorporated (the dough will be thick).

Transfer the dough to a decorating bag fitted with a large open star tip. Pipe the dough into 2-inch circles on the parchment paper or silicone baking mats. Sprinkle with sugar.

Bake, one pan at a time, until light golden brown, 15 to 17 minutes. Allow to cool completely before storing or serving.

Mince garlic, and then add a generous pinch of salt. Mash the garlic and salt mixture with the flat side of your knife until a paste forms.

In a medium-sized bowl, stir garlic paste, chives, parsley, lemon juice, and cream cheese together until well combined. Use a spatula to form a ball out of the cream cheese. Refrigerate for 20 minutes, or until the texture has firmed up slightly.

In a small casserole dish or another dish with a flat surface, mix McCormick seasoning with pepper. Add more pepper if you want it to be spicier. Take the cheese ball and roll it in the spice mixture, patting the spices into the ball, until the ball is completely covered.

Place cheese ball on a small plate, cover with plastic wrap, and refrigerate. Serve cheese ball with crackers.

A grazing board combines the best of a cheeseboard and charcuterie platter into one indulgent selection of food. There’s no strict recipe for a grazing board – simply gather together all your favourite nibbles, and arrange on a large platter or plate to share. You could do a mixture of meats and cheese, or go entirely vegetarian or vegan. The key things to remember when creating your platter, to make it look (and taste) as impressive as possible, are: ● Make sure you assemble the board just before serving so everything is fresh ● Always include crackers, breadsticks or bread to use as a vessel for cheeses or dips ● Use small bowls or ramekins to hold small items and dips, like olives, nuts and chutneys ● Use a good variety of ingredients. For example, aim for one hard and one soft cheese, two or three different cured meats, and a few varieties of fruits and nuts ● If you use larger fruits, like figs or clementines, chop and tear them into different shapes, so that the fruit is easier to pick up and looks more appealing on the platter ● Swirl any dips into ramekins, and top with olive oil, seeds or chopped herbs ● Fill in any gaps on your platter with bay leaves or rosemary sprigs to decorate ● Bundle any cured meats into nests, or roll or fold to create a variety of textures

pack ready-rolled puff pastry

Heat the oven to 200C/180C fan/gas 6. Crush the garlic and a little salt to a paste using a pestle and mortar, or use the flat of a knife on a chopping board. Mix together with the parsley and stir in 50ml cold water.

Blend the sausagemeat in a food processor (if using sausages, peel away the skins) on a high speed, pour the garlic water into the mixture, then season with pepper. Blend until combined.

Unroll the pastry onto a board and cut in half lengthways.

Divide the sausage mixture in two and spread along the length of each pastry strip in a cylinder shape, leaving a 1cm edge.

Tightly roll the pastry around the sausagemeat and brush the ends with the beaten egg to secure.

Cut each roll into 10 pieces with a sharp knife, each about 2.5cm long, and arrange on a baking sheet. Will keep, covered and frozen, for one month.

Brush more beaten egg all over the pastry. Cook for 25-35 mins until the pastry is puffed and crisp and the meat has cooked through. Add an extra 10 mins if cooking from frozen. Eat hot or cold with tomato ketchup, if you like.

Preheat oven to 375 degrees F. Line two baking sheets with silicone baking mats or parchment paper.

In a small bowl, whisk together the flour, baking soda and salt; set aside.

With an electric mixer, beat the peanut butter and shortening on medium speed until well blended, about 2 minutes. Add the granulated sugar and brown sugar, and beat until fluffy. Add the egg, milk and vanilla extract, and beat well. Reduce the mixer speed to low and gradually beat the flour into peanut butter mixture until just combined.

Shape dough into 1-inch balls (about 1 tablespoon or dough or a small cookie scoop) and roll in granulated sugar to coat. Place on the prepared baking sheets about 2 inches apart.

Bake for 8 to 10 minutes, or until lightly browned. Remove from the oven and immediately press a chocolate kiss into the center of each cookie (the cookie will crack around edges). Allow to cool for about 5 minutes, then remove the cookies to a wire rack to cool completely. The cookies can be stored in an airtight container at room temperature for up to 1 week.

Easy Peanut Butter Fudge

Butter an 8-inch non-stick baking dish (or line with buttered parchment paper) and set aside.

In a medium saucepan over medium heat, heat the butter and peanut butter until the mixture comes to a boil. Remove from the heat.

Add the salt and vanilla extract, then stir in the powdered sugar until smooth and no lumps remain.

Pour the fudge mixture into the prepared pan and smooth the top. Press a piece of plastic wrap directly on the fudge and refrigerate until set, at least 1 hour. Cut into squares and serve. Fudge can be stored at cool room temperature in an airtight container for up to 1 week, or in the refrigerator for up to 1 month.
