This classic potato salad is a summer staple, perfect for barbecues and pot lucks!

Classic Potato Salad

water ((Only if

red potatoes, diced

eggs

mayonaise ((I recommend Trader Joe's, Duke's or Hellmann's))

sweet pickle relish

Tablespoon honey

Tablespoons apple cider vinegar

garlic powder

salt and pepper,

Optional garnishes: chopped fresh parsley

Add one cup of water to the Instant Pot, and place a steamer basket on top.

Place the diced potatoes in the steamer basket, and arrange the eggs on top.

Place the lid on, and lock it, and cook for 5 minutes on manual high pressure.

While the potatoes and eggs are cooking, go ahead and whisk together the mayo, mustard, honey, sweet pickle relish, apple cider vinegar in a large mixing bowl (Note: we will be adding the potatoes and eggs later).&nbsp;

Add a pinch of salt and pepper to the dressing, whisk to combine and set aside.

Once the 5 minutes of manual high pressure are complete, allow the pot to naturally release for 5 additional minutes, and the quick release the remaining pressure after that.

Place the eggs in an ice water bath to cool them and stop the cooking. (Hint: Tongs are very helpful for this!)

Carefully add the hot potatoes to the larger mixing bowl on top of the dressing.&nbsp;

Add the garlic powder, plus about 1/2 teaspoon of salt and 1/4 teaspoon pepper on top of the potatoes.

After the eggs have cooled for about 3 to five minutes, peel them, dice them to desired size, and add them to the large mixing bowl, on top of the potatoes.

Stir everything to combine until everything is coated with the dressing.

Taste to check your salt and pepper preference; add more if desired.

Refrigerate to cool.

Wow...I have tried many potato salad recipes but this is my all time favorite.  I used smoked paprika and added garlic salt, but otherwise, stuck with the recipe.  Amazing!  Thanks for sharing!!!

Whisk all the dressing ingredients together (or cover the mason jar and shake to combine) and set the dressing aside.

Wash and chop the potatoes. You can peel them first, or leave the peels on - your choice.

Add the potatoes to a large pot and add water just until the potatoes are covered with water.

Add the pot to the stove on medium-high heat and wait for the water to boil. Once the water begins to boil, turn the heat down to medium, cover the pot and let the potatoes cook for about 8-10 minutes. You&#039;ll have to check on them every few minutes to make sure they don&#039;t over-cook. You&#039;ll know they&#039;re done when you can pierce one with a fork without too much force but all the pieces are still intact.

Use a colander to drain the potatoes and rinse them under cold water until they cool to room temperature.

Once the potatoes are cool, be sure to let them dry for a few minutes before assembling the salad. If your potatoes are wet the dressing won&#039;t stick to them and you&#039;ll end up with a mess. The best way to do this is to lay them out on a clean kitchen towel for a few minutes.

While you&#039;re waiting, chop the celery, hard boiled eggs, and green onions.

Add the potatoes to a large bowl and add the dressing. Toss the potatoes until they&#039;re well coated. Add the celery, eggs, and green onions, and toss gently.

Easy Classic Potato Salad

Classic Potato Salad is reminiscent of the old days of family get-togethers. It is an easy recipe to make, that pairs well with pretty much any dish!

Wash, peel, and cube the potatoes. Add them to a large pot over high heat and add enough water that would cover the potatoes about 1 1/2 inches.

Add the cooked potatoes to a colander and drain. Transfer to a large bowl and drizzle with 2 tablespoons of apple cider vinegar and let them cool to room temperature.

Finely dice the cooled eggs and add to the cooled potatoes.

Add celery, red onion, green onion, pickle, and fresh dill.

In a medium bowl mix all the Salad Dressing ingredients until fully combined. Pour over the potatoes and gently mix, careful to not entirely crush the potatoes.

Cover and refrigerate for at least 2-3 hours before serving. The potatoes will harden a little once they are cooled.

Red Skinned Potato Salad is a delicious potato salad side dish that is delicious to easy with hamburgers, hotdogs, or barbecue.

Red Skinned Potato Salad

8-10 red potatoes, (approximately 3 lbs)

yellow mustard

dill relish

eggs, (chopped)

In a large pot of water, add potatoes and bring water to a boil.

Boil potatoes until fork tender, approximately 30-40 minutes depending on the size of the potatoes. Drain water and let potatoes cool.

In a large bowl, add in mayonnaise, mustard, relish, chopped hard-boiled eggs, salt and pepper. Stir until combined.

When potatoes are cool, cut potatoes into 1 inch cubes and place into the bowl.

Stir to fully coat potatoes with the mayonnaise mixture.

Season with additional salt and pepper to taste, if desired.

Garnish with sliced green onions.

Cut turnips and carrots

Peel the turnips entirely. Cut all the turnips into bite sized pieces with a sharp knife, as regular potatoes typically do. At the same time, cut fresh carrots and place them all into a bowl ready for cooking.

Cut onions and pickles

Cut onion and all the pickles into small tiny squares and place them aside. At the same time, prepare your other ingredients. 

Prepare the salad dressing

In a big glass bowl, add yogurt with mayonnaise and approximately 1/3rd of a cup of liquid left from your pickle jar. Season with a pinch of salt and pepper and mix. 

Boil turnips with carrots

Place turnips and carrots into a cooking pot, add boiling water, bring to a boil and let it cook until tender for 15 minutes maximum. 

Strain and shock

Once your carrots and turnips are boiled, strain them through a strainer and pour a very cold pot of water to shock them, so they immediately stop the cooking process.

Add all into a big glass bowl

Add all remaining ingredients in a large mixing bowl, such as the onion, pickles, and green peas. Pour the whole dressing you have stored in the fridge. 

Mix together and season

Using two spatulas, gently mix the ingredients and salad dressing together. Refrigerate for at least 2 to 3 hours before you are ready to serve.
