This protein-packed Cottage Cheese Egg Bake with spinach and chicken sausage is filling and delicious. Enjoy for breakfast, lunch, or dinner with a salad and some crusty bread.

Cottage Cheese Egg Bake (Frittata)

Cooking spray

Italian chicken sausage (casings removed)

eggs

1% cottage cheese (I love Good Culture)

Pecorino Romano or Parmesan cheese

baby spinach

salt

black pepper

Preheat oven to 350 degrees F.  Move oven rack to the second highest from the top.

Lightly spray a 10-inch oven safe skillet with cooking spray.

In a medium bowl, whisk eggs, cottage cheese, Pecorino, spinach, salt and pepper. Set aside.

Add sausage to a skillet, breaking it up in small pieces with a wooden spoon over medium heat and cook, until browned and cooked through, about 4 minutes.

Add the egg mixture to skillet and cook 1 minute to let the bottom set.

Bake in the oven until the top is set, about 16 to 18 minutes.

With a spatula, carefully slide frittata out of the skillet onto a cutting board and cut into 4 wedges.

Serve with salad and whole grain bread, if desired.

Large Whole Eggs

Mix all of your ingredients together in a bowl, blender, or food processor (use a blender or food processor if you don&#39;t like the texture of cottage cheese)

Take out a stovetop pan or griddle and turn your burner on medium heat

Coat your pan or griddle with your Olive Oil, Butter, or Cooking Spray

Pour your mix in and cook your eggs until your desired consistency (keep them moving as you cook them for the best result)

Cottage Cheese Eggs

cottage cheese

½ cup frozen cut leaf spinach (OPTIONAL)

kosher salt and black pepper (to taste)

monterey jack or cheddar cheese (shredded)

Scoop the cottage cheese into the middle of a non-stick skillet. Toss the frozen spinach on top of it and cover with a lid. Cook on medium heat until the cottage cheese starts to melt and the spinach is thawed, approximately 6-8 minutes. Stir occasionally.

Once the cottage cheese is melted and the spinach is soft, add the eggs and stir to break them and combine with the other ingredients. Cook on medium-low heat, stirring every so often, until the eggs are done. Add salt and pepper as this is finishing on the stove.

Remove from the heat, sprinkle with cheese and place the lid back on top for a few moments to allow the cheese to melt before serving. Enjoy!

Just had this for breakfast.  Added more spinach , I really need the vitamins.  It reminded me of spinach quiche without the bottom crust.   Really good!    Love following you, especially on weekends when you share a lot.  I have noticed other chefs/bakers share nice things about you on their cooking sites.  That’s a real compliment to you and your site.

When I'm in a hurry, I add the cottage cheese and eggs in a bowl and whisk them all together, put that in the pan and then add fresh spinach and cook, stirring until set.  Then I add feta cheese, cover and cook at low heat until slightly melted.  Love cottage cheese and eggs!

I make cottage cheese eggs all the time; I don't know why I hadn't thought to add spinach!  I use fresh spinach instead of frozen.  Great recipe!

Microwave Mug Cottage Cheese Scrambled Eggs

Lightly spray a microwave-safe mug with nonstick cooking spray.

Crack the egg into the mug. Add the cottage cheese and a pinch of salt and pepper. Whisk with a fork until everything is well combined.

Microwave on high for 30 seconds. Stir. Continue cooking for another 20 to 30 seconds, or until the eggs are set to your liking. Microwave times vary, so check often to avoid overcooking.

High Protein Cottage Cheese Egg Bake

eggs (or 2 cups of liquid egg whites)

Cottage Cheese

parmesan cheese

hemp seeds

peas (thawed)

red bell pepper (seeded and finely chopped)

onions

nitrate-free (high-quality bacon, crumbled)

sea salt and ground black pepper (to taste)

Heat your oven to 350 degrees f.

Line a 9x9, (an 8x8 or anything with similar capacity will work also) with parchment paper, leaving some hanging over the sides for easier removal. I very lightly sprayed the parchment with avocado oil, but this is optional.

In a large bowl, whisk the eggs, hemp seeds, and cheeses until combined.

Add in the peas, pepper, onions, and stir to combine. Season with a very small pinch of sea salt and pepper. Don't add too much salt though, the cheese and bacon already add a lot of salt. Whisk well.

Transfer your egg mixture to your prepared baking dish, sprinkle the top evenly with cooked crumbled bacon, then bake for 30-35 minutes, or until the center is set.
