Baked Cottage Cheese with Raisins

cottage cheese - 2 lb (1 kg)

sugar

lemons - 1

cream - 4/5 cup (200 g)

raisins - 3.5 oz (100 g) large

In suitable deep bowl, beat the cream with the cottage cheese, eggs and sugar. To them, gradually add the sifted flour, raising agent and finely grated lemon peel. 

Mix the mixture until uniform. Wash raisins with hot water, and add them to other products. Stir again to distribute equally. 

Pour the mixture into a pre-greased oven dish and bake for about 35 minutes in a preheated 360°F (180 °C) oven.

Combine all the ingredients in a food processor, blender, or bowl using a stick blender.

Make sure to measure with your heart and add as much or as little sweetener as your heart desires. I used 2 tablespoons of maple syrup but I am leaving that up to you.

Pour the mixture back into the cottage cheese container or a freezer-safe container with a lid. I prefer to stir it every hour until it is frozen or to your liking.

If the ice cream becomes too icy, you can re-blend it after it&#39;s frozen for the perfect texture if you wish. You can also enjoy it as soft-serve.

Easy homemade cottage cheese recipe (with just 3 ingredients!)

Step 1

Place milk in a medium saucepan over medium heat and, stirring occasionally, bring almost to the boil. Stir in vinegar and remove from the heat. Stand for 1 minute or until curds form.

Step 2

Line a sieve or colander with Chux, muslin or cheesecloth and place over a heatproof bowl. Pour in the milk mixture. Stand for 15 minutes to cool and drain.

Step 3

Transfer curds to a bowl. Stir in salt and cream. Store in an airtight container in the fridge for up to 5 days.
