These high protein waffles are made with cottage cheese, oat flour and eggs. So good you&#039;ll never make them any other way!

High Protein Oat Waffles

4% milk fat small curd cottage cheese

eggs (separated)

vanilla extract

sugar ((optional))

oat flour (or grind old-fashioned rolled oats in blender)

baking powder

salt

Heat a waffle iron on its medium setting.

Place cottage cheese, egg yolks, vanilla, and sugar, if using in the blender. Add 6 tablespoons water, oat flour, baking powder and salt and blend until mixture is smooth batter. Transfer to a medium bowl using a spatula to get all the batter out.

Beat the egg white to soft peaks then fold into the batter.

Spray pre-heated waffle iron with oil spray. Pour batter into iron (about 1/4 cup) and cook until golden brown and steam is no longer being released.

Homemade Waffle Recipe

cottage cheese (full fat is best)

eggs

maple syrup (plus more for serving)

flour (all-purpose or whole wheat)

Tablespoons coconut oil

Tablespoons milk of choice (or up to 1/4 cup for thinner pancakes)

Combine Dry Ingredients

In a large bowl, combine the dry ingredients and whisk.

Blend Liquid Ingredients

Add the cottage cheese, eggs, vanilla, maple syrup, and milk to the blender and blend until smooth.

Pour Into Dry Ingredients

Add the blended ingredients to the dry ingredients and stir gently.

Stir in Coconut Oil

Stir in the coconut oil, still until well combined. Batter will be thick.

Heat Waffle Iron

Scoop Batter Into Waffle Iron

Scoop 1/3 cup batter into each waffle cavity.

Cook

Cook 3-6 minutes (mine took 3, but this depends on the waffle iron).

Enjoy

I had leftover cottage cheese from another recipe, and I stumbled on this waffle recipe today. All I can say is that these waffles are phenomenal! I used olive oil in my batter since my husband can't have coconut. With the whole wheat flour, cottage cheese, and using keto maple syrup, I actually feel good about eating these. Very filling and an excellent source of protein. Thank you for a winning recipe!

Super yummy, quick and easy. Halved the recipe and used a single mini waffle maker. Got about 7 waffles out using less than a 1/4 c full. Perfect amount for me and my 2 little ones. Will make again. Thanks!!!

I just found this recipe today - I wanted a higher protein breakfast option for the family that was easy while we are out of town this weekend. THIS IS A WINNER!! Very subtly sweetness - but my kids always have syrup on top, so I do not like overly sweet waffles. Anyway - I will definitely be making again!! Tried the cottage cheese waffles and they were delicious . Is it possible to freeze the waffles?

Loved these! They were tasty and were gobbled up in no time! Question for you, do you think the wet mix can be blended the night before anf refrigerated to save that much more time and effort? Then do the mix with oil (I used butter) into the dry first thing in the morning and cook?I wonder if this will let the air out overnight...Thoughts? Looking for opportunities to keep as fresh as possible while making ahead of time.

I made a few alterations to this recipe, and it still turned out delicious! 
I used only 2 eggs (bc eggs are expensive haha), a medium banana instead of maple syrup (so my baby could eat it without any added sugars), only used 1 cup flour and added 1/4 cup flaxseed, subbed melted butter for the coconut oil, and I added about 2 cups loosely packed frozen spinach so the waffles would be green for St. Patrick's Day! They tasted awesome and were very filling!

I was looking for a higher protein version of waffles and this is perfect! I actually used olive oil as it is what I had on hand, it was delicious. Thank you.

Cottage Cheese Waffles

My family has been loving this cottage cheese waffles lately. Flourless, high in protein, and gluten-free, these healthy waffles are not only filling, but also super easy to make and delicious on their own without any toppings.

Cottage Cheese Waffles (Flourless and GF)

quick cooking oats ((use GF oats if needed))

cottage cheese

cold-pressed virgin coconut oil

honey

salmon and crème fraîche

Blend everything together in a blender. Transfer to a bowl and allow to sit for 10 minutes. The batter will slightly thicken as it sits. In the meantime, preheat your waffle iron.

Pour or scoop the waffle batter into a hot waffle iron (I used a 1/3 cup measuring cup for each waffle, but waffle makers vary). Cook waffles for about 4 minutes each, until cooked through. Once done, transfer the waffles to a cooling rack.

Serve immediately with your favorite toppings. These waffles are a little savory, but go well with either sweet or savory toppings.

These are delicious. I make them in a mini waffle iron. They freeze well. I’ve tried adding ingredients like banana and it still works. Thank you!

I got a brand of cottage cheese that I ended up not liking but didn't want to just toss it so I tried this out. I subbed the two eggs for three egg whites and only used half a tablespoon of oil. I also added Splenda and vanilla. I had them with vanilla Greek yogurt and a little fruit salad of blueberries, strawberries, and grapes. I throughly enjoyed these, thank you for the recipe.

Oh my gosh! Super fluffy! I added 2 medium bananas because we really like them right now. To compensate I added about 1/3 more oats. Very forgiving recipe! I just eyeballed everything using my 3/4 cup measuring cup. For the baking powder, I just used a regular tablespoon that I used to scrape off the cottage cheese into my Vitamix blender. In a high-speed blender or food processor, add the cottage cheese, eggs, and rolled oats. Blend until combined.

Grease the hot waffle iron and pour portions of the batter onto it. Cook until the edges are crispy and the exterior is golden brown.

Repeat the process until all the waffles are cooked up.

Best healthy waffle recipe I have tried and I’ve been through a lot!

I love waffles and in my eating healthier journey, I needed something that fed that need.  These waffles fit the bill.  I eat them with lots of sliced strawberries and low cal maple syrup so I didn’t need to add sweeteners to the batter.  They are light and crisp and full of protein so filling but not heavy.  I use 2/3 cup oats and 2/3 cup cottage cheese and 2 eggs, this makes one perfect Belgian waffle. 🧇

Made these waffles this morning, they were very tasty. I did add vanilla, cinnamon, and pumpkin pie spice to the batter. I also made two pancakes out of this, which I will have for breakfast tomorrow to see how those came out.

I've made these waffles twice this week.  Everyone in my family loved them.  Definitely stick to your ribs.  I did add vanilla extract and some ground flax seed.  These will definitely be on my rotation.  Thank you for sharing this recipe.

I did not expect these to be as good as they were! I think a food processor would have done better than using my blender, to make them more smooth.  I also think next time I may add a bit of vanilla and maybe a some nutmeg, just for a little more flavor.  In the fall, I will try some pumpkin spice. But on the whole VERY impressed with this recipe and how it’s only three ingredients.

Great healthy recipe! I cut the recipe into 1/3 since I was making breakfast just for me. I added a few shakes of cinnamon to the batter and had 3 beautiful little waffles to top with sf syrup and sliced banana! Yummy!

Tried this recipe and it turned out great. I separated the egg whites, and took the hand mixer on high until they’re firm. Then I rolled it into the mixed cottage cheese , rolled oats , egg yolks and vanilla extract. It made three large waffles in the waffle maker and it was nice and fluffy. Thank you. Will be making these more often.
