This vegan Instant Pot Chana Masala is packed with authentic Indian flavor and rivals any restaurant dish, but is easy and quick to make. Stovetop instructions included.

Vegan Instant Pot Chana Masala

chickpeas

If you are using dried chickpeas, place them in a large bowl and soak in cold water overnight or for 8 hours. Drain, rinse, and set aside. If you are using canned chickpeas, open the cans, drain and rinse.

On the Instant Pot, select the Sauté setting. Add the oil and once it is shimmering, add the mustard seeds and cumin seeds. They might sputter a bit so stand back. After 30 seconds, add the diced onion and cook, stirring frequently until the onion starts to brown, 6-7 minutes.

Add the garlic, ginger, Serrano peppers, and bay leaves and stir to combine until garlic is golden brown, 1-2 minutes.

Add the Ground Spices and stir until fragrant, about 30 seconds. You may need to add a tablespoon of water to prevent the mixture from drying out and/or burning.

Stir in the salt, canned tomatoes, canned or soaked dried chickpeas, and vegetable broth or water. Stir well to combine. Select the Cancel setting.

Secure the Instant Pot lid and set the Pressure Release valve to Sealing. Select the Pressure Cook setting on the Instant Pot and set to high pressure for 8 minutes (for canned chickpeas) or 35 minutes (for soaked, dried chickpeas).

Once the timer is up, allow the Instant Pot to come to a natural pressure release. It should take 10-15 minutes.

Open the pot and stir in the lemon juice and cilantro, and season to taste. Serve over Basmati rice and/or with Indian flatbread.

INSTANT POT CHANA MASALA | Instant Pot Indian Recipe

This crispy roasted chickpeas recipe is the perfect salty, crunchy healthy snack! They're spiced with chili powder and cumin. 

Crispy Roasted Chickpeas (That Stay Crispy!)

Rinse and drain the chickpeas, shaking off as much water as possible. Place them on a towel and pat gently to dry. Place another towel on top, then use your hands to rub the chickpeas and remove as many of the chickpea skins as possible. Do this once or twice; it should only take a few minutes and it&#8217;s not necessary to remove all of the skins.

In a medium bowl, stir together chickpeas with the olive oil, chili powder, black pepper, cumin, smoked paprika, and kosher salt.

Pour chickpeas onto a parchment-lined baking sheet and spread them into a single layer. Bake for about 45 to 60 minutes until crispy and dry, shaking the pan every 15 minutes. The exact bake time depends on the chickpea brand and your oven, so watch closely in the final minutes, taste test, and remove when the chickpeas are browned but before they become very dark and hard. Allow to cool for about 10 minutes before storing; the chickpeas will crisp up even more as they cool.

Allow to cool. Store in an airtight container in a dry cupboard for up to 1 week.

Crispy Crunchy Roasted Chickpeas

19 ounces can chickpeas, (drained and rinsed)

Preheat your oven to 375F (190C).

Spread the chickpeas in a single layer on a baking sheet. It&#x27;s ok if they are still a bit wet, they will dry out in the oven. Bake 30 minutes, stopping to shake the pan every now and then. *Make sure you do shake the pan once or twice when the chickpeas are baking, this helps them dry out properly and get crispy.

Remove the chickpeas from the oven and carefully add the hot chickpeas to a bowl along with the olive oil, chili powder, thyme, and salt. Toss well to coat the chickpeas evenly.&nbsp;Spread the seasoned chickpeas back onto the baking sheet and return to the oven for another 10 to 15 minutes until they are golden and crispy. Remove from the oven and let cool a bit before enjoying. You can snack on them still warm, or completely cooled.

Delicious and crispy air fryer chickpeas! These Korean BBQ flavored roasted chickpeas are crunchy, delicious and so moreish. They will make perfect healthier snacks.

Air Fryer Korean BBQ Chickpeas

brown sugar

soy sauce

Korean chili flakes

tsp fine sea salt

ginger powder

garlic powder

onion powder

Dehydrate

Transfer well-drained chickpeas onto an air fryer basket ensuring they are not overlapping each other. Roast them at 100C / 212 F for 5 mins. This will allow the chickpeas to dry well so that you don’t have to wipe them manually with a paper towel or kitchen cloth.

Transfer

Transfer the chickpeas into a mixing bowl, add the olive oil and coat gently. Transfer the chickpeas back to the air fryer basket and spread them well. Place the basket into the air fryer. 

Turn up the air fryer temperature to 175 C / 347 F and bake the chickpeas for a total of 15 mins. Half way though this time, shake the basket around for even cooking.

In the mean time, combine and whisk the remaining ingredients – brown sugar, soy sauce, Korean chili flakes, salt, ginger powder, garlic powder, and onion powder in a small bowl.

When the chickpeas are ready, turn the air fryer off. Transfer the chickpeas into a mixing bowl and combine with the BBQ sauce (from step 4). Rub the sauce well ensuring the chickpeas are evenly coat. – I didn’t find it too hot to touch the chickpeas with my gloved hands, but be watchful as you touch the roasted chickpeas.

Transfer the seasoned chickpeas back into the air fryer basket and spread them well so they don’t overlap. Put the basket back to the air fryer. Bake the chickpeas in the cooling down air fryer for 20 – 30 mins. (Air fryer is off.) This will help chickpeas get even crispier.

Remove from the air fryer and cool down for about 5 mins. Serve immediately or transfer to an air tight container for later. You can munch them on their own or serve in your salad as a garnish.

AIR FRYER METHOD (FASTER!)

Preheat oven at 100 C / 212 F for 10 mins. Line up the baking paper on a large rimed baking sheet. Transfer well-drained chickpeas onto a baking sheet ensuring they are not overlapping each other. Bake for 10 mins. This will allow the chickpeas to dry well so that you don’t have to wipe them manually with paper towel or kitchen cloth. Remove the baking sheet from oven.

Transfer the chickpeas into a mixing bowl, add the olive oil and coat gently. Transfer the chickpeas back to the baking sheet and spread them well.

Turn the oven temperature up to 175 C / 347 F and place the baking sheet in the oven. Bake the chickpeas for a total of 45 mins and half way though baking turn the chickpeas around for even cooking.

When the chickpeas are ready, remove the baking sheet from the oven and turn the oven off. Transfer the chickpeas into a mixing bowl and combine with the BBQ sauce (from step 4). Rub the sauce well ensuring the chickpeas are evenly coat. – I didn’t find it too hot to touch the chickpeas with my gloved hands, but be watchful as you touch the roasted chickpeas.

OVEN ROASTING METHOD

Make these crunchy chickpeas for an easy, healthy, flavor-packed snack! Salt and olive oil is all you need for the roasted chickpeas, but if you want to jazz them up, add some spices or seasoning as soon as they're out of the oven!

Crunchy Roasted Chickpeas

Extra virgin olive oil,

Kosher salt

Seasoning of your choice,

 Drain and dry chickpeas very well.  Dry them up using some paper towels and leave them in a colander until they have dried as much as possible (OR you can spread them on  a large baking sheet lined with paper towel for a while.)

Heat the oven to 400 degrees F and position a rack right in the middle.

Spread the chickpeas well on a bare baking sheet (do not line the baking sheet with parchment or foil.) Drizzle a generous amount of extra virgin olive oil and season with kosher salt. Toss chickpeas and make sure they are well-coated with the olive oil. Spread them out well on the sheet.

Roast in heated oven anywhere from 20 to 35 minutes, shaking the pan every 10 minutes or so for even cooking. Don&#39;t rush it, make sure the chickpeas turn a deeper golden brown and the exterior is nice and crispy, that&#39;s when they&#39;re ready.

Season roasted chickpeas. Once you take the chickpeas out of the oven, immediately season with spices of your choice. This time, I used  za&#39;atar, sumac, and harissa blend  (up to 2 tsp each) for warm Middle Eastern and Moroccan notes. Play with the amounts to your liking, and change up the spices according to what you have. (see more flavor ideas up in the post)

Air fryer chickpeas are extra crispy, take only minutes to make, are a deliciously crunchy, high-fiber snack!

Air Fryer Chickpeas

15 chickpeas (0.88)

Tbsp seasoning of choice* (0.15)

Rinse and drain one can of chickpeas well. For extra crispy chickpeas, press the chickpeas between some paper towels or a lint-free kitchen towel to dry.

Add the drained chickpeas to a bowl and drizzle with 2 teaspoons cooking oil. Stir to coat.

Preheat the air fryer to 400ºF (if your air fryer does not have a pre-heat function, let it run empty for 2-3 minutes on 400ºF).

Add the chickpeas to the air fryer basket and spread them into a single layer. Air fry the chickpeas for 5 minutes, then shake to stir. Air fry for an additional 5 minutes and shake again. Check the chickpeas for doneness and add 2-3 more minutes or until they reach your desired level of doneness (we do 13 minutes total).

Transfer the air fried chickpeas to a bowl, drizzle with the second 1 teaspoon oil to help the seasoning stick, and stir to coat. Add your favorite seasoning and salt, if needed, then stir to coat again. Enjoy while warm and crispy!

Today we&#039;re talking about How to make Crispy Chickpeas. This is a quick 10 minute process, and make a great addition to so many salads and bowls. They&#039;re also an addicting snack!

How to make Crispy Chickpeas

oz chickpeas (- strained and patted dry)

cumin (- or try another seasoning!)

Strain and rinse the chickpeas and place on some paper towel. Place another paper towel on top and roll them around, getting them as dry as you can.

Heat a stock pot or cast iron skillet over medium-high heat. Add olive oil, and when hot, add the chickpeas, making sure they are in a single layer. Stir frequently, covering with a splash guard (or foil) in between as these will POP as they cook. After about 10 minutes, these should be nicely browned and crisp.

Remove pan from heat and add the seasonings - the salt, pepper, onion powder, and cumin. You can also choose other seasonings to use in place of the onion powder and cumin.

Spoon the chickpeas into a bowl. Serve them over salads, in bowls, or for just snacking on.

Grilling cucumber makes it smoky and juicy. A zingy preserved lemon dressing, sweet roasted peppers and some salty feta rounds it all out. Jordon x

Grilled Cucumber Salad with Crispy Chickpeas and Lemon Dressing

Cucumber

Jar Roasted Red Peppers

Tbsp Ras el Hanout (Or Your Favourite Spice Mix)

Lemon

Coriander

½ Block of Feta

Chilli Flakes (Optional)

Drain the chickpeas and put them onto a baking tray. Drizzle with olive oil, add the ras el hanout and a big pinch of salt and mix.

Place into the oven for about 25 mins until golden and crunchy. You could make double the amount of these just to snack on.

If you’re using the little Lebanese cucumbers, you don’t need to peel them. For supermarket ones, the skin can be a bit thick so go ahead and peel them.

Slice the cucumbers in half lengthways. If using regular cucumbers, also halve them widthways. Grab a teaspoon and use it to scrape out the seeds from the middle. 

Put the cucumbers into a bowl and rub all over with a tsp of salt and set aside for 20 mins. The salt will season the cucumbers but also pull out some of the moisture. 

Meanwhile, finely chop the preserved lemon and the coriander and add them to a small bowl along with the zest and juice of 1 lemon, a tbsp of the preserved lemon brine, 2 tbsp of olive oil and a pinch of salt. Mix.

Heat a griddle pan until it's really hot. Drain the liquid from the bowl of cucumbers, then place them cut-side down onto a sheet of kitchen paper to dry off any excess moisture.

Place the cucumbers cut-side down into the pan. Leave them for 3 or 4 mins to get some good colour and then flip and repeat on the other side.

Remove the cucumbers from the pan onto your chopping board and cut into roughly 2-inch pieces. Drain the peppers and cut them into roughly the same size pieces as the cucumber. Add both to a bowl, pour over the dressing, and mix well.

Spoon the cucumber and peppers onto a plate, sprinkle over the crispy chickpeas, and crumble over the feta. Season with more salt, lemon juice, and chilli to taste.

Sautéed Chickpea Recipes are the simplest way to make pan fried chickpeas. A classic staple that’s budget-friendly and easy to prepare.

Sautéed Chickpea Recipes

tbsp Olive Oil

½ tbsp Garlic Powder

Paprika

tsp Ground Turmeric

⅛ tsp Black Pepper

Open canned chickpeas, rinse under running water then dry on a clean kitchen towel. Heat olive oil in a skillet/frying pan on medium heat.

Add chickpeas and sauteed until it turns golden crispy on the surface. Before adding the spices, turn the heat to very low to prevent spices burnt. Add ground turmeric, paprika, garlic powder, and salt. Mix until chickpeas are well coated (no more than 2-3 minutes to avoid burning the spices). .

Add lemon juice (optional, leave out if you prefer crispy texture) and stir.

Turning off the heat then finish it with chopped parsley. Serve as a side dish or with salad or rice.

These Sheet Pan Za'atar Chickpeas with Sweet Potatoes combine crispy chickpeas, tender veggies, and creamy sweet potatoes with an herby Middle Eastern spice blend. Vegan &amp; Gluten-Free.

Sheet Pan Za'atar Chickpeas with Sweet Potatoes

(335 g) cooked chickpeas, rinsed well

za’atar* spice blend

Salt,

Olive oil,

sweet potato,

red bell pepper, sliced

½ yellow onion, thinly sliced

Easy Tahini Sauce

Lettuce

pita rice

Prep

Preheat the oven to 420 F and line or grease a large baking sheet; set aside.

Chickpeas

Place the chickpeas on a clean kitchen towel or paper towel and gently rub to dry well. Discard any loose skins, then transfer the chickpeas to a medium bowl. Add the za’atar, salt, and a generous drizzle of olive oil to the bowl and mix well. Set aside.

Vegetables

add the sweet potato, bell pepper, and onion directly to the baking sheet. Sprinkle the cumin, smoked paprika, garlic powder, and salt over the veggies, then drizzle with olive oil. Toss until evenly combined, then push the vegetables to one side of the baking sheet; add the chickpeas to the open space and spread out evenly.

Bake

Bake on the top rack of the oven for 20 minutes, flip the veggies and chickpeas, then return to the oven and bake for an additional 15 to 20 minutes, until the chickpeas are crispy.

Serve

Transfer the chickpeas and vegetables to serving bowls and serve with rice or pita and tahini sauce, or as desired. Store leftovers in the fridge for up to 5 days.  

This is an amazing recipe, which passed the taste test with flying colours with 3 teenage dudes, and I'm not sure there's a tougher palate to please!

Crispy Buffalo Chickpeas (Only 4 Ingredients!)

tbsp Cornstarch

tbsp Buffalo Hot Sauce (not Wing Sauce)

Drain your can of Chickpeas, but do not rinse them. Add them to a Medium Sized Bowl, then sprinkle the Cornstarch and Nutritional Yeast over the top of them. Mix Well.

Once the Chickpeas are evenly coated in the &#8220;breading&#8221;, add the Buffalo Hot Sauce to the bowl and mix until well-incorporated.

Spread the Chickpeas evenly over a greased or lined Baking Tray. Bake for 30 minutes, stir, then bake for an additional 30 minutes. If the Chickpeas are not crispy at this point, broil them on high for 2-5 minutes.

The Chickpeas may initially retain some moisture, but should crisp up after about 5-10 minutes out of the oven. Serve as desired &#8211; they&#8217;re best when still slightly warm!
