This is the EASIEST slow cooker recipe EVER! Just TWO ingredients: salsa and chicken, plus some spices makes a delicious juicy chicken that can be used in tacos, over rice, over salad and more!

Season the chicken with adobo (or salt), then place in the crock pot and top with salsa, garlic powder and 1/2 tsp cumin.

Cover and cook LOW for 4 hours. When cooked, remove the chicken and set on a large plate; shred with two forks. Pour the liquid into a bowl and reserve, then place the shredded chicken back into the crock pot, adjust salt to taste and add remaining 1/4 tsp cumin.

Pour 3/4 cup of the reserved liquid back into the crock pot and cover until ready to serve.

Makes about 2 3/4 cups chicken.

chicken breasts (boneless, skinless (about 4))

salsa (mild)

Mexican Blend cheese (shredded)

Prepare chicken: Place whole chicken breasts in your crockpot then pour the salsa over each breast.&nbsp;

Cook: Cook anywhere from 1 1/2 to 2 hours on high or 4 hours on low, you don't want to cook it longer because it will start falling apart.

Preheat your oven to 425 F degrees.

Add Cheese: Transfer the chicken to a 9x13 inch baking dish. Spoon some of the leftover salsa over the chicken.&nbsp; Sprinkle each breast with cheese, about 1/4 cup of cheese for each breast.&nbsp;

Bake: Place the baking dish in the oven and bake for 15 minutes or until the cheese is golden brown and is bubbling.

Shred chicken and add cream cheese. Allow to cook for at least 30 minutes more, up to 1-2 hours longer.&nbsp;

Place chicken breasts evenly in the bottom of slow cooker and sprinkle with salt.

Pour the salsa over the top of chicken, then sprinkle with garlic powder and cumin. Add the black beans and corn and stir until everything is combined and chicken is well coated.

Cook on low for 5-6 hours. Remove the lid and shred the chicken with two forks, then mix. Stir in cilantro, if using.

Serve in taco shells, tortillas, lettuce wraps, etc. with you favorite toppings.
