Chocolate Date Energy Balls (Vegan & Paleo)

dates

pecans

cashews

cocoa powder

½ tsp salt*

almond butter

almond milk

vanilla

Line a baking pan with wax paper, set aside. (You will not be baking these, you just need a place to set your rolled bites as you make them).

Put dates, pecans and cashews in your food processor fitted with an “S” blade or in your Vitamix. Process until mixture is fine and homogeneous.

Add the rest of the ingredients in the order listed (cocoa powder, salt, almond butter, almond milk, &amp; vanilla) to your food processor and process until mixture just starts to clump together.

Roll 1 TBS portions of your “dough” into balls and place them on your prepared baking sheet.

Put them in the fridge or freezer until they harden.

Transfer to an airtight container to save for later! These can be stored at room temperature, but will last longer when kept in the fridge or freezer! I think they taste the best cold/frozen!

I like making these date energy balls with cashews. They remind me of the cashew cookie Larabar.

Date Energy Balls

Medjool dates, pitted

raw nuts (cashews, walnuts, almonds, pecans, etc.)

sea salt

Process: Add dates, nuts and salt in a food processor fitted with the S-shaped blade. Process until mixture is well combined and sticking together.

Form balls: Scoop dough from food processor with your hands (or a cookie scoop) and form into small balls using your hands. Enjoy right away or store for later.

To store: Place balls into a sealed storage container and store in the fridge for 1-2 weeks or the freezer for up to 3 months.

Healthy Energy Balls with Medjool Dates

medjool dates (pits removed)

old fashioned oatmeal

flax seed

unsweetened coconut flakes

mini chocolate chips

vanilla extract

sunflower seed butter ((or peanut butter))

Fill a glass container with very hot water. (I heat about 2 cups in the microwave for about 1 1/2 minutes.)

Add dates to water, cover with plastic wrap and set aside for 5-10 minutes. This softens the dates and makes them easier to puree, but may not be necessary if dates are very soft.

Remove dates from water and place in a small food processor.

Add to the food processor about 1 Tablespoon of the water the dates soaked in.

Pulse until smooth, scraping down sides as necessary. Add additional water to thin the consistency of the paste, if desired.

Set date "paste" aside.

Combine oatmeal, flax seed, coconut flakes and chocolate chips in a medium sized bowl.

Add date paste, vanilla extract and sunflower seed butter to the dry mixture.

Stir to combine all of the ingredients.

Refrigerate dough for about 15 minutes if possible. (It's not required, but does make it easier to work with.)

Form dough into Tablespoon-size balls.

Refrigerate balls in an air tight container.

These no bake chocolate energy balls are a raw vegan, nutrient dense sweet treat that take just minutes to throw together.

No Bake Chocolate Energy Balls

60 g Oats

g Cashews

g Desiccated coconut

g Pumpkin seeds

tbsp Chia seeds

tbsp Flax seeds

g Pitted dates

Cocoa powder

Water

Maple syrup

Almond butter

Add 60 g Oats, 100 g Cashews, 40 g Desiccated coconut, 40 g Pumpkin seeds, 2 tbsp Chia seeds, 2 tbsp Flax seeds, 100 g Pitted dates and 2 tbsp Cocoa powder to a food processor.

Process until everything is finely chopped. A few large pieces are okay as these will add texture.

Transfer to a bowl then add 3 tbsp Water, 80 g Maple syrup and 180 g Almond butter. Mix well to combine everything.

Roll into balls. Each ball is about 4cm/1.5in in diameter and weighs around 35g/1.25oz. Refrigerate for 2 hours.

Remove seeds from medjool dates. Chop the dates into small pieces.

Place dates in a large bowl with all other ingredients. Mix firmly with a wooden spoon or spatula to bring the ingredients together, then use your hands to press into a crumbly dough. If the mixture seems too wet add another spoonful of protein powder.

Use your hands to shape the mixture into small balls.

Place the balls in the fridge or freezer to set. Keep the balls stored in the fridge or freezer depending on how firm you would like them.
