Easy Cornbread Recipe

flour

yellow cornmeal

baking powder

baking soda

salt

sugar

buttermilk

butter

eggs

Mix together flour, cornmeal, baking powder, baking soda, salt and sugar in a bowl and set aside

Whisk together in separate bowl, buttermilk, butter and eggs slightly beaten.

Pour the wet mixture together with the dry ingredients and stir. Batter will be lumpy.

Spread batter evenly into a lightly greased 8 inch baking dish.

Bake on 425 degrees for 20-25 min. It should be golden brown.

Test in the center of cornbread with a toothpick to make sure it comes out clean.

Cool for about 15 minutes before serving.

Cornbread Muffins Recipe

½ Cup Butter

Sugar

Honey

½ Cup Self Rising Cornmeal

Cup Flour

½ TSP salt

Cup Milk

¼ Cup Cooking Oil

Preheat

Grease a muffin tin. Preheat your oven to 375°. Make sure the oven is completely preheated before you place the cornbread muffins in the oven.

Combine

With a hand mixer start at low and then medium speed, beat the butter and sugar in a medium mixing bowl until creamy and thick (like you would for a cookie batter).

Beat

Add egg and beat on medium until well combined, but do not over mix.

Sift

In another bowl sift together your flour, cornmeal, and salt.

Add the flour and cornmeal mixture to the butter and egg mixture slowly, and when it resembles pea size crumbles, add the milk.

Mix until your batter is a thick but pourable consistency.

Add the cooking oil and honey to your batter and mix for one minute on medium. This should thin the batter out just a little bit.

Scoop

Scoop ¼ - ½  cup of batter per muffin cup into the greased muffin tin and place in your completely pre-heated oven. The muffin cups should be no more than ⅔ full.

Bake

Bake for 15 minutes and check to see if it is done by placing a toothpick in the center and if it comes out clean it is done, if not bake for another five minutes and check again. The top should be a soft golden color when done. (this is a very pale cornbread batter, so it will not get very brown or yellow)

Bake for 18-25 minutes or until a toothpick comes out clean or with just a few crumbs attached. Serve warm with a pat of butter and a drizzle of honey!

Well, I'm from the south, and I liked this corn bread.I think the addition of brown sugar and salt enhanced  the corn taste. I did not think it was sweet at all.  I made this for a cornbread stuffing recipe. I tried a piece right out of the oven. It's perfect for cornbread dressing recipe.

I am from the south too. I have eaten cornbread with and without sugar. I like both ways.  Like MrsOz  said, 1/4 cup of brown sugar will enhance the flavor of the corn (so does dehydrated onions but you get the onion flavor).. Anyway, I think the sugar is just enough to also affect the cornbread crust just a tad and it's wonderful. The next time I make chili, I am gonna make cornbread using your recipe. Cornbread Casserole

(230 grams) sour cream

(112 grams) unsalted butter, melted

tbsp (26 grams) sugar

tsp salt

cornbread mix (I use Jiffy)

Preheat oven to 350°F (180°C). Spray a 9-inch square baking dish with nonstick spray. Set aside.

In a large bowl, combine the eggs, sour cream, butter, sugar and salt and whisk until well combined. 

Add the cornbread mix, whole corn kernels and creamed corn and stir together until combined. 

Pour the mixture into the prepared baking dish and bake for 55-60 minutes, or until the top and edges are lightly brown. If it seems a little jiggly in the middle, that&#8217;s fine.

Remove casserole from oven and serve warm.

It was the easiest dish I have ever made.  Delicious is the only word to describe it. I am a made from scratch cook who don't usually try semi home made dishes. This is a winner to remaine in my holiday recipe file.

I did make 1 mistake I have one pan that is weird. It says it’s 9x13 but it’s a bit bigger I think.  It dried that one out a bit. I’m assuming cooking time. I had sharp cheese to mine. Not a lot just enough to swirl in and get that taste. 

I love cornbread casserole!! My cousin brings it every year to our family Christmas 🎄. My kids also love it. So I figured I'd look up the recipe and make it for Christmas dinner..I only have the whole kernel corn (sweet)..I didn't know that i.was going to need cream corn too.
