This easy sausage bake is made with gnocchi rather than pasta. Roasted gnocchi is magical – while the inside stays light and fluffy, the outside goes crisp and golden, like mini roast potatoes.

Crock Pot Swedish Meatballs are an easy dinner any night of the week! Serve it with egg noodles, mashed potatoes, or steamed veggies.

Crock Pot Swedish Meatballs

(10 ounces) cream of chicken soup ((or cream of mushroom soup))

beef broth*

(1 ounces 28 g) dry onion soup mix

ketchup (or A1 Steak Sauce**)

Worcestershire sauce (or A1 Steak Sauce**)

sour cream

Fresh parsley (for garnish (optional))

potatoes egg noodles (for serving (optional))

Add the cream of chicken soup, beef broth, onion soup mix, ketchup, and Worcestershire sauce (or steak sauce**) to the insert of your slow cooker. Whisk well to combine.

Pour in the frozen meatballs, then stir them gently until they are covered in the sauce.

Cover the Crock Pot with a lid and cook on LOW for 6-7 hours, or on HIGH for 3-3 ½ hours, or until the meatballs reach a minimum internal temperature of 165ºF (74ºC).

Turn off the heat and add the sour cream in heaping tablespoons. Stir gently until the sour cream melts and forms a thick and creamy sauce.

Serve over mashed potatoes or hot cooked egg noodles. Garnish with fresh chopped parsley (if desired).

Mississippi Meatballs

frozen meatballs (precooked)

ranch dressing mix

au jus mix (or brown gravy mix)

beef broth

pepperoncini peppers (without the juices)

Rice potatoes

Add the frozen meatballs to a 6-quart slow cooker and sprinkle evenly with ranch seasoning and au jus mix (or brown gravy powder).

Pour in the beef broth, then top with the pepperoncini peppers and sliced butter.

Cover the slow cooker with a lid and cook on “LOW” for 5-6 hours, or on “HIGH” for 2.5-3 hours.

Serve hot with mashed potatoes, rice, egg noodles, or your favorite side dishes!

Easy Mushroom Rice Pilaf with Ramps and Peas

Cups Basmati Rice (Cooked)

Tbsp Olive Oil

Cups Mushrooms (Sliced Fresh)

Cup Frozen Peas

½ Cup Ramps (Sliced)

Tsp Tarragon (Dried)

½ Tsp Black Pepper

Salt (To Taste)

Tbsp Unsalted Butter (Salted is okay too.)

Cook the rice as you normally would. Or in rice cooker until done.

Heat the olive oil in a large skillet over medium-high heat.

Add the sliced mushrooms and sauté for 3–4 minutes until softened, slightly darker, and reduced in size.

Add the frozen peas and sliced ramps. Cook until the peas are heated through and the ramps have wilted into the mushroom mixture.

Stir in the dried tarragon, black pepper, and salt to taste.

Fold the cooked basmati rice into the skillet mixture until evenly combined.

Remove from the heat and stir in the butter until melted and evenly coating the rice.
