Learn how to make the best fried eggs with this easy recipe! The trick is to cook them in hot olive oil so they develop irresistible lacy edges and lots of flavor. You can cook 1 to 2 eggs at a time in a skillet.

Favorite Fried Eggs

Cooking 1 egg? Pull out a small skillet, preferably cast iron. Cooking 2 eggs? Use a medium-to-large skillet and use 2 tablespoons of olive oil.

Crack an egg into a small bowl or ramekin and place it near the stove. Warm your skillet over medium-high heat until it&#8217;s hot enough that a drop of water sizzles rapidly on contact.

Reduce the heat to medium and add the olive oil to the pan. Gently tilt the pan around so the olive oil covers the base of the pan. The olive oil should be so warm that it shimmers on the pan (if not, give it a little more time to warm up).

Carefully pour the egg into the skillet and watch out for hot oil splatters (if you&#8217;re planning to add another egg to the same pan, pour it onto the side so there&#8217;s room for another).

Let the egg cook, gently tilting the pan occasionally to redistribute the oil, until the edges are crisp and golden and the yolk is cooked to your liking, about 2 minutes for runny yolks or 2 1/2 to 3 minutes for medium yolks. (If you&#8217;re adding another egg to the skillet, go ahead and do it while the other is cooking.)

Transfer the cooked egg(s) to a plate. If you&#8217;d like to cook more eggs in the same skillet, add another drizzle of olive oil, leave the heat at medium (you might even need to dial it down a bit to avoid smoking) and add your next egg. Repeat as necessary.

This technique works great in a heavy All-Clad fry pan also.  Thought I'd try it before buying a cast iron skillet.  The secret is in the preheating of the pan:-) And no, I don't work for All-Clad haha.

There are so many ways of cooking eggs and this one is my favourite too, however, I don't like it toasted and crispy. So I just lower the heat when cooking.

Hi! Recipe looks amazing, but I need help!

Do your eggs ever bubble? When I make the switch from medium-high to high and drizzle the oil, I wait about 30 seconds to drop the egg. It sort of bubbles if the heat is too high, and if the heat is on medium, it doesn’t cook that well-just burns the edges. Btw-I’m using a regular pan, not a cast iron skillet.

Steak, fried onions, eggs, potatoes and plantains go together in this filling and nutritious Peruvian main course

Rinse the steaks, pat dry well with a kitchen towel. Put them in a bowl. Add pepper, crushed garlic, and vinegar. Rub the seasonings on the steak. Cover the bowl and store it in the fridge for at least half an hour. It is very important to not add salt when preparing the meat at this stage. Salt tends to dry out the steak. Add salt when frying the meat.

In the meantime, you can continue with the preparation. Remember to remove the steak 5 to 10 minutes before frying.

Wash the potatoes well, peel, and cut lengthwise into four slices. Then cut each slice vertically into 5 or 6 sticks. Immerse all the cut potatoes in a container filled with water, to prevent them from turning black. When frying, drain the excess water over a strainer and dry them with a kitchen towel to prevent the oil from splashing.

Peel the plantains and cut them in half lengthwise to fry them. Place them on a flat plate and set aside. Cut the sausage crosswise.

Pour the two cups of oil into a pan and place on a stove plate over medium-high heat. When a few bubbles may appear, place the potato sticks very carefully. Remember to salt them before cooking.

Wait about three to five minutes and turn the potatoes over with a kitchen spatula. Cook for another three to five minutes on the other side, and when they are golden brown on all sides, remove from the pan. Place on a flat plate covered with absorbent paper.

In the same oil, fry the plantains. Fry on one side, wait 3-5 minutes, turn, cook on the other side, and remove from the pan. Place on a plate covered with absorbent paper.

Fry the sausage.

Prepare a couple of large plates or trays to serve the finished dish. On one side of the plate, add a bed of fries. Arrange the fried plantains and the fried sausage on the other.

Now it’s time for frying the beefsteak. Place a grill pan on the stove over high heat. Add the tablespoon of oil to prevent the flesh from sticking. Salt the steaks and when the pan is very hot, put them next to each other into the grill. The meat will make a cracking sound if the oil is hot enough.

Cook the steaks on one side for five minutes. Turn them over with tongs, cook five more minutes on the opposite side. Put a lid, and cook for three more minutes. Finally, remove and serve the steaks in the center of the plate.

On the same grill, add the onions, with two tablespoons of water and cook covered until they are wilted and dark in color. Serve the onions next to the meat on the plates

It only remains to fry the eggs in hot oil. Place one or two per plate directly on top of the steak.

Sprinkle some chopped coriander and optionally serve accompanied by white rice and avocado slices.

How to Fry an Egg

Heat a skillet over medium-low, allowing it to fully pre-heat (3-5 minutes).

Add the butter (or fat of choice) and swirl to coat the surface of the skillet.

Crack the egg into the frying pan and cook until the whites are set and the yolk is still liquid (sunny side up).

For over easy, over medium, or over hard, cook the egg until the whites are 50-75% set, then flip the egg and continue cooking on the second side until the yolk is cooked to your desired doneness.

Transfer the egg to a plate and season with salt and pepper. Enjoy!

Whisk together sauce ingredients until well combined.

I have used both of the following egg frying methods for years and they always results in a perfectly cooked egg with no burns, no chewy whites, and no burned edges! This is truly the perfect way to fry an egg!

To properly fry an egg, you want the freshest and best eggs that you can afford, but honestly– anything that falls within the sell-by date will work. 

The crispness, or lack thereof, of the bottom and edges of the fried egg all comes down to the fat and the heat of the pan. For a softer-edged egg, use butter (or a healthy butter alternative) and a non-stick skillet. For a crisper-edge use something like olive oil or sunflower oil or a combination of oil and ghee (clarified butter). Below are two different methods for frying eggs, as frying an egg with butter or oil can have different results.

When it comes to the salt, I like to either use fine-grain sea salt, Pakistani pink salt (also marketed as &quot;Himalayan&quot;), or something nice and crunchy like Maldon sea salt. Use whatever you’d like to season your eggs– there’s no right or wrong here. 


Do note: you will need more butter or oil for frying your egg if using cast-iron.

This super-quick kimchi brown rice breakfast bowl is inspired by one of my favorite Korean dishes; kimchi fried rice! Hearty brown rice is cooked with with probiotic-rich kimchi, garlic, ginger, and soy sauce then top it off with a crispy fried egg!

Kimchi Brown Rice Breakfast Bowl

Heat a sauté pan over medium heat. Add the sesame oil to the pan along with the sliced garlic, ginger and scallion whites (reserve the green tops to garnish at the end.) When the garlic and scallion is fragrant and beginning to brown add in the cooked rice.

Cook the rice, undisturbed, pressing it down with a spatula so it makes good contact with the pan, until rice begins to crisp, about 2 minutes. Give it a toss, then press down on it again, cooking until you get more crispy bits, about 2 minutes. 

Next add the kimchi and soy sauce, cook another 3 minutes, stirring to combine the ingredients. In a separate pan cook the eggs to your liking; sunny side up, over easy or poached.

To serve, divide the kimchi fried rice between two bowls and top each with a fried egg and the remaining scallions and sesame seeds. Serve immediately!

Com Sườn Nướng (Vietnamese Grilled Porkchops)

lb pork chops (bone in)

tbsp dark soy sauce

Mix everything under pork chop marinate except pork chops.

Cut 1 in sections into pork chops (there should be 3-4 cuts). Marinate pork chops for 15 mins.

Heat up 1/8c veggie oil on med/high. Add green onions and sugar and saute for 1-2 mins. (Optional: Fry an egg over easy.)

Heat up grill to 400F and grill pork chops. Grill each side for 7-9 mins each side depending on thickness.

Serve with rice, veggies of choice and Nước Chấm!

These Mini Breakfast Pizzas are my latest breakfast obsession. Pita topped with fresh pesto, savory sausage, melty mozzarella, and a gooey egg!

Mini Breakfast Pizzas Recipe

Preheat oven to 400 degrees F, place the baking rack on the top rung, and line a baking sheet with a silicone mat.

Place pita on baking sheet.

Top with pesto, sliced sausage links, and mozzarella.

Crack an egg in the center of the pita and season with salt, pepper, and a sprinkle of grated parmesan.

Bake in preheated oven for 10-20 minutes, or until the egg is cooked to your liking.

Heat 2 tablespoons of oil in a pan. Once the oil gets hot, fry the eggs. Remove from the pan. Set aside.

Add remaining oil in the pan. Fry the longanisa until the outer part turns light brown (around 1 1/2 minutes).

Pour-in water. Let boil. Continue boiling until the water evaporates.  Fry the longanisa in remaining oil until fully cooked. Remove from the pan and set aside.
