These Keto Thai Drunken Noodles make the perfect quick dinner! And are way better than takeout! These Thai Drunken Noodles are keto, low-carb, dairy-free, grain-free, and gluten-free!

Keto Thai Drunken Noodles

Shirataki fettuccine noodles ((1 package))

coconut aminos

fish sauce

Thai chili garlic sauce

sesame oil

chicken breasts

shallots (thinly sliced)

garlic (minced)

ginger root

scallions (chopped)

red bell pepper

shiitake mushrooms (sliced (optional))

Thai basil (chopped (can use regular basil))

Prepare your noodles according to the package instructions and set aside.

In a small bowl, mix together the coconut aminos, fish sauce, Thai chili garlic sauce, and keto sweetener.

In a large skillet, heat the sesame oil over medium heat.

Add in the chicken strips and cook for 5-7 minutes stirring the chicken regularly so each side browns evenly.

Once the chicken is almost cooked through, add in the shallots, garlic, ginger, and scallions and cook for 3 minutes or until softened.

Next, add in the mushrooms and red bell pepper and cook again for 5 minutes.

Next, add in the sauce and cook for 10 minutes.

Add in the basil and continue cooking for a couple more minutes.

Finally, add in the prepared noodles and stir so they are coated in the sauce.

Garnish with more fresh basil and serve immediately.

These light ginger-miso noodles are a refreshing dinner on busy nights. Ready in 20 minutes. Made in 1 pot with minimal chopping. To make it more filling, serve with sliced avocado, sesame seeds, baked tofu, peanuts, or cashews. You can also whisk a couple of tablespoons of nut or seed butter (sunbutter is great in this) into the dressing for added richness. 

Quick Vegan Miso Noodles

rice noodles (I used brown rice Pad Thai noodles.)

carrot,

edamame

sweet corn

lime juice (From about 1 lime.)

½ tablespoons tamari (Or soy sauce

white miso

ginger (Approx. small thumb-size piece of ginger root.)

maple syrup

rice vinegar

garlic,

green onion

fresh greens

Boil

Heat a large pot of salted water for the noodles. Check the instructions on the noodle package; cook time for rice noodles is typically around 5 minutes. Add noodles and carrot to boiling water, and cook for 1 minute. Stir occasionally to prevent noodles from sticking.

Cook

By the end of the minute the water should have returned to a boil. Add the edamame to the pot, stir, and set timer for 5 minutes. As soon as the water returns to a boil, add the corn. Once noodles are tender, drain in a colander. Rinse with water to prevent sticking. Drain well.

Combine

In a large serving bowl whisk together the lime zest and juice, tamari, miso, ginger, sweetener, rice vinegar, and garlic. Add the cooled noodles and veggies to the serving bowl and toss with the dressing. Top with green onion. The noodles can be served warm or cold.

Serve

Arrange greens on individual serving plates, if using, top with noodles, and green onion, and serve.

High Protein Peanut Noodles (Gluten Free, Dairy Free)

cabbage ((shredded))

carrots ((ribbons

red bell pepper ((thinly sliced))

noodles

chicken ((optional))

peanut butter

tbsp tamari ((or soy sauce))

tbsp rice vinegar

tsp sriracha ((optional for spice))

garlic powder ((to taste))

ginger powder ((to taste))

water ((slowly add until desired consistency is reached))

Cook the noodles according to the package.

Prep all of your vegetables and other ingredients: shred the cabbage, peel the carrots into ribbons, thinly slice the red peppers, and shred the chicken.

Once the noodles are cooked and drained, add all of the main ingredients into a large bowl. Set aside.

Make peanut sauce. Pour on top of what&#039;s in the large bowl and stir to combine.

Add extra sauce, a squeeze of lime, cilantro, and green onions for topping. Enjoy!

These cookies are super delicious! I am wondering if adding a little molasses would give it the missing flavor of brown sugar but its fabulous as is!

Gluten-Free Spaetzle {German Egg Noodles}

Bob's Red Mill 1:1 Gluten-Free Baking Flour

salt

eggs (beaten)

milk (or unsweetened almond milk)

butter (melted (or dairy-free butter))

gluten-free breadcrumbs

Place a large pot of boiling, salted water on the stove.

Place the flour and salt in a large bowl. Stir to combine. Add the eggs and almond milk and mix until smooth.

Using a spaetzle press, add about 1/2 cup of the dough into the press. Place over the pot of boiling water and slide back and forth to have the noodles come out. Cook very briefly, about 20 seconds or until the noodles rise to the top. Remove the noodles from the water with a strainer and place into a bowl. Repeat with the remaining dough.

Combine the melted butter and bread crumbs. Sprinkle over the cooked noodles. Serve immediately. Enjoy!

My family loved this! I made chicken and spaetzel soup! It was delicious! I didn’t have almond milk and I was out of regular milk so I used evaporated milk. It’s going in our menu rotation! Thank you so much!!!

Last year when I made this recipe I had a hard time scraping the dough into the boiling water. The dough was very sticky and a little difficult to work with.  This year I added 7 grams of whole psyllium husk to 70g of water, let it sit for 5 minutes, then added to the flour with the eggs and milk. It worked great!  I could easily slide the dough off the board into the water!

Tried these the other night and they turned out perfectly!

This has become my go-to recipe to use in place of noodles for soup, and for chicken paprikash, it's wonderful!  I use Gluten Free Jules flour and follow your recipe to the letter, never fails.  Thank you!!
