A simple, flavorful flatbread-style pizza with goat cheese, caramelized onions and balsamic reduction.

Goat Cheese &amp; Caramelized Onion Pizza

Preheat oven to 400 degrees F (204 C) and position a rack in the middle of the oven. If using a pizza stone, place the stone in the oven as it preheats.

Sauté onion in butter or olive oil over medium heat until soft, stirring frequently. Season with salt and pepper. Cover to keep in the moisture if they begin to look dry – add a splash or two of water if they’re getting too brown. Set aside once cooked.

Once oven is preheated, brush flatbread with olive oil and place on the pizza stone or a baking sheet and “pre-bake” to crisp for about 5 minutes.

In the meantime, spoon goat cheese into a bowl and add a splash of milk or water to thin so it’s spreadable. Whisk until smooth.

Remove flatbread from oven and spread with goat cheese and top with onions – I used all of the onions but use less and reserve the leftovers if you prefer.

Place back in the oven and bake for 10 minutes, or until the edges appear crisp and the onions and goat cheese have warmed through.

Slice and serve with desired toppings. I opted for a balsamic reduction and fresh basil.

Caramelized Onion, Fig &amp; Goat Cheese Pizza with Arugula

For the whole wheat pizza dough:

Unsweetened Original Almond Breeze Almondmilk, 110-115 degrees F

honey

olive oil

instant yeast (1 packet)

For the pizza toppings:

yellow onion, sliced

mission figs, stems trimmed, cut into quarters

package soft fresh goat cheese, coarsely crumbled

arugula

Balsamic reduction:

balsamic vinegar

First start by making the crust: In a large bowl of an electric mixer, mix almond milk, yeast, honey and olive oil together. Let it sit for a few minutes; you will know your yeast has activated if it begins to foam and bubble after a few minutes. If it doesn’t start to foam or bubble, start over as this is critical to making good dough.&nbsp;

After just a few minutes, mix in whole wheat pastry flour, cornmeal and salt with a wooden spoon. Place dough hook on mixer and knead dough on medium speed for 8 minutes. Dough should form into a nice ball and be slightly sticky. (If you don’t want to use an electric mixer, you can use your hands to knead the dough for 8-10 minutes.)

Next place dough in a medium bowl lightly oiled with olive oil. Cover with plastic wrap and a towel and let rise for 1 hour or until dough has doubled in size. It’s better if it’s in a slightly warm place.

While the dough is rising, you can make the caramelized onions: place olive oil a small saucepan over medium heat, add onion slices, spread the onions evenly out in the pan and cook, stirring occasionally. Check onions every 10-15 minutes until they have completely caramelized and turned golden in color. This usually takes 20-30 minutes total.

After dough has doubled, preheat oven to 450 degrees F. Add parchment paper to a large baking sheet, or grease with nonstick cooking spray.

Grease 11x9 or 8x12 inch baking sheet generously with olive oil or nonstick cooking spray. Sprinkle with a little cornmeal. Dump dough into an oil rimmed baking sheet, and stretch dough out towards the edges.&nbsp;

Cover with plastic wrap and let it sit for another 20 minutes. It’s okay if it doesn’t stretch all the way to the edges right way, it just needs a little time to rest.

Make the balsamic reduction: Add balsamic vinegar to a small pot and place over low heat. Allow it to simmer for 10-15 minutes until reduced by half, then set aside until you are ready to enjoy on the pizza.

After dough rests, pull again towards the edges of the pan so that it forms a nice small crust. Brush crust with a little olive oil. Bake for 10-15 minutes, until pizza is slightly golden brown on the crust and bottom.

Brush dough or drizzle with just a little bit of olive oil, spread caramelized onions over the pizza, along with the figs and goat cheese. Bake for 5 more minutes or until onions and figs are warmed through.

Remove pizza from oven and top with arugula and drizzle with balsamic reduction. Cut into 10-12 squares and enjoy!

Make the pizza dough

 Follow the Best Pizza Dough, Thin Crust Pizza Dough or Pizza Oven Dough recipes to prepare the dough. (This takes about 15 minutes to make and 45 minutes to rest.)

Place a pizza stone in the oven and preheat to 500°F. OR preheat your pizza oven (here’s the pizza oven we use).

Make the pizza sauce

Make the Homemade Pizza Sauce. (You’ll use about ⅓ cup for the pizza; reserve the remaining sauce and refrigerate for up to 1 week.)

Bake the pizza

 When the oven is ready, dust a pizza peel with cornmeal or semolina flour. (If you don’t have a pizza peel, you can use a rimless baking sheet or the back of a rimmed baking sheet. But a pizza peel is well worth the investment!) Stretch the dough into a circle; see How to Stretch Pizza Dough for instructions. Then gently place the dough onto the pizza peel.

Spread a thin layer of the pizza sauce over the dough. Add the mozzarella cheese. Add the goat cheese in large dollops (be generous!). Sprinkle with the red onion slices and dried oregano. Add a few pinches of kosher salt and some fresh ground pepper, to taste.

Use the pizza peel to carefully transfer the pizza onto the preheated pizza stone. Bake the pizza until the cheese and crust are nicely browned, about 5 to 7 minutes in the oven (or 1 to 2 minutes in a pizza oven).

Allow the pizza to cool for a minute or two before adding the basil on top (whole leaves, lightly torn, or thinly sliced). Slice into pieces and serve immediately.

Caramelizing onions can be a simple process, but it takes a bit of patience. Make sure to caramelize on the lowest setting your stove will go on. Any higher than that and you risk burning the onions.
