This easy green goddess dressing is creamy, bright, and delicious! I most often make it with Greek yogurt, but it also works wonderfully with cashew cream. See the recipe notes below for this easy vegan variation.

Green Goddess Dressing

whole milk Greek yogurt*

parsley

chives

lemon juice (plus ½ teaspoon zest)

olive oil

capers

garlic

sea salt

In a food processor, combine the yogurt, parsley, mixed herbs, chives, lemon juice, zest, olive oil, capers, garlic, salt, and pepper. Pulse until well combined. Season to taste.

Serve as a dip or toss with salad greens. Store in an airtight container in the fridge for up to 5 days.

Sooooo yummy!!!!  This is one of my favorite salad dressings. I like my dressing a bit thinner so I add a few tablespoons of water to thin it out.

Green Goddess Salad

Tablespoons seasoned rice wine vinegar or white wine vinegar

Place pine nuts, fresh basil, a small shallot, jalapeño, garlic, and chopped green onions into a food processor.

Use a citrus juicer or hand reamer to squeeze the juice from two limes into the food processor.

Pour in olive oil and vinegar of choice.

Sprinkle in salt, and add the shredded Parmesan cheese.

Blend the ingredients together in the food processor until well combined.

Make the Salad Dressing:

Quarter and cube the cucumbers using a knife or fullstar vegetable chopper.

Slice scallions into 1/4 inch cylinders.

Add the chopped lettuce to a bowl. Top with cucumbers and green onions. Pour the dressing on top.

Use tongs to toss, and serve!

Soak cashews in very hot water for 15-20 minutes, then drain. This step is optional if you have a powerful blender (we find raw cashews blend well in high-speed blenders).

To a small blender, add all ingredients and blend on high for 1-2 minutes or until smooth and creamy.

Taste and adjust flavor as needed, adding more salt to taste, lemon juice for acidity, or herbs for more herbal flavor. Coconut aminos enhance umami flavor / saltiness. If too thick, add slightly more water. If too thin or strong, add more cashews.

Enjoy on salads, in bowls, or as a dip for raw or roasted veggies. Best when fresh. Store leftovers in a sealed container in the fridge up to 3-4 days. Not freezer friendly.

Green Goddess Dressing Recipe

Tablespoon white wine vinegar

Salt and pepper (to taste)

Place all ingredients in food processor or blender and process until desired texture is reached. Season with salt and pepper, to taste.

Transfer to an airtight container; the dressing stores in the refrigerator for 1 week.

Green Goddess Salad Sandwich

spinach

green onions, roughly chopped

To a small blender or food processor, add all of the dressing ingredients and blend until completely smooth then set aside.

Add your chickpeas to a large mixing bowl and lightly mash with a fork or potato masher until the chickpeas are mostly mashed or to the consistency you prefer.

Now, add in your cabbage, onion, cucumber, jalapeno along with a pinch of salt and pepper and toss together to mix.

Pour on the creamy dressing and then toss everything until fully coated.

Now assemble your sandwich. Spread hummus on one slice of toast and mustard on the other. Add extra spinach if desired to the bread with hummus and then top with the green goddess salad as desired. Top with the other slice of bread and enjoy.

Delicious! So fresh and herby and love the crunch as a change of pace from other chickpea sandwiches. Very excited to try it as a dip!

Made this for a quick and easy lunch this week and let me just tell you how YUMMY this salad is!!! I love the crunch from the cucumber and cabbage, the herb-y goodness you get from the dressing and that little punch of umami flavor from the nutritional yeast. Easy Roasted Shrimp with Green Goddess Dip

Shrimp – Preheat oven to 400F. Place shrimp on a baking sheet (I line with foil for easy cleanup), drizzle with olive oil, season with salt and pepper, and toss with your hands to evenly coat.

Bake for about 7 to 10 minutes, or until just pink, firm, and cooked through; don’t overbake. Baking time will vary based on size of shrimp. While shrimp are baking, make the dip.

Dip – To the canister of a food processor, add the mayo, scallions, basil, lemon juice, salt, pepper, garlic, and blend on high speed until combined, about 1 minute.

Add the Greek yogurt and blend until combined. Taste, check for seasoning balance, and make any necessary adjustments (more salt, pepper, garlic, lemon, etc.). Transfer to a bowl and serve with shrimp. Dip will keep airtight in the fridge for up to 1 week (make a double-batch and use as a veggie dip or salad dressing). Shrimp are best warm and fresh but will keep airtight in the fridge for up to 3 days.
