These grilled shrimp skewers are shrimp marinated in garlic, lemon and herbs, then threaded onto sticks and cooked to perfection. Shrimp kabobs can be on your table in just 20 minutes, which makes them perfect for a busy night!

Grilled Shrimp Skewers

shrimp

Place the olive oil, lemon juice, salt, pepper, Italian seasoning and garlic in a resealable plastic bag. Seal and shake to combine.

Add the shrimp to the bag and seal. Toss to coat evenly with the marinade.

Marinate for at least 15 minutes or up to 2 hours. You don't want to marinate for longer than that, as the acid in the lemon juice will start to cook the shrimp.

Thread the shrimp onto skewers.&nbsp; Heat a grill or grill pan over medium high heat.

Place the skewers on the grill. Cook for 2-3 minutes on each side or until shrimp are pink and opaque.

Broiler directions: Preheat the broiler. Place the shrimp skewers on a sheet pan coated with cooking spray. Broil for 2-3 minutes on each side or until shrimp are pink and opaque.

Sprinkle with parsley and serve with lemon wedges.

Asian Marinated Grilled Shrimp Skewers

unsalted butter

soy sauce

Place the butter, soy, lime juice, ginger, garlic, and sugar in a small saucepan and whisk to combine. Let it come to a simmer over medium-low heat, stirring occasionally, then take it off the heat, stir in the scallions, and let cool on the counter to room temp.

Place the shrimp and marinade in a bag or bowl covered in plastic wrap and marinate for at least an hour in the fridge. Try to let them marinade for around 3-5 hours but no longer.

Take the shrimp out of the marinade and place them on skewers. If using wooden skewers, let these soak for 30 minutes in water.

Place the remaining marinade back in the small saucepan and bring it to a simmer, simmer for 1 minute and take it off the heat.

Preheat the grill to high heat and oil the grates. Place the shrimp skewers on the grill and get a nice char on all sides. Do not overcook or shrimp will become rubbery. This will only take about 3-4 minutes per side, depending on how big the shrimp are. Baste the shrimp with the marinade every few minutes.

Serve with a garnish of more sliced scallions. Keep any remaining marinade on the side for dipping.

Korean Grilled Shrimp Skewers

Soak bamboo skewers in water for 30 minutes before using.

Mix together olive oil, soy sauce, honey,  Korean Gochujang, lemon juice, garlic and red pepper flakes if using, in a mixing bowl.

Add the shrimp to the bowl and mix until coated.

You can cook straight away or leave to marinate the shrimp. If marinating, marinate for 30 minutes up to 2 hours ahead. Thread about 5 shrimp to each skewer.

Preheat the grill (or charcoal grill), broiler or grill pan to medium heat, oil the grates and grill the shrimp for 2-3 minutes per side or until opaque.

Transfer skewers to a plate and serve.

In a jar with a lid, combine all of the marinade ingredients. Shake until completely combined.
