Healthy Apple Crisp

For the topping:

whole wheat pastry flour (or regular flour

old fashioned rolled oats, gluten free if desired

dark brown sugar

pecans

cinnamon

salt

butter

For the crisp:

Honeycrisp

maple syrup

nutmeg

bourbon (or pure vanilla extract)

Preheat oven to 350 degrees F. Generously grease an 8x8 baking pan with nonstick cooking spray. Set aside.

To make the topping: Combine the flour, oats, brown sugar, cinnamon, salt and pecans in a large bowl until well-combined. Add in the pieces of butter and use your hands to squeeze and combine until the mixture becomes crumbly and resembles wet sand. (Alternatively, you can cut in the butter with a pastry cutter, or place all of the topping ingredients in a food processor and pulse until just blended. My favorite method is to use my hands, as I believe you get the best crumbly topping that way.)

Once finished, place topping in the fridge and begin making the apple filling.

To make the filling: Place apples, maple syrup, cinnamon, nutmeg and bourbon (or vanilla) in a large bowl and toss to combine. Allow to sit for 5-10 minutes.

Take 1/3 cup of the topping mixture and toss with the apple mixture. Place the apple mixture in prepared pan and sprinkle evenly with topping.

Bake the crisp on a baking sheet (just in case the filling bubbles over!) for 45-55 minutes, or until topping is golden brown and filling is bubbling. Remove from oven and cool 10 minutes on wire rack. Serve warm with your favorite vanilla ice cream. Makes 9 servings.

Preheat oven to 375 degrees F.

In a medium size bowl combine the crumb topping ingredients with a fork or pastry blender until it resembles small crumbs. Refrigerate while you prepare the apple filling.

(I use a Johnny Apple Peeler to peel and slice the apples all at once. It makes the process a lot faster!)&nbsp;

In a small bowl, combine melted butter and flour until well blended. Add lemon juice, milk and vanilla and stir well. Stir in brown sugar, cinnamon, and salt.&nbsp;

Pour butter mixture over apples and toss to coat. Pour apple mixture into an 8x8-inch baking dish and spread into an even layer. Sprinkle crumb topping evenly over the apples.

Bake for 30-35 minutes or until golden brown and top is set. Remove from oven and allow to cool for at least 10 minutes before serving.

Serve with Vanilla Ice Cream and homemade caramel sauce, if desired.

First, you will need to make the walnut butter or pecan butter. It helps to do this the day before so it&#039;s ready to go. This replaces any oil or butter, yet still gives a wonderful buttery taste and crisp.

Preheat the oven to 375°F and lightly grease the bottom of a 9 inch pie dish.

For the filling, peel and slice the apples into 1/4 inch wedges and add to a large bowl. Add the cinnamon, allspice, sugar, lemon juice and pecans. Set aside.

For the topping, to a separate medium bowl, add the syrup, walnut butter and cinnamon and stir until smooth. Add the oats and almond flour and mix for a couple of minutes until very thick and sticky, as pictured.

Preheat the oven to 350°F. Lightly grease a 2.5-quart baking dish with coconut oil. 

For the apple filling

In a large mixing bowl, combine the apple slices, lemon juice, and maple syrup. In a separate small bowl, combine the arrowroot, cinnamon, and nutmeg. Add the arrowroot mixture to the apples and toss to coat. Pour the apple mixture into the baking dish and spread evenly. 

For the crisp topping

In a medium bowl, mix the almond flour, arrowroot flour, coconut sugar, pecans, cinnamon, nutmeg, and salt. Add the solid coconut oil to the bowl and work it into the dry ingredients using a fork. I like to &#8220;cut&#8221; the coconut oil into the ingredients with the side of the fork until incorporated. Slowly add the maple syrup 1 tablespoon at a time and mix until a wet crumble forms. Crumble the crisp topping evenly overtop the apples in the baking dish.

Bake

 Bake for 40-45 minutes or until the filling is bubbling slightly on the edges.

Serve

Serve with coconut milk ice cream, coconut milk yogurt or coconut whipped cream.

This is the third time my family has made this recipe and we will definitely make it again soon! The only thing(s) we have done differently, were to replace the coconut oil with dairy free butter and to use monk fruit sweetener in replacement of the maple syrup. DELICIOUS.
