These Blender Peanut Butter Banana Oatmeal Waffles are a delicious healthy breakfast recipe! They are gluten-free, dairy-free, refined sugar free and have no butter or oil!&nbsp;

Gluten-Free Peanut Butter Oatmeal Waffles

¾ cup old fashioned oats

tapioca flour

½ tsp baking powder

¼ tsp baking soda

sea salt

cinnamon

vanilla almond milk

peanut butter

banana (ripe)

TBS coconut sugar

½ tsp pure vanilla extract

Preheat a waffle maker to the desired heat setting (recommended: medium-high).

Place oats into the container of your Vitamix and secure lid. Blend for 15 seconds or until they become a fine powder (the consistency of flour).

Pour oat flour into a medium mixing bowl.

Add tapioca flour, baking powder, baking soda, salt cinnamon and coconut sugar to the oat flour and stir to combine. Set aside.

Add almond milk, peanut butter and banana to the container of your Vitamix and secure the lid.

Blend on low speed, gradually increasing to high. Blend on high for 15 seconds or until the mixture is smooth.

Add vanilla and egg and blend for 10 seconds, until just combined.

Pour wet ingredients from the Vitamix container into the dry ingredients in the mixing bowl. Stir until mixture is smooth and there are no lumps.

Let mixture sit for 2-5 minutes to thicken.

Cook on medium-high heat in your waffle maker for about 4 minutes (or until your waffles reach the optimal crispiness and brownness…which will vary depending on your waffle maker)!

Serve warm!

Turn on your waffle iron and allow it to preheat.

In a medium bowl mash the bananas with a fork until they are well mashed and make a smooth paste.

Add the applesauce and eggs and whisk to combine.

Add the oats, wheat flour, baking soda, salt, vanilla and cinnamon. Stir until well combined.

Cook the waffles according to the manufacturer instructions for your waffle iron.

Serve with fresh banana slices, pure maple syrup, or honey.

Healthy Waffle Recipe - Banana Oat & Blueberry

wholemeal flour (130 grams)

rolled oats (100 grams)

bananas (approx 220 grams)

milk (250 ml)

blueberries (150 grams)

Place the dry ingredients (flour, oats cinnamon and baking powder) into a large mixing bowl

Mix the dry ingredients so they are evenly distributed

Place the bananas, milk, and eggs in a blender or smoothie maker (I use a nutribullet)

Blend

Add the smoothie mix to the dry ingredients, mix with a wooden spoon

Stir the blueberries into the waffle batter

Prepare your waffle iron as per it's instructions. I find a medium heat best for this recipe

I use spray oil on the waffle before adding the waffle batter

Cook as per your waffle iron instructions

Heat a waffle iron and grease with nonstick cooking spray, melted coconut oil, or melted butter.

Add 1/4 cup of waffle batter and cook accordingly to waffle maker instructions. The waffles should be a light golden brown color and shouldn&#39;t take more than a few minutes to cook. Let cool for a few minutes and enjoy! Top with your favorite toppings, peanut butter, mixed berries, or enjoy them just as they are.

Hi Jennifer, thanks so much for trying my recipe! The waffles shouldn't be too soft but they definitely are softer than traditional waffles since they are made with banana. I would try to put your waffle maker setting a bit higher and see if that makes them a bit crispy on the outside. I hope that helps!

I like it when it has zero added sugar in the waffle. My 4 year old daughter loves them. I used two bananas to add more sweetness and they came out great. Served with No Added Sugar peanut butter and Homemade strawberries jam. Great recipe!

In a blender combine, starting with the liquid first add the milk, yogurt, eggs, vanilla, flour, baking powder and salt and mix until well combined and smooth, about 30 to 60 seconds.

Heat a waffle iron over medium heat (I used number 3 on mine) and let it heat up.

When hot spray with cooking spray and pour 1/2 cup of batter in the center, close and cook until golden brown and slightly crisp on the edges, about 3 to 4 minutes.

I halved the recipe since I had only one egg . I Added some protein powder for an added boost and to my surprise the waffle is delicious.  Recipe is a keeper!

I love these waffles. I have made them every other week for the last year. Recently I started making them and they have a bitter taste in some areas. I replaced all of my ingredients. I mix them with a hand mixer. What could I being wrong? I noticed the same bitter taste when I made muffins...I know it is me but can't figure it out.

I really want to try these, I am really curious if they would work using cottage cheese instead of yogurt like she is now making her bagels.  I really prefer those with cottage cheese instead!

Delicious!  Love there is no oil in this recipe.  I added about 1/3 cup of sourdough discard with no other adjustments to the recipe.  Made batter in my Cuisinart - worked well.  Thanks for a light, healthy recipe!

I think I like these better than regular waffles. The 1/2 cup serving is perfect for my little mickey mouse waffle iron. Makes 2 of those perfectly. My kids loved them!

I just made these. Wonderful!  I got 7 full size waffles out of the recipe.  I added many wild blueberries (the small ones).  One tip I would give, I don't like to use cooking sprays, like Pam, on my waffle maker.  It builds up on non-stick surfaces and can wear it out quickly, especially on something like a waffle maker.  I do love it for my glass dishes and other non-stick surfaces.  Instead, I put a little canola oil in a bowl and brushed on a light coating between waffles.  Worked great.
