This Alfredo sauce recipe is the ultimate creamy, garlicky comfort food! It uses simple ingredients and only takes 15 minutes. Great for Fettuccine Alfredo!

Easy Alfredo Sauce

fettuccine ((if making Fettuccine Alfredo), see note)

butter

cream cheese

heavy/whipping cream

garlic (minced)

parmesan cheese

Salt & pepper (to taste)

Take the cream cheese out of the fridge to soften up at least 30 minutes (or longer) prior to starting the recipe, or microwave it for 20-30 seconds. Grate the parmesan.

If making Fettuccine Alfredo: Boil a salted pot of water for the fettuccine. Cook it al dente according to package instructions. Prep ingredients as you&#039;re waiting for the water to boil. I start actually cooking the sauce when the pasta is boiling. Once the pasta is done, I toss it with the sauce right in the skillet (I also add a splash of the hot pasta water), and I serve it with extra parmesan grated over top and a little chopped fresh parsley.

Add the butter, cream cheese, cream, and garlic to a skillet over medium heat. Once the butter has melted and the pan has heated up, use your spoon to help the cream cheese melt into the sauce. This will take a couple of minutes.

Once the cream cheese has been incorporated into the sauce, let it gently bubble for 3-4 minutes or until the sauce has reduced a bit. Stir occasionally.

Stir the parmesan into the sauce, and let it melt in (about 30 seconds), then take it off the heat. The sauce should be thick enough by now, but if you want to reduce it more, let it cook for a bit longer. Keep in mind the sauce will thicken more as it cools/sits. If at any point the sauce gets too thick, add another tablespoon or two of cream OR if you&#039;re making pasta with it, the hot pasta water. Give it a taste and season with salt &amp; pepper as needed.

Homemade Alfredo Sauce With Half and Half is easy to make and tastes delicious. This creamy thick homemade Alfredo sauce is perfect. The sauce is so thick it clings to the fettuccine noodles and has a great Parmesan cheese flavor. 

Alfredo Sauce With Half and Half Recipe

all-purpose flour

black pepper

Parmesan cheese

fettuccine pasta noodles

parsley flakes (optional)

Cook the fettuccine noodles in a pot of salted boiling water following the instructions on the box. 

Drain the pasta and run under cold water until cool. Drain well. Set aside while making the alfredo sauce.

To make the Alfredo sauce melt the butter in a medium-size saucepan over medium heat.

Add the flour, salt, and pepper to the melted butter. 

Use a whisk to combine. Whisk until the lumps are gone and the flour mixture is smooth. Continue to whisk over heat until bubbling.

Slowly pour the half and half into the pot while whisking. Whisk until the flour mixture is completely mixed into the half and half with no lumps. Make sure to scrape the whisk into the edges of the pan where some of the flour and butter mixture may be sticking.

Constantly whisk the mixture until the sauce starts to thicken and comes to a boil. 

Remove the pot from the heat source once the Alfredo sauce has thickened. 

Add the shredded Parmesan cheese to the pot and whisk until the cheese is melted into the sauce.

Dump the cooked fettuccine noodles into a serving bowl or large pan so you can mix the sauce into the noodles. 

Pour the thickened Alfredo made with half and half over the pasta.

Toss the pasta with the sauce until the fettuccine noodles are covered with Alfredo sauce.  

Sprinkle with a teaspoon of dried parsley flakes and stir the dried or fresh herb into the dish.

Transfer the Fettuccine Alfredo to a serving plate and sprinkle with parsley and more Parmesan cheese. 

I have chicken alfredo on my menu list this month and I have to admit that I cheated and bought the store can version of the sauce because it is quick to use. Homemade Alfredo Sauce

(3 ounces) grated Parmesan cheese

In a medium saucepan, warm butter over medium-high heat. Add garlic and cook until fragrant (about 30 seconds). Pour in the cream, reduce heat to medium and cook, stirring frequently, until you see steam coming up from the surface (about 3 minutes).  Don’t bring the mixture to a boil.

Gradually whisk in Parmesan cheese, and continue to cook, whisking frequently, until creamy and slightly thickened (about 3 minutes).  Stir in nutmeg, then season to taste with salt and pepper.

At this point you can use this Alfredo sauce with any pasta or gnocchi.  I like to reserve a little pasta cooking water to thin out the sauce as needed.  Always check for seasoning one last time after you toss the pasta with the sauce.

Alfredo Sauce Recipe

margarine

(8-ounce) package cream cheese (ok

garlic powder garlic

milk (whole, 2%, 1% or Skim)

nutmeg (optional)

oregano (optional)

Melt butter in a saucepan over medium heat.

Add cream cheese and garlic powder, stirring with until smooth

Add milk, a little at a time, whisking to smooth out lumps.

Season with a dash of oregano and nutmeg if desired. Add ground black pepper to taste.

Stir in Parmesan. Continue to cook the sauce for 10-12 minutes over medium heat until it is hot and begins to thicken slightly. (It DOES take 10-12 minutes!) Stir frequently and whisk as needed to ensure it is smooth and the parmesan is incorporated throughout. When the sauce begins to thicken, remove it from the heat. It will thicken more after it is removed from the heat.  If the sauce becomes too thick, thin with a little milk.

Toss with hot pasta to serve. Serve with additional grated Parmesan cheese and/or bread crumbs and/or finely chopped parsley.

Quick and easy homemade alfredo sauce with cream cheese. Can use low fat milk and low fat cream cheese for a lighter sauce.

Place a large skillet over medium heat. Add butter then minced garlic. Stir and cook slightly until garlic starts to soften.

Add the cubed cream cheese to the pan. Stir until it starts to melt. Add a little milk at a time and keep whisking. Continue adding milk and whisk until cream cheese is all melted and all of the milk has been incorporated.

When the sauce is smooth, stir in the parmesan cheese as well as the salt, pepper, and nutmeg if desired. Continue whisking until well combined. Use immediately.

Add 1 cup of the pasta water to the blender and blend the sauce until creamy.

As you toss your alfredo sauce with pasta, you may want to add the additional 1/2 cup pasta cooking water to loosen the sauce.

Easy Chicken Alfredo Pasta

500 g (1lb) chicken breasts

tbsp Italian herbs / Italian seasoning

garlic powder

½ tsp pepper

tbsp butter

heavy / whipping cream

herbs

Parmesan cheese (finely grated/shredded)

salt and pepper (to taste

500 g (1lb) Fettuccine

Parmesan (to serve)

Parsley (to serve)

Bring a large pot of salted water to the boil. Add the pasta or noodles of your choice then cook until al dente (usually 9-12 minutes). Reserve half a cup of pasta water and drain.

Place boneless, skinless chicken breasts on a chopping board and carefully slice the chicken breasts in half horizontally to create two thin cutlets.

Drizzle each piece of chicken with olive oil then season generously on both sides with 2 teaspoons of Italian seasoning, garlic powder, salt and pepper.

Heat a large frying pan or skillet over medium-high heat then add the chicken and cook for 2-3 minutes per side until golden brown and cooked through. Remove from the pan and set aside. 

Melt the butter in the same pan until foamy. Add the garlic and cook until fragrant (30 seconds - 1 minute).

Pour in the cream and herbs/seasoning then allow to come to a simmer. Cook for 2-3 minutes until the cream has reduced slightly.

Stir in the Parmesan cheese and allow to melt/cook for another 2-3 minutes until the sauce coats the back of a spoon.

Season to taste with salt and pepper then combine with sliced chicken, cooked pasta and a few tablespoons of the pasta cooking water.

Serve with fresh parsley and Parmesan.
