Roasted Sweet Potato Wedges with Asian Peanut Sauce

Preheat oven to 425°F. Spread sweet potato wedges in a single layer on a rimmed baking sheet, avoiding overlap. Toss evenly with oil and salt. Bake for 35 to 40 minutes, tossing once halfway through, watching closely to prevent burning. Transfer to a serving platter.

Combine peanut butter, lime juice, sugar, soy sauce, fish sauce, sriracha, and 1/4 cup nut milk in a bowl; stir with a whisk. Whisk in 1 to 2 additional Tbsp. of milk, until desired consistency is reached. Drizzle peanut butter sauce over sweet potatoes. Garnish with fresh mint, basil, or green onion.

Recipe makes 5 cups of Avocado Ranch Dressing but can easily be halved or quartered if you want to make a smaller amount.

How To Make Thai Peanut Noodle Bowls

Here is a really easy recipe for Thai style pork tenderloin with peanut sauce. &nbsp;The sauce has a really nice flavor with garlic, coconut &nbsp;milk, soy, ginger and cilantro. &nbsp;Make this a meal or serve as an appetizer. &nbsp;

Thai Style Pork Loin with Peanut Sauce Recipe Card

2.5 lbs pork loin (1 pork tenderloin)

garlic

Dijon mustard

soy sauce (paleo diet: coconut aminos)

orange juice

salt (paleo diet: sea salt)

pepper

peanut butter (paleo diet: almond butter)

coconut milk

Tbsp. cilantro (chopped)

tsp ginger (fresh, ground)

Place pork loin in a large Ziploc bag.

In a bowl mix together the garlic, mustard, soy sauce, orange juice, salt and pepper. Pour over the pork and allow to marinate about 6-8 hours.

Marinate the pork loin:

Preheat oven to 350°F

Place pork loin in glass baking dish with marinade. Cook until internal temperature is 150°F. (about 25 minutes). Baste pork loin using a turkey baster about every 10 minutes. Remove from oven.

Cover and allow to rest for about 5-10 minutes.

Cooking the pork loin:

In a small saucepan on low heat mix all sauce ingredients. Stir with a wooden spoon until all ingredients are well integrated. Continue to stir for about 5 minutes until the consistency is smooth. Transfer to a small bowl and serve over sliced pork loin. Garnish with green onion.
