This creamy honey-mustard salad dressing recipe is lightened up with Greek yogurt. No mayo here! It's so easy to whisk this dressing together. Recipe yields almost 1 1/2 cups and keeps well for 10 to 14 days.

Sunshine Salad Dressing

plain Greek yogurt (any % fat will do)

olive oil

Dijon mustard

lemon juice

apple cider vinegar

garlic, pressed

fine sea salt

twists of black pepper

In a 2-cup liquid measuring cup or bowl, combine all of the ingredients as listed. Whisk until blended. Taste, and season with additional pepper if necessary.

This dressing is intentionally bold, but if it tastes too tart for your liking, whisk in another tablespoon of honey.

Store leftover salad dressing in the refrigerator, covered, for 10 to 14 days.

Just made this and it brought a spot of sunshine to my lunch today! My kid ate up all of his salad even though he initially refused! First time making dressing using Greek yoghurt as I normally make vinigrettes but this works beautifully. 

I still have quite a bit of the dressing leftover. Does it work with pasta as well?

This dressing is very very good. I always use plain greek yogurt in my creamy dressings and my husband loves honey mustard dressing. This was a hit with him. The only thing I changed was the oil since we like the flavor of toasted sesame oil in our dressings.

This was very good! I just happened to have all ingredients on hnad and whipped it together in a 4 Cup Messaure. I used Plain Kefir, which is a little runnier than yogurt, but the dressing turned out just fine.

Delish! Used sour cream since we had no yogurt, and it was wonderful.

Honey Mustard Chicken Salad

asparagus spears

avocado (thinly sliced)

bacon (cooked crispy and chopped)

Place all dressing ingredients in a jar and shake well.

Heat a non-stick pan over high heat until smoking. Add asparagus and cook for 3 min or until there are little black bits but still firm. Remove from pan - it will continue cooking in the residual heat.

Cut chicken in half horizontally, sprinkle with salt and pepper. Drizzle 2 teaspoons of dressing over chicken.

Add oil to the skillet and cook the chicken about 2 min each side until cooked through. Transfer to a plate, cover loosely with foil and rest 5 minutes. Slice thickly.

Place lettuce in bowl, drizzle a bit of dressing over the lettuce and toss. Transfer to serving platter. Top with cherry tomatoes, asparagus, avocado and chicken. Sprinkle with bacon, drizzle over remaining dressing.

In a medium pan, heat 1/2 Tablespoon of olive oil on low-medium heat. Add corn and let cook until light golden brown (about 8-10 minutes). Rotate corn cobs every couple of minutes.

Carefully cut the kernels off corn cobs.

Add all ingredients for the dressing to a small mixing bowl. Whisk until well combined. You can also add to a mason jar and shake the dressing to combine. Add more honey for sweetness, mustard for tanginess.

Combine greens, tomatoes, onions, corn, beans, and parsley in a large salad bowl. Add desired amount of dressing and toss. Add the avocado and give it another toss. Serve.

unsalted butter (for the hamburger buns)

In a medium-sized bowl or dish, whisk together the honey, mustard and Italian dressing.   Reserve about a half a cup of the dressing for slathering on the toasted buns when ready to serve.

Place the chicken into the marinade are turn until all cutlets are well coated.

Pre-heat oven to 400°F.  Place the bacon on 1 (or 2) baking sheets and bake until crisp, about 8 to 10 minutes (time will vary depending on how thick the bacon is).  Flipping half way through the baking.  Set aside.

Meanwhile, turn your grill to medium-high heat.

Grill the marinated chicken until nicely browned. Sprinkle salt and pepper over the cutlets on each side as they cook.  Brush more of the marinade over the cutlets until they are golden brown and the glaze has slightly caramlized.  Remove from the gril.

Grill the buns until nicely browned.

On a baking sheet, place 4 chicken cutlets, then criss-cross two slices of cooked bacon, and repeat this. Place cheese slices on top.  Turn your broiler on high and then cook just until the cheese has melted, about 1 to 3 minutes.  Keep and eye on this...don&#x27;t let them burn!

Slather a good layer of the reserved honey mustard dressing on the toasted buns.  Add mayonnaise, too, if desired.  Place the prepared chicken/bacon/cheese on the buns and serve at once.
