If you grew up in the Philadelphia area, you know what Irish Potato Candy is. You eat these little cinnamon coated coconut cream treats on St. Patrick's Day.

Irish Potatoes

butter

brick of cream cheese

vanilla

confectioners sugar

coconut

cinnamon

Beat together butter and cream cheese.

Slowly add the confectioners sugar.

Add the vanilla.

Add the coconut and mix until combined.

You may want to chill the coconut mixture...

You may want to chill the coconut mixture a little before you roll them. I like to use a small ice cream scoop. These are really rich, so you want them to be small.

Roll the coconut mixture into a ball.

Irish potatoes may sound like a savory side dish but actually, there are no potatoes at all in this traditional Irish dessert! Potato candy are little bites of sweetened cream cheese and coconut, dusted with cinnamon. They are delicious and incredibly easy to make.

Irish Potatoes - Potato Candy Recipe

Champ is a tasty traditional Irish side dish of mashed potato with scallions, similar to Colcannon. This authentic family recipe will show you exactly how to make it.

Irish Champ Potatoes

butter (plus extra to serve)

milk

scallions / spring onions (chopped)

salt and pepper

Boil the potatoes in a pot with enough water to cover, for 15 minutes or until tender.

Add the butter, milk and scallions/spring onions to a small pot and heat, but don’t boil.

Drain the cooked potatoes, then mash.

Stir in the scallion milk and season with salt and pepper.

Serve the champ warm, with an extra pat of butter melting into a well in the top.

A hearty side dish made with creamy mashed potatoes, garlic and cabbage. Serve for St. Patrick's Day or anytime of year!

cabbage (coarsely chopped)

chicken bouillon cubes

cream cheese

salted butter

sour cream

salt and pepper (to taste)

green onions (for garnish, optional)

Preheat oven to 350°F.

Add potatoes, cabbage, garlic and chicken bouillon cubes to a large pot of water on the stove. Boil until potatoes are cooked, about 20 to 25 minutes.

Drain pot. Add to pot the cream cheese, milk, butter, sour cream and salt and pepper. Mash. Place mixture in a greased 3 quart casserole dish. Cover.

Bake for 45 minutes. Garnish with green onions if desired.

Creamy, buttery, and full of flavor, these Colcannon potatoes will become your new go-to side dish recipe for any meal! They are simple and easy to make and packed with all kinds of delicious ingredients!

Colcannon (Traditional Irish Potatoes)

large Russet Potatoes ((peeled,

tbsp Butter ((more for serving))

tsp Garlic ((minced))

Green Onions

Half and Half or Cream ((more if needed))

Salt

tsp Cracked Black Pepper

In a large pot, add the potato chunks.  Add enough cold water to completely cover the potatoes.  Bring the water to a boil, and cook the potatoes for about 15-20 minutes, or until they are fork-tender.  Drain in a colander and set aside.

To the same pot, add the butter and melt over medium-high heat.  Add the garlic and cook for an additional minute.

Add the kale or cabbage, and continually stir and cook for 4 minutes to help soften the greens.  Add the chopped green onion and cook for an additional 2 minutes.

Return the boiled potatoes to the pot on top of the cooked greens.  Pour in the half and half, and mash the potatoes.

Continue to mash and incorporate all the ingredients together.  If the potatoes seem dry, add more half and half until you reach your desired creamy texture. Season with salt and pepper, and more to taste if needed.

Serve with additional butter if you desire!

These potatoes were incredible!  I don't know why I haven't had them before now. I will never have mashed potatoes the "old" wsy again!

Colcannon Irish Potatoes

Champ is a traditional Irish potato side dish. Mashed potatoes are mixed with green onion infused warm milk, and served with a knob of butter melting in the center.

Scrub the potatoes and place them unpeeled into a saucepan.  Cover with cold water. Bring to a boil, then reduce the heat and simmer for about 30 minutes until the potatoes are fork tender.

Cut off and discard the bottoms and the upper third, dark green section of the green onion stalks.  Finely dice the remainder of the green onions.

Place the chopped scallions in a saucepan and cover with one cup of whole milk. Reserve the additional 1/2 cup of milk, only to be used if needed. Turn the heat to a low setting and slowly bring the milk to simmering point.  Let it simmer for 3 to 4 minutes. Then turn off the heat and let it stand so the onion flavor can infuse the milk.

Once the potatoes are cooked, drain the water and let them cool slightly. Peel the potatoes and return them to the saucepan.

Mash the potatoes with a potato masher.

Add one ounce of butter to the hot milk and green onion mixture, and allow it to melt.

While the milk and potatoes are still hot mix them together. Use the potato masher to combine them fully.  If the potatoes are too dry, gradually add the remainder of the milk to achieve a slightly loose consistency. Season the champ with salt and pepper to taste.

Spoon the champ into a bowl to serve. Use the back of a spoon to create a little hollow in the top of the champ. Place a knob of butter in the hollow on top of the hot champ, and allow it to melt slightly before serving.

My Irish heritage leads me to try all things Irish.  My great grandmother came to the USA in the mid 1800's.  Although I have not found anything about her life or her parents in Ireland, I loved her dearly when i was a young child.  Thank you for all you do for us.  Janet
