Italian Parmesan Crusted Lamb Chops - crisp, succulent and delicious, they're what you want for dinner!

Italian Parmesan Crusted Lamb Chops

single rib lamb chops, flattened

Parmigiano-reggiano cheese, grated

eggs, lightly beaten

bread crumbs

Vegetable oil

Salt & black pepper,

Place each chop between two pieces of wax paper and pound the meat until thin, being careful to avoid the bone.

Turn the chops, on both sides, into the grated cheese.

Press the chops firmly against the cheese making sure it adheres. Tap the rib gently against the side of the bowl so that any excess cheese will fall off.

Dip each chop into the egg, allowing any excess egg to flow back into the bowl.

Turn the chops in the bread crumbs, coating both sides.

Heat about 1/4-inch of oil in a skillet over medium heat. When the oil is hot &#8211; place chops in the pan. Fry on both sides until a golden crust is formed.

Remove from pan, season with salt and pepper.

The calzone of sweets, these raspberry and ricotta filled Panzerotti's are oozing with flavour, the perfect finishing touch on your home-cooked Italian supper.

Sweet panzerotti with ricotta and raspberries

fresh ricotta, strained

tbs caster sugar

vanilla bean paste

tbs milk

raspberries

Pure icing sugar, to dust

sachet dried instant yeast

tbs honey

bread flour

tbs milk, plus extra if needed

tbs extra virgin olive oil

Straight from the oven, juicy berries and the sweet aroma of this Strawberry Mint Crostata is enough to make you stop whatever you're doing, and grab a fork.

&nbsp;

Strawberry Mint Crostata

cups all-purpose flour

cup plus 2 Tbsp. ice cold water

Tbsp. honey

lb. of fresh strawberries, rinsed and sliced

mint

strawberries,

milk

sugar

In a large mixing bowl, place the flour, 3/4 cup cubed butter, and water.

Mix with your hands until everything is combined and the dough becomes one solid mass.

Turn the dough onto a well-floured board and form into a disk.

Wrap the disk with plastic and refrigerate for at least 1 hour.

In the meantime, prepare your strawberries.

In a large pan, over medium heat, melt 2 Tbsp. butter, honey, and chopped mint.

Add 1 lb. sliced strawberries, and cook until heated through and caramel-y. The berries will break down into a thick sauce. Some of the berries will maintain their shape, we want this. Cook for about 10 minutes. Remove from heat.

Place a piece of parchment on a baking sheet, then roll out the dough on the parchment to form a 12 inch circle.

Leaving about 1 1/2 inches around the perimeter, spread the strawberry mint mixture in the center of your dough. Top with remaining strawberries.

Gently fold the border up and around the berries, pleating to make a circle.

Brush milk around the edges of the dough and sprinkle the entire crostata with sugar.

Bake for 40 minutes until the crust is golden.

Cheese Stuffed Shells

pasta shells

ricotta cheese

mozzarella cheese (divided)

Kaltbach Le Cremeux cheese

Italian seasoning

salt

black pepper

marinara sauce

basil (for serving)

Preheat oven to 350°F degrees.

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or a little less than al dente; drain and rinse with cold water.

In a large bowl, combine ricotta, Kaltbach cheese, half the mozzarella cheese, egg, Italian seasoning, salt and pepper. Spread ¾ of the spaghetti sauce on the bottom of a 9x13 inch baking dish.

Spoon the cheese mixture into the cooked shells and place in the baking dish. Pour remaining spaghetti sauce over shells and sprinkle with remaining mozzarella cheese.

Bake in preheated oven covered (preferably but not necessary) for 30-35 minutes, until edges are bubbly and shells are slightly set.
