Make the perfect jacket potato – crispy on the outside and meltingly soft in the middle

Classic jacket potatoes

Heat the oven to 220C/200C fan/gas 7. Rub the olive oil over the potatoes and put on the top shelf of the oven. Bake for 20 mins.

Turn down the oven to 190C/170C fan/gas 5 and bake for 45 mins-1 hr until the skin is crisp and the flesh soft.

Cut a cross on top of each potato, squeeze the sides, add the soured cream and your favourite toppings.

Let us show you how to make a baked sweet potato that's soft and sweet. In this recipe it is balanced with spicy black beans and fresh, crunchy slaw. It's a great healthy meal for one.

Baked sweet potato

sweet potato (about 350 grams/12 ounces), washed and dried

garlic clove, finely chopped

cumin seeds

chilli flakes,

tin black beans,

milliliters/3½fl oz vegetable stock,

salt and black pepper

red cabbage, thinly sliced

radishes,

½ red onion, thinly sliced

coriander,

½ lime, juice only

Get some protein into a vegan diet with this tasty chickpea curry jacket. It's an easy midweek meal, or filling lunch that packs a lot of flavour.

Vegan chickpea curry jacket potatoes

coconut oil

½ tsp cumin seeds

onion,

garlic cloves, crushed

ginger,

green chilli, finely chopped

tsp garam masala

tsp coriander

turmeric

tbsp tikka masala paste

x 400 grams can chopped tomatoes

x 400 grams can chickpeas, drained

lemon wedges and coriander leaves,

Heat oven to 200C/180C fan/gas 6. Prick the sweet potatoes all over with a fork, then put on a baking tray and roast in the oven for 45 mins or until tender when pierced with a knife.

Meanwhile, melt the coconut oil in a large saucepan over medium heat. Add the cumin seeds and fry for 1 min until fragrant, then add the onion and fry for 7-10 mins until softened.

Put the garlic, ginger and green chilli into the pan, and cook for 2-3 mins. Add the spices and tikka masala paste and cook for a further 2 mins until fragrant, then tip in the tomatoes. Bring to a simmer, then tip in the chickpeas and cook for a further 20 mins until thickened. Season.

Put the roasted sweet potatoes on four plates and cut open lengthways. Spoon over the chickpea curry and squeeze over the lemon wedges. Season, then scatter with coriander before serving.

sunflower oil

red onions

sachet (30-39 grams), chilli con carne seasoning mix

beef mince

smoked bacon lardons

tomato purée

can chopped tomatoes

can black beans

soured cream cheese

Heat oven to 200C/180C fan/gas 6. Prick the potatoes all over with a fork, then put on a baking sheet and bake in the oven for 1 hr.

While the potatoes are baking, heat the oil in a large frying pan. Add the onion and fry over a high heat for 5 mins until softened. Add the garlic and chilli sachet. Stir a few times to coat the onions in the spices, then tip the onion mixture into a large ovenproof dish.

Put the pan back over high heat and add the beef mince, breaking it up with a spatula as you go. Cook until starting to become crisp at the edges, then add to the dish with the onions. Return the pan to heat and cook the bacon until crisp at the edges. Add the bacon to the beef and stir to combine.

Stir in the tomato purée and tomatoes, then put the dish in the oven with the potatoes and bake for 25-30 mins until bubbling and starting to thicken. Stir in the beans and season well. Return to the oven for 5 mins to warm through.

Cut a cross in the top of each potato and squeeze the sides to open. Spoon in the baked chilli and top with soured cream, cheese and coriander if you like.

Baked sweet potato makes a nice change and is a really easy, healthy dinner to throw together. To serve two,  just double up the ingredients with some bonus leftover topping for lunch.

Filling your plate with vegetables is a nutritious way to feel full without piling on the calories. Here they are drizzled with an easy dressing of tahini and Greek-style yoghurt. If you're not on a diet, try a drizzle of pomegranate molasses in place of the lemon juice. This is a slightly over 500 calories, so could be paired with lower calorie breakfast and dinner so your daily calories don't exceed 1200–1500.

Each serving provides 545 kcal, 22g protein, 62.5g carbohydrates (of which 7.5g sugars), 19g fat (of which 3.5g saturates), 16.5g fibre and 0.2g salt.

Tuna Stuffed Baked Potatoes, twice baked or double baked as they are sometimes known, are such a budget friendly and versatile meal.

Tuna Stuffed Baked Potatoes

Potatoes (russet)

Cream cheese

g Mature cheddar (grated; for the filling)

g Mature cheddar (grated; for the topping)

Sun-dried tomatoes (chopped)

110 g Tuna (canned; drained)

tbsp Sweetcorn

salt black pepper

Preheat your oven to 180°C/160°C(fan)/350°F/Gas 4.

Pierce the skins of 2 Potatoes several times. Put the potatoes into the oven and baked for 60-90 minutes, until they are easily pierced with a fork. Slice the potatoes in half and scoop out the insides and put it into a bowl.

Add 4 tbsp Cream cheese, 25 g Mature cheddar, 6 Sun-dried tomatoes, 110 g Tuna, 4 tbsp Sweetcorn and 1 pinch Sea salt and ground black pepper to the bowl with the potatoes and mix well.

Divide the mixture between the potato skins and top with 25 g Mature cheddar.

Put them back in the oven for 15 minutes until the cheese has melted.

These are so delicious and I love that you can swap the fillings around too.

Mexican Baked Potato Recipe | Woolworths

sour cream

red capsicum, diced

red chilli, diced

coriander, chopped

red onion, diced

spring onion, diced

corn cob, kernels removed

cherry tomatoes, chopped

cracked pepper

black beans,

garlic, chopped

pink salt ground (to taste)

Wash and place the potatoes on the baking tray, bake (approximately 180°C) for 50 minutes or until potatoes are soft and cooked.

Add olive oil to pan and fry the onion, corn and capsicum for 10 minutes on medium heat until onion is soft.

Add chipotle chilli powder and diced chilli and cook for a further 2 minutes.

Remove from heat and then add the chopped cherry tomatoes, coriander and black beans to the onion min.

Cut a cross in the top of each potato and gently squeeze the base to open, top with a spoonful of vegetable mix and dollop of sour cream. Serve.
