Jamaican Beef Stew With Rice Recipe

olive oil

salt and black pepper

white onion, finely chopped

carrots,

habanero chilies, seeded and minced

garlic, minced (about 2 teaspoons)

chicken stock

allspice

cinnamon

hot pepper sauce

thyme

bay leaves

brown sugar

red wine vinegar

soy sauce

steak sauce,

Adjust oven rack to lower-middle position and preheat oven to 300°F. Heat olive oil in a Dutch oven over high heat until smoking. Season beef with salt and pepper. Add beef to pan and cook without moving until well-browned on one side, about 6 minutes. Stir to loosen meat, and add onions and carrots. Cook, stirring, for 2 minutes, reduce heat to medium and add habaneros, garlic and rum. Bring to a boil and simmer for 2 minutes before adding chicken broth, allspice, cinnamon, hot pepper sauce, thyme, bay leaves, brown sugar, red wine vinegar, tomatoes, soy sauce, and steak sauce.

Return to a boil, cover and transfer to oven. Continue cooking until meat is tear-apart-tender when pierced with a fork, about 1 1/2 hours longer.

When stew is done, remove from oven and discard thyme sprigs and bay leaves. If stew is not thick enough, reduce over the stovetop until desired consistency is reached. Season to taste with salt and pepper. Garnish with green onions and serve immediately with rice.

Jamaican Chicken Curry Recipe

fingerling potatoes, sliced into 1/4-inch coins

Heat the oil in a medium saucepan over medium heat until shimmering. Add the onions, garlic, and ginger and cook, stirring, until the mixture begins to soften and the onions are almost translucent, 5 to 8 minutes. Add peppers and cook, stirring, for another 2 minutes. Add curry powder, stir, and continue to cook until curry powder turns deep gold and is fragrant, about 1 minute. Season the chicken with salt and pepper, add to pan and continue to cook for 8 to 10 minutes. Add the potatoes and cook for 3 minutes before adding the chicken broth, coconut milk, Worcestershire, vinegar and hot sauce. Reduce heat to low and simmer until chicken is cooked, potatoes are tender, and sauce is lightly reduced, about 30 minutes. Season to taste with salt and pepper. Garnish with cilantro if desired, and serve with sides such as grilled or fried plantains, beans, and rice.

Mix it all together evenly.

Oven Baked Jerk Chicken

Cut up the chicken into 6 pieces (2 legs/thighs, 2 breasts, 2 wings)

Place in a large bowl and cover in jerk marinade. Turn the chicken around to make sure that all the pieces are coated. Cover the bowl with plastic wrap and place in th fridge for a minimum of 1 hour.

Preheat oven to 375F and place chicken pieces on a baking sheet.

Bake in the oven for 1 hour or until the chicken is cooked through and the internal temperature reaches 165F

The Jamaican marinade has many versions, but John Torode likes his super spicy with a dash of soy. Serve with coconut basmati rice

Jerk chicken with rice & peas

chicken thighs,bone

lime,halved

big bunch spring onions,roughly chopped

thumb-sized piece ginger,roughly chopped

½ a small onion

scotch bonnetchillies, deseeded if you want less heat

½ tsp dried thyme,or 1 tbsp thyme leaves

lime,juiced

vegetable oil

basmati rice

coconut milk

spring onions,sliced

garlic cloves,finely chopped

kidney beans,drained

To make the jerk marinade, combine the spring onions, ginger, garlic, onion, scotch bonnet chillies, dried thyme, lime juice, soy sauce, vegetable oil, brown sugar and ground allspice in a <a href="https://www.bbcgoodfood.com/content/test-five-best-food-processors">food processor</a> along with 1 tsp salt, and blend to a purée. If you’re having trouble getting it to blend, just keep turning off the blender, stirring the mixture, and trying again. Eventually it will start to blend up – don’t be tempted to add water, as you want a thick paste.

Taste the jerk mixture for seasoning – it should taste pretty salty, but not unpleasantly, puckering salty. You can now throw in more chillies if it’s not spicy enough for you. If it tastes too salty and sour, try adding in a bit more brown sugar until the mixture tastes well balanced.

Make a few <a href="https://www.bbcgoodfood.com/content/top-five-cooks-knives">slashes</a> in 12 chicken thighs and pour the marinade over the meat, rubbing it into all the crevices. Cover and leave to marinate overnight in the fridge.

If you want to <a href="https://www.bbcgoodfood.com/review/test-best-barbecues-under-ps100">barbecue</a> your chicken, get the coals burning 1 hr or so before you’re ready to cook. Authentic jerked meats are not exactly grilled as we think of grilling, but sort of smoke-grilled. To get a more authentic jerk experience, add some wood chips to your barbecue, and cook your chicken over slow, indirect heat for 30 mins.

To cook in the oven, heat to 180C/160C fan/gas 4. Put the chicken pieces in a <a href="https://www.bbcgoodfood.com/review/test-five-best-roasting-tins">roasting tin</a> with the halved lime and cook for 45 mins until tender and cooked through.

While the chicken is cooking, prepare the rice &amp; peas. Rinse the basmati rice in plenty of cold water, then tip it into a large <a href="https://www.bbcgoodfood.com/content/five-best-saucepans">saucepan</a>. Add the coconut milk, spring onions, thyme sprigs, garlic and ground allspice.

Season with salt, add 300ml cold water and set over a high heat. Once the rice begins to boil, turn it down to a medium heat, cover and cook for 10 mins. Add the kidney beans to the rice, then cover with a lid. Leave off the heat for 5 mins until all the liquid is absorbed.

Squeeze the roasted lime over the chicken and serve with the rice &amp; peas, and some hot sauce if you like it really spicy.

Jamaican Jerk Marinade Recipe

vinegar white vinegar vinegar

orange (about ¾ cup (orange juice))

lime (lime juice)

Jerk sweet potato & black bean curry

onions, 1 diced, 1 roughly chopped

sunflower oil

ginger, roughly chopped

coriander, leaves

tbsp jerk seasoning

can chopped tomato

tbsp red wine vinegar

tbsp demerara sugar

vegetable stock cubes,

1kg sweet potato,

jar roasted red pepper,

Gently soften the diced onion in the sunflower oil in a big pan or casserole.

Meanwhile, whizz together the roughly chopped onion, ginger, coriander stalks and jerk seasoning with a hand-held blender. Add to the softened onion and fry until fragrant. Stir in the thyme, chopped tomatoes, vinegar, sugar and stock cubes with 600ml water and bring to a simmer. Simmer for 10 mins, then drop in the sweet potatoes and simmer for 10 mins more. Stir in the beans, peppers and some seasoning, and simmer for another 5 mins until the potatoes are almost tender. Cool and chill for up to 2 days.

To serve, gently heat through on the hob. Roughly chop most of the coriander leaves and stir in, then serve scattered with the remaining leaves.

This easy jerk salmon bowl is filled with rice and beans, topped with mango salsa, and packed with authentic Jamaican flavors! It’s a delicious 30-minute dish, perfect for a flavorful weeknight meal!

Easy Jerk Salmon Bowl with Rice, Beans, and Mango Salsa

lb Wild Caught Salmon Filet

tbsp Grace Jerk Seasoning

Brown Rice

Red Onion, diced

tsp Cumin

tbsp Cooking Oil

tsp Sea salt

can black beans, rinsed and drained

Mangos

Jalapeno, diced

Red Pepper, chopped

Cilantro, chopped

Lime, juiced

tsp Smoked Paprika (optional)

Salt

Rub the salmon with the Grace Jerk Seasoning. If you have pieces, divide the sauce evenly between each piece. (You can also rub the marinade on the skin as well) If time permits, let the salmon marinate in the sauce for at least 30 minutes before cooking.

Preheat oven to 375°F.

In an oven-safe dish with a lid, or covered with foil, place the salmon in the preheated oven. Bake the salmon for 15 minutes.

Remove the lid or cover and turn the oven settings to broil. Broil the salmon for 5 minutes to achieve a golden, slightly crisp crust.

In a large skillet, add the cooking oil over medium heat. Then, add the onion and saute for 2-3 minutes, or until translucent. Add the rice, beans, and seasonings and cook for an additional 5 minutes.

Combine the ingredients for the mango salsa in a small bowl.

Now that all the layers of the salmon bowl are complete, create your bowl by layering the rice and beans, salmon, and salsa. Enjoy!

The Best Mango Salsa! | Five Ingredient Mango Salsa | Perfect Salsa For Tacos | Easy Salsa Recipe

This Jamaican jerk chicken recipe is spicy and loaded with Caribbean flavor, with a fiery Scotch bonnet marinade, char grilled or baked. My favorite.

Make Marinade

For the jerk marinade, add all of the marinade ingredients to a food processor or blender and process until smooth.

Poke Chicken

Next, poke some wholes in your chicken with a knife to let the marinade permeate more deeply.

Marinate Chicken

Set the chicken into a large bowl or into a sealable baggie. Pour the marinade over the chicken and rub it down. You can to completely cover the chicken with the marinade.

Refrigerate

Cover and refrigerate. Marinate the chicken at least 2 hours, though you&#39;ll get more flavor penetration if you plan ahead and refrigerate overnight. Discard marinade.

TO GRILL THE CHICKEN. Heat a charcoal or gas grill to medium-high heat and lightly oil the grill grates. Grill the chicken for 12-20 minutes, or until the chicken is cooked through. It should measure 165 degrees F internally.

Cook Chicken

TO BAKE THE CHICKEN. Heat your oven to 400 degrees F. Bake the chicken for 35-40 minutes, or until the chicken is cooked through. It should measure 165 degrees F internally. Grilling is more traditional, but baking is easy.

Jamaican Curry Powder Recipe

coriander seeds (or use 2-1/2 tablespoons ground)

Toast Seeds

Toast the Seeds/Grains. If you are using seeds/grains, lightly toast them in a hot dry pan on medium-low heat for 2-3 minutes, stirring a bit, until they become nicely fragrant. Do not let them burn or you will get a bitter flavor.

Grind Seeds

Grind in a spice grinder or with a mortar and pestle along with the other ingredients. Mix well.

For Ground Ingredients Only. Simply mix all of the spices together until well incorporated.

Store

Store in an airtight container in a cool, dark place for 3 months. Will last longer, but will begin to lose potency.
