Pan-seared scallops cooked in the most delicious garlicky butter sauce. An easy and simple recipe you can make at home in under 10 minutes!

Garlic Butter Scallops

salt and fresh ground pepper, (to taste)

sweet paprika

unsalted butter, (divided)

garlic cloves, (minced)

lemon juice

parsley

lemon slices, (for garnish)

Thoroughly pat dry the scallops with paper towels.

Remove any attached side-muscle on the scallop by pinching and tearing it away from the scallop.

Season scallops on all sides with salt, pepper, and paprika.

Set a large skillet over high heat and add 2 tablespoons butter; cook until sizzling.

Add the scallops in one layer without over crowding the pan. Cook in batches if the scallops do not fit in the pan all at once.

Cook scallops for 2 minutes, or until browned. Do not move them around.

Flip over the scallops, lower heat to medium-high, and continue to cook for 1 1/2 to 2 minutes, or until bottom is golden brown.

Remove scallops from pan and set aside.

Melt remaining butter in the skillet, scraping up any browned bits left on the bottom of the pan.

Stir in garlic; cook for 1 minute, stirring frequently. Do not burn the garlic.

Add wine and cook for 2 minutes.

Squeeze lemon juice into the skillet; stir, and taste sauce for seasonings. Adjust accordingly.

Return scallops to the pan and spoon sauce over scallops.

Garnish with parsley and lemon slices.

Serve.

Instant Pot Pork Loin

butter, (melted)

garlic

brown sugar

soy sauce

lemon zest

thyme leaves

olive oil

chicken broth

Take pork loin out of the fridge 20 minutes before cooking.

In a small bowl, whisk together the melted butter, garlic, brown sugar, soy sauce, lemon zest, parsley, and thyme.

Season pork loin with salt and pepper; then, brush the butter mixture all around the meat. Set aside.

Press the Sauté function on the Instant Pot and heat up the olive oil.  When oil is hot, sear the pork loin on all sides until browned, about 2 to 3 minutes per side.  Remove pork from IP and set aside.

Add broth (or wine, beer, or water) to the Instant Pot and scrape up any browned bits from the bottom.  Cancel the Sauté function and place a trivet in the IP and set the pork on top of the trivet.  Lock the lid and pressure cook at HIGH PRESSURE for 15 minutes.  Then, let pressure come down naturally for 15 minutes, and quick release any remaining pressure.  Open the lid and check internal temperature with an instant read meat thermometer; it should read 145˚F. If it’s less than this, you can place the lid back on the pot to let the carryover heat cook the pork to doneness. Shouldn’t take more than 2 to 3 minutes.

Transfer pork loin to a cutting board and let rest for 15 minutes before cutting. This will help seal in the juices.  In the meantime, prepare the pan-sauce: Select the Sauté function on the IP and bring liquid to a boil. Continue to cook at a slow boil for 5 minutes, or until reduced by half, stirring occasionally.  Slice the pork and serve with the pan juices.

Roast Chicken Recipe

chicken

Preheat oven to 450˚F.

Remove giblets from inside of the chicken's cavity.

Thoroughly dry the chicken with paper towels.

Place chicken, breast side UP, on a rack set over a shallow roasting pan or jelly roll pan.

Brush chicken with melted butter.

Sprinkle or rub minced garlic all over chicken.

In a small bowl combine salt, basil, thyme, and lemon pepper; rub onto the chicken.

Add some salt to the inside of the cavity and fill the cavity with lemon slices, rosemary, and garlic cloves.

Tie the legs together with kitchen twine, and tuck the wings under the body of the chicken.

Roast, uncovered, for 10 minutes.

Reduce oven temperature to 350˚F and continue to cook until done; about 1 more hour and 10 minutes, or until internal temperature of chicken reaches 165˚F.

Remove from oven and baste the chicken with the juices.

Let rest for about 15 to 20 minutes before cutting.

Caprese Stuffed Mushrooms

cherry tomatoes

mozzarella

balsamic glaze

Preheat oven to 400˚F.

Prepare the mushrooms by gently popping off the stems. Then, using a spoon, remove the brown gills from inside the cap. Wash the mushroom caps and pat dry with paper towels. Set aside.

Melt butter in a small bowl and whisk in parsley, garlic, 1/4 teaspoon salt, and 1/4 teaspoon pepper.

Brush the garlic butter mixture all over the mushrooms.

Transfer mushrooms to a rimmed baking sheet and bake for 8 to 10 minutes, or until softened.

Remove mushrooms from oven; arrange previously prepared cheese balls and tomatoes inside each mushroom cap. Place the cheese and tomatoes close together. You can always add more, or use less, tomatoes and cheese.

Season with remaining salt and pepper.

Bake for 12 to 14 minutes, or until cheese is completely melted.

Remove from oven.

Top mushrooms with fresh basil and drizzle with balsamic glaze.

Prepare a roasting pan with a rack set over it; set aside.

Take the roast out of the fridge at least 1 hour before cooking, and up to 2 hours before cooking.

Pat dry the meat with paper towels.

Using a sharp knife, cut slits in the roast and insert the slivered garlic evenly around the whole roast.

In a small bowl combine olive oil, rosemary, thyme, salt, and pepper; mix until thoroughly incorporated.

Rub the rosemary mixture all around the roast.

Place roast on top of the rack that is set over the roasting pan.

Stick an ovenproof meat thermometer into the center of the meat.

Put prepared meat in the oven and roast for 15 minutes.

Reduce heat to 325˚F and continue to roast until internal temperature reaches 130°F for rare, 140°F for medium rare, and 150°F to 155˚F for medium to well done. This can take anywhere from 1 hour and 20 minutes to 2 hours, depending on the size of the roast and desired doneness.

Remove from oven and let roast rest for at least 20 to 30 minutes before cutting.

Cut and serve.

Preheat oven to 425˚F.

Add all the vegetables to the baking sheet.

Add olive oil over the veggies and mix with either a wooden spoon or just use your hands.

Season with salt, pepper, Italian Seasoning, and garlic powder; gently toss until thoroughly combined.

Arrange all the veggies in a single layer.

Bake for 15 to 20 minutes, stirring halfway through cooking. You want to roast the veggies until fork tender and lightly browned.

Garnish with parmesan cheese and parsley; serve.

Preheat an outdoor grill to medium-high.

In a large mixing bowl combine asparagus, oil, garlic, lemon juice, Italian Seasoning, salt, and pepper; toss until well combined.

Lay out four large pieces of foil.

Divide up the asparagus between the foil sheets and top with mozzarella cheese.

Fold and seal the foil packs.

Transfer prepared foil packs to the grill and cook for 13 to 15 minutes, or until asparagus is tender. Cooking time depends on the thickness of the asparagus.

Remove from grill and carefully open up the foil packs.

Sprinkle with parmesan and garnish with parsley.
