This meal was my first foray into zoodles. OMG, it was gone and my table was delivering rave reviews!  We will most definitely be making this one again.

Not really all that great instructions. I also believe that their should be some nutritional information on this. Would also like to add that when me and my mom made this it was only enough for one small bowl for each of us. Not sure if the zoodles were supposed to be drained of all the liquid because this was my first dish with zoodles in it, but I found out that when it was almost a soup when we were done making it.

This 4 ingredient keto pasta is sure to be a hit with your family. Even the Italians in the house will be shocked at how good these keto noodles are.

Keto Pasta

Cup Shredded mozzarella cheese ((112 grams))

Large Egg Yolk ((18 grams))

tsp Gelatin Powder ((6 grams))

Water

In a small bowl add the gelatin powder and water. Whisk then let it sit to absorb. It will be very thick. 

Using a microwave safe bowl, add the cheese, and microwave for 20-30 seconds until all the cheese is melted. Whisk the melted cheese to make sure that there are no solid cheese pieces, then quickly add in the egg yolk and whisk until the mixture is homogenous. Careful not to cook the egg yolk.

Next microwave the bowl with the gelatin in 10 seconds interval until all the gelatin granules are dissolved, usually 20 seconds total.

Once the gelatin mixture is ready, pour it over the cheese mixture and whisk quickly until it&#039;s properly combined. The mixture will start looking like a soft dough. (If the cheese mixture has cooled, microwave it for 10 seconds before you add the gelatin.)

Transfer the cheese mixture onto one side of a greased sheet of baking paper. Fold it over, and gently start pressing over the baking paper to spread the dough evenly. 

Using a rolling pin, gently roll out the dough between the baking paper sheets into a 1/4 inch thick dough. Place in the fridge to set for 30 minutes.

Take the rolled out dough out of the fridge. Using a pizza cutter, cut the dough into noodles of your desired width. You could do fettuccini , linguini, spaghetti, etc..

To serve, toss it in your hot/warm sauce of choice, the pasta will immediately heat up and come up to the temperature of the sauce.*

Low Carb Keto Drunken Noodles

Teaspoons Golden Swerve or Lakanto ((note 1))

Teaspoon Xanthan Gum ((note 2))

Tablespoon Thai Fish Sauce

- 8 Ounce Packages Shirataki Noodles (fettucini style)

Cup Sesame Oil

Small Shallot (thinly sliced)

Cloves Garlic (minced)

Bell Pepper (thinly sliced)

Thai Chilis (minced. Can sub

Pound Chicken Breast (boneless + skinless)

Cup Fresh Basil (roughly chopped)

Make the sauce. Add warm water (1/3 cup), erythritol (2 teaspoons), and xanthan gum (1/8 teaspoon) to a bowl and whisk until dissolved. Be sure to sprinkle the xanthan gum over the top, otherwise, it will clump (note 3). Add the soy sauce (1/2 cup)and fish sauce (1 tablespoon), and whisk. Set aside.

Rinse noodles. Rinse your shirataki noodles (2 - 8 ounce packages) thoroughly by draining them in a colander and running water over the top as your toss the noodles with your hands for at least 1 minute. Set aside to drain.

Sear. Heat 2 tablespoons of oil in a large skillet over medium heat. Add chicken (1 pound) and sear each side (about 1-2 minutes) until golden (it won&#039;t be cooked through yet). Set seared chicken aside on a plate.

Saute.  Add remaining oil to the skillet, along with the bell peppers (1) and shallots (2 small) and cook for two minutes. Add Thai chiles (1-2), garlic (3 cloves) and green onions (8), and cook for another 2 minutes, or until they become fragrant. Add the noodles and toss to coat in the veggies and oil. Fry for about 3 minutes (this helps remove any weird taste the noodles may have, don&#039;t skip).

Simmer. Add the chicken back to the skillet, as well as the sauce. Toss to coat everything. Bring sauce to a simmer and allow it to cook for about 5 minutes until the sauce thickens, the chicken is cooked through, and the veggies are tender to your liking.

Serve + enjoy! Remove from heat, stir in the basil (1 cup), serve warm, and enjoy!
