How to make Gochujang at home

THE NIGHT BEFORE: Soak malt barley (all 750 g of it!) in 5 litre of cold water for 5 hrs or more.

THE NIGHT BEFORE: Soak sweet rice in water for 3-4 hrs or more.

NEXT MORNING: Strain soaked sweet rice through a colander and remove all excess water.

Grind sweet rice with a blender or chopper as fine as you can make it. Set aside.

Strain malt barley through a fine sieve or medium grade cheese cloth to just get the liquid and some fine white sediments.

Add sweet rice powder to strained liquid from above.

Leave mixture in the oven with a temperature of about 60°C (140°F) for 5 hrs.

Remove malt barley + sweet rice mixture from oven and cook on stove top.

Start at medium high -&gt; medium heat until liquid has reduced by about 20%. Let it cool.

Once liquid is cooled, add fine gochukaru, meju karu and sea salt.

Add rice syrup (jocheong 조청) - add more or less to your taste.

Mix everything well.

Transfer gochujang into the prepared, sanitized clay pot (hangari 항아리).

Sprinkle top with handful of sea salt.

Leave in full sun for 6 months.

Use your hands to roughly break the pitted dates to smaller pieces. Blend with 3 tbsp water in a small (4-cup) food processor until the dates are finely chopped to small bites.

Add the rest of ingredients. Pulse and toss a few times until smooth (no fruit chunks). You might need to scrape the bowl a few times with a food scraper until the paste is creamy smooth.

Taste and see if you’d like to add more salt, coconut aminos, gochugaru, or vinegar. The flavor profile should be sweet, savory, and slightly spicy. Store in glass jar container in the fridge until ready to use. Best finish in 3 weeks for best flavor.

Out a piece of plastic wrap over chicken thighs and pound with a meat hammer to stretch and tenderize; set aside.

In a large mixing bowl, mix together gochujang, gochugaru (if using), soy sauce, brown sugar, garlic, ginger, rice wine, sesame oil, and pepper. Add the chicken thighs and toss together to coat evenly. Let the chicken rest on a room temperature for 15 minutes.

Preheat the oven to broil; place an oven shelving to 5-6 inch below the heat source. Grease a cooling rack with a spray oil and place on top of a large baking pan (half sheet size) lined with foil.

Spread the chicken pieces on the rack without overlapping. Broil 4-5 minute or until the surface is slightly charred. Turn the chicken to the other side and broil for another 4-5 minutes or until the chicken is fully cooked. Keep an eye on the chicken so that you don&#039;t char them too much.

Cut the chicken thighs into a bite size chunks and place in a serving dish. Garnish with thinly sliced perilla leaves and toasted sesame seeds. Serve hot with rice.

Chicken Bulgogi (Korean Chicken BBQ)

In a large mixing bowl, mix together gochujang, gochugaru (if using), soy sauce, brown sugar, garlic, ginger, corn syrup, rice wine, sesame oil, and pepper. Add the chicken thighs and toss together to coat evenly. Let the chicken rest on a room temperature for 15 minutes.

Broiled red snapper is a popular Korean fish recipe. It&#39;s topped with Korean chili sauce made with gochujang. So delicious!

Broiled Red Snapper with Korean Chili Sauce

red snapper (well cleaned)

Korean coarse sea salt

tsp sugar

garlic (finely minced)

tsp ginger

Korean plum extract (maeshil cheong) (or 1 teaspoon lemon juice)

tsp sesame oil

green onion (finely chopped)

Cut off the fins and tail from the snapper, and give 2-3 deep slits on each side. Sprinkle with coarse sea salt and set aside. (You can keep the fish in the fridge if not cooking within 30 minutes)

Preheat the oven to broiler setting.

Line a broiler-safe pan with foil and place a rack on top. Spray the rack with oil. Place the red snapper on top and pour 1/4-1/2 cup of water in the pan. Place the pan in the oven so that the fish will sit about 4" below the heat source. Broil 8-10 minutes on one side. Flip the fish to the other side and continue to broil until it gets deep brown and the meat looks flaky, about 7-8 more minutes.

Meanwhile, in a small mixing bowl combine chili paste, soy sauce, sugar, garlic, ginger, plum extract (or lemon juice), sesame oil, sesame seeds, and green onion. Mix well.

When fish is done, spread the chili mixture sauce over the fish and serve warm with rice.

Make this delicious steak bibimbap with spinach under 30 minutes. Tender steak is seared then mixed with rice and spinach. It&#039;s a great one skillet dinner (or one pot meal).

Beef Steak Bibimbap with Spinach

Heat 1 tablespoon of oil in a small skillet and saute the garlic until fragrant.

Add the rest of the sauce ingredients and mix well. Bring to a full boil over medium heat and let it thicken a little, about 1 minute.

Remove from the heat and set aside. The sauce will thicken more as it cools.

To make the chili paste sauce

Season the steak with salt and pepper. Grill the steak on a cast iron skillet over medium high heat until to your desired doneness. Remove from the skillet and set aside to rest.

Add the remaining 1/2 tablespoon of oil in a skillet, saute the spinach with a little bit of salt until wilted. Remove the spinach from skillet and set aside. Rest the steak for 5-10 minutes. Cut into thin strips.

Bring the skillet over medium heat again. Spread rice evenly in a skillet, and top with beef slices and the spinach. Drizzle the sauce, about 3-4 tablespoon.

Let the whole thing sizzle for 1 minute. Start tossing together to coat everything with the sauce and cook for another 1 minute. Taste and add more sauce if needed.

When everything is all mixed, remove the skillet from the heat. Drizzle a little more sesame oil and sesame seeds as you desire. Serve immediately.

To make the steak bibimbap

Pork bulgogi is a Korean spicy pork stir fried with a spicy gochujang sauce. This Korean pork recipe is easy and quick to prepare in just 20 minutes.

Spicy Pork Bulgogi (Jeyuk Bokkeum)

Asian leek (or 4 green onion, chopped)

Korean chili flakes (gochugaru)

sweet rice wine (mirim)

ginger paste

To make the seasoning paste for pork, combine chili paste, chili flakes, soy sauce, rice wine, sugar, garlic, ginger puree, sesame oil, sesame seeds, and black pepper in a small mixing bowl; mix well.

In a large mixing bowl, separate each slice of pork and put them in a bowl. Add the seasoning paste and mix well (Wearing a disposable food glove is helpful). You can make this step ahead of time and let it marinate in the refrigerator up to 24 hrs. Or you can go straight to stir-fry without marinating at all.

Heat 2 tablespoon of oil in a deep skillet or wok over high heat. Add 2 teaspoon of sugar and swirl the pan around. Let the sugar turn brown and caramelized.

Quickly add the chopped Asian leek (or green onion) and stir-fry for 30 seconds to infuse the oil. Add pork and onion. Stir-fry pork and onion until they are fully cooked and tender, about 3-4 minutes. Serve immediately with rice and lettuce (if desired).

Note: If your skillet is not big enough to stir-fry the entire batch of pork, divide the pork in half or in portion you desire. If so, you will need to reduce the amount of oil, sugar, and leek to caramelize per batch accordingly.

Is your kimchi getting sour? Turn it into a satisfying kimchi fried rice with crisp bacon pieces. A hint of gochujang and the sour kimchi juice make this Korean classic even more delicious.

Bacon Kimchi Fried Rice (Kimchi Bokkeumbap)

sour cabbage kimchi (chopped)

onion (chopped)

4-6 bacon strips (chopped)

kimchi juice

salt and pepper (to taste)

seaweed

eggs (fried to sunny side up)

In a heavy skillet, cook bacon pieces until crisp. Transfer the bacon to a platter, and set aside.

Using a paper towel, wipe off the bacon grease remained in the skillet but leave 1 tablespoonful.

Saute onion in the reserved bacon grease until soft and tender over medium heat.

Add the kimchi and continue to saute until kimchi is soft, about 5 minutes over medium-low heat, then add Korean chili paste and kimchi juice to the skillet and mix well to incorporate with kimchi and onion.

Add the rice to the mixture and toss well. Try to separate the rice grains by using the vertical edge of spatula so that you don't smash the rice much.

Add sesame oil and sesame seeds, and toss well. Season with salt and pepper as you wish.

Raise the heat to medium heat and let the fried rice to sear for 2-3 minutes. This will help the rice on the bottom of skillet to be crisp. Adjust the heat, if needed, so that you don't burn it too much. Check the bottom of the fried rice to see it created desired crispness on the rice.

Remove the skillet from the heat and sprinkle with the reserved bacon pieces and crumbled roasted seaweed. To serve, add sunny side up fried eggs on top. Enjoy while hot!

Gochujang Tofu Rice Bowl

onions

oz (520 grams) firm tofu

potato starch (or cornstarch)

tbsp neutral-tasting oil, divided

tbsp toasted sesame oil

soft-boiled eggs (or fried eggs), optional, to serve

sesame seeds, to garnish

Korean chili pepper flakes (gochugaru)

oyster sauce

chicken bouillon powder

tbsp corn syrup

mirin

black pepper,

(120 milliliters) water

cornstarch

tsp minced garlic

salt,

Thinly slice the green onions, separating the whites and greens. Cut the broccoli into bite-sized pieces. Thinly slice the chili pepper (if using).

Finely chop the garlic. Grate a small knob of ginger. About 1/2 tsp would be perfect!

Prep Vegetables

To a small container, add Korean chili paste, Korean chili pepper flakes, soy sauce, oyster sauce, chicken bouillon powder, sugar, corn syrup, mirin, and black pepper to taste. To that, add 1/2 cup (120ml) of water along with 1/2 tablespoon of cornstarch. Mix together until it's well combined.

Make Sauce

Drain the water from the tofu. Give it a quick rinse under cold water. Cut the tofu into cubes and pat them dry.

Put 1/2 cup of potato starch into a tray or a ziplock bag. Add in the tofu cubes and give it a little toss, making sure they’re evenly coated. Set aside.

Prep Tofu

In a pot, place a steamer basket with some water (about 3 cups). Bring it to a boil. Once it comes to a boil, add in the broccoli. Cover and steam for 3-4 minutes or until they‘ve reached your desired doneness. Shock them in cold water and drain.

To a large mixing bowl, add the drained broccoli along with the garlic, soy sauce, sesame oil, sesame seeds, and salt to taste. Gently toss together. Set aside.

In a large pan, heat the oil (3 tbsp) over medium heat. Once it gets nice and hot, place your tofu one by one and cook for 6-7 minutes or until light golden brown and crispy. Remove from the pan and set aside.

Place the same pan over medium-high heat. Add 1 tablespoon of oil. Once it’s heated, add the garlic, white parts of the green onions, and ginger. Saute for 1 minute or until fragrant.

Pour in the sauce, and boil for 2-3 minutes. Once the sauce gets thickened, add the fried tofu back into the pan. Give it a few stirs just until everything is nicely coated. Turn the heat off. Drizzle in the sesame oil (1/2 tbsp). Gently toss together.

Cook Broccoli and Tofu

Divide the rice into serving bowls. Add a generous amount of tofu and broccoli. Optionally, top with a soft-boiled egg (or fried egg).

Garnish with green onion, chili pepper (if using), and sesame seeds. Enjoy~!

Assemble

Gochujang Pasta with Prawns

tbsp kosher salt per 1L water for cooking pasta

Cook the pasta al dente or 1 minute shy of cooking instructions.

Reserve ½ cup of pasta water and drain.

While the pasta is cooking, in a large pan, sauté the garlic on medium heat with olive oil.

Once the garlic has slightly softened, add the gochujang paste.

Lower the heat and cook the gochujang out to mellow some of the spice. The oil should turn into a beautiful red hue.

Add the cooked pasta and the pasta water. Simmer until the sauce has coagulated and starts sticking onto the pasta.

Add the shrimp and stir to combine.

Turn the heat to low, add parmesan and finish the pasta with butter. This helps the sauce stay glossy.

Optionally, finish with chives / Italian parsley / a little more olive oil. Plate. Garnish with more grated parmesan. Enjoy!!!
