Drizzle olive oil into a medium skillet set over medium heat. Add chopped onion and cook until translucent, about 3 minutes. Add the ground beef and cook until browned throughout, about 5 more minutes. Discard any excess drippings.

Stir in the Stone House Seasoning, 1 teaspoon of the fresh oregano, red pepper flakes (if using), tomato sauce, and the broken noodle pieces. Bring to a boil and then reduce the heat to medium-low. Simmer, cover and cook until the noodles are tender, about 20 minutes.&nbsp;

Remove from the heat and top with Parmesan cheese, ricotta and remaining fresh oregano

How often do you eat pasta during the week?

Very tasty, however the amount of cheese stuffing and sauce is a little less than I'd like.  I planned to do a double recipe and had only enough sauce and cheese filling to do a large baking pan and four extra rolls.  I had leftover noodles, about 5. (However I like alot of stuffing and cheese) Also the cheese on the topping melted and fell to the sides.  That's prob my fault I left a tiny amount of room to easily dish single rolls.  

I really like how easy it is to serve and how easy it is to divide up for lunches and stuff.  My eight year old who is a picky eater loved it.  Will most likely make it again.  Was fun and easy.

Your family will love this easy Mexican casserole. Taco Lasagna has all of your favorite taco ingredients and is ready in under an hour.

Taco Lasagna

poblano pepper ((seeded and diced))

taco seasoning

black beans

Mexican diced tomatoes (undrained (2 cans, 14.5 ounces each) (Rotel Mexican))

flour tortillas ((8 inches))

refried beans ((1 can))

Mexican cheese blend

Preheat the oven to 350 degrees Fahrenheit. Spray a 9x13 baking pan with cooking spray.

In a large skillet, cook the beef, pepper and onion over medium heat until meat is no longer pink. Drain off any fat.

Add water and taco seasoning packets. Bring to a boil. Reduce heat and then simmer, uncovered, for 2 minutes.

Stir in black beans and tomatoes (with juice). Simmer, uncovered, for 10 minutes.

Place 2 tortillas in the bottom of a greased 13x9-in. baking dish. Break a third tortilla and piece it together in any holes to make as much of a complete layer of tortillas as possible.

Spread with half of the refried beans and half of the beef mixture.

Sprinkle with 1 cup cheese.

Repeat layers (3 tortillas, remaining beans, remaining beef, 1 cup of cheese).

Top with remaining tortillas and 2 cups cheese.

Cover with foil and bake at 350° for 25-30 minutes or until heated through and cheese is melted.

Serve with sour cream and fresh pico de gallo.

I have one child (he’ll remain nameless 🙂 ) who strongly dislikes homemade lasagna. In fact, he doesn’t care for any Italian casseroles. Some days I’m not sure how he’s my son.
It’s not lasagna in general, because he devours this taco lasagna with flour tortillas. Mexican dinners generally bring smiles around the table, and this cheesy taco lasagna recipe with Rotel tomatoes is no different!
You can bring smiles to your family by making this casserole. Dinner is served in about an hour!

Best Classic Lasagna Recipe

lb. sweet Italian sausage

garlic

(15 tomato sauce

(15 oz.) can crushed tomatoes

sugar

salt (-divided)

Italian seasoning (-divided)

basil leaves (-divided)

flat-leaf parsley (-divided)

mozzarella cheese (-divided)

(1 3/4 cups) whole milk Ricotta cheese

parmesan cheese (-divided)

Preheat oven to 350 degrees F.

Make the meat sauce.  Add beef and sausage to a large skillet over medium-high heat, breaking it apart with a wooden spoon.  Add the onion and garlic.  Cook until meat is browned, about 6-8 minutes.  Drain the fat from the meat.  Return the meat to the skillet.

Add the tomato sauce, crushed tomatoes, tomato paste, water, sugar, 2 teaspoons salt, 2 teaspoons Italian seasoning, 1 teaspoon basil, and the black pepper.  Stir until well combined.  Cover and reduce the heat to low.  Simmer the sauce for 30 minutes. Stir in 2 tablespoons of the minced parsley.

As the sauce cooks, make the ricotta mixture.  In a large bowl, add 1 cup mozzarella, the ricotta, 1/4 cup parmesan, 2 tablespoons of the parsley, the egg, 1 teaspoon salt, 1 teaspoon Italian seasoning, and 1/2 teaspoon basil.  Stir until well incorporated.

Cook the pasta al dente, according to it’s package directions.

Assemble the lasagna.  In a 13x9 inch baking dish, add a very thin layer of meat sauce (about 1/4 cup).  Layer 3 lasagna noodles, 1/3 of the ricotta mixture, and 1 1/2 (level) cups of meat sauce.  Repeat the layers twice.

Add a final layer of the remaining noodles, meat sauce, 1 cup mozzarella, and 1/4 cup parmesan.

Cover with foil that has been sprayed with nonstick cooking spray.  Bake for 45 minutes.  Remove the foil.  Bake 15 more minutes.

Let the lasagna cool for 15-20 minutes before cutting.

Melt the butter in a large skillet over medium heat. Add the garlic and thyme; saute for 2-3 minutes. Add the spinach; saute until just barely wilted, about 2 minutes. Remove from heat.

In a large bowl, combine the ricotta, egg, salt, nutmeg, and a squeeze of lemon juice. Add the spinach and stir to combine. Transfer some of the mixture to a food processor and pulse a few times to break up some of the spinach pieces (totally optional, but makes for a really nice texture).

Preheat the oven to 375 degrees. Spread a little bit of tomato sauce in the bottom of a 9&#215;13 pan. Layer with 3 lasagna noodles, 1/3 of the spinach mixture, 1/4 of the tomato sauce, and 1/4 of the cheese. Repeat and pour 1/2 cup water over the two layers. Repeat once more, ending with noodles, sauce, and cheese. Pour 1/2 cup water over the whole thing again and cover tightly with oiled foil.

Bake for 30-40 minutes; when the liquid is bubbling and the noodles have softened, remove the foil and bake uncovered for 10 more minutes. Let stand for 10-15 minutes before serving so that the lasagna noodles can soak up all the extra moisture.

We aren't big TV watchers and had the same dilemma!! We finally got one, but only watch a few Netflix shows. We love White Color! This lasagna is gorgeous Lindsay - love that you've made is skinny and packed it with spinach!

I own ALL 7 seasons of The West Wing. I used to watch it over and over and over !! When you are finished with that make SURE you get " The Newsroom' . IT was on HBO. Only 3 seasons but it was written and produced by the genius Aaron Sorkin who also wrote The West Wing. Watching that AND having this delicious lasagna ??? Priceless !

I am not a huge TV watcher at all, but the hubby is! I do not think he would know what to do without it - so sad. 

Just give me three hours a week to watch The Walking Dead, The Following, and The Good Wife. That's it.

This 3 cheese EASY Lasagna recipe is beefy, saucy and supremely flavorful. This homemade lasagna is better than any restaurant version and it feeds a crowd!

beef ((15-20% fat content))

onion (finely diced)

red wine ((any kind), or beef broth)

oz Marinara Sauce ((3 cups))

tsp sea salt

tsp black pepper (ground)

Tbsp parsley (finely chopped)

lasagna noodles (cooked al dente)

oz low-fat cottage cheese

oz reduced fat ricotta cheese

Tbsp parsley (finely chopped, plus more to garnish)

mozzarella cheese (shredded, divided)

Place a deep pan or dutch oven over medium/high heat and add 1 Tbsp olive oil, 1 lb ground beef and diced onion. Saute, breaking up the meat, for 5 minutes or until beef is no longer pink. Add pressed garlic and sauté another minute until fragrant.&nbsp;

Add 1/4 cup wine and stir for 2 minutes or until wine is nearly evaporated. Add 3 cups marinara, 1/2 tsp salt, 1/4 tsp pepper, 1/4 tsp thyme, 1/2 tsp sugar and 2 Tbsp parsley. Bring to a simmer then cover and cook 5 minutes.&nbsp;

How to Make Meat Sauce:

In a large mixing bowl, combine 16 oz Cottage Cheese, 15 oz Ricotta, 1 cup mozzarella, 1 egg and 2 Tbsp parsley. Mix well.

How to Make Cheese Sauce:

Preheat oven to 375˚F.&nbsp;Bring a large pot of water to a boil. Add salt and 9 lasagna noodles. Cook until al dente according to package instructions.

Spread 1/2 cup meat sauce in the bottom of a deep 9x13 casserole dish. Add 3 noodles, spread on 1/3 of the meat sauce and sprinkle with 1 cup mozarella cheese. Spoon on and spread the top with 1/2 of your cheese sauce.&nbsp;

Repeat until you have 3 layers of noodles: Add 3 noodles, 1/3 meat sauce, 1 cup mozarella cheese, 1/2 cheese sauceAdd 3 noodles, remaining 1/3 meat sauce, remaining 1 cup mozarella.&nbsp;

Poke 9-12 toothpicks over the surface of your lasagna (to keep the foil from sticking to the cheese). Cover with foil and bake at 375˚F for 45 minutes.&nbsp;

Remove foil and broil for 3 to 5 minutes, or until cheese turns golden. Let lasagna rest 30 min before slicing.&nbsp;

Added the lemon zest to the ricotta mixture like another lasagne recipe I’ve used and it’s what makes these taste so good.  If you are skeptical, give it a try.  You’ll be pleasantly surprised.  Mine took longer to cook almost double the time.

I doubled wrapped the noodles meaning two side by side, overlapping by about a half an inch. They are harder to work with as single. The rolling went quickly.

I added turkey meat. Spread lasagna with ricotta cheese and only a tbs of meat already mixed with sauce top with a sprinkle of cheese.

I love this recipe! I find the only bad thing is that its very time consumeing and a bit messy. Last thing I have too say is it will take a lot more than 10 oz of baby spinich.

Super simple and quick! I found it took slightly longer than 20 mins, but that could just be my oven! Very tasty and fun.

Second time making these and we love them! Yes, time consuming and a little messy but well worth it at the end of it all. ; ) Recipe does need at least 2 cups of marinara though!

Made it it's in oven  now. I added meat to mine as well you cant have lasagna without it. Very time consuming yes and did use more marina as well. Hopefully it turns out amazing! Had fun making it, a little messy but not too bad.

Try just placing a large tablespoon of mix on one end of the noodle and rolling that way

Preheat oven to 350°F. Ladle about 1 cup sauce on the bottom of a 9 x 12 baking dish.

Cook noodles according to package directions, then drain.

Combine spinach, ricotta, Parmesan, egg, 1/2 teaspoon salt and black pepper in a medium bowl and mix.

Place a piece of wax paper on the counter and lay out lasagna noodles. Make sure noodles are dry. Take 1/3 cup of ricotta mixture and spread evenly over noodle. Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles.

Ladle remaining sauce over the noodles and top each one with 1 tbsp mozzarella cheese. Put foil over baking dish and bake for 40 minutes, or until cheese melts. Makes 9 rolls.

To serve, ladle a little sauce on the plate and top with lasagna roll.
