Keto Lemon Cheesecake Bars

almond flour

Swerve Sweetener

tsp salt

butter (melted)

oz cream cheese (softened)

powdered Swerve Sweetener ((more if you like it sweeter))

lemon

lemon juice

tbsp heavy whipping cream

eggs

Preheat the oven to 350F. In a large bowl, whisk together almond flour, sweetener, and salt. Stir in the melted butter until well combined.

Press evenly into the bottom of an 8-inch square pan and bake 10 minutes - it won&#039;t be cooked through. Set aside and let cool.

Reduce the oven temperature to 275F.

Crust:

Beat the cream cheese in a large bowl until smooth. Beat in the sweetener, and then beat in the lemon zest, lemon juice, and cream until no lumps remain.

Beat in the eggs until just combined - do not overbeat as this can cause cracking.

Spread the filling over cooled crust and bake 35 to 45 minutes, or until filling is just set and the center barely jiggles when shaken.

Let cool 30 minutes, then chill for at least 2 hours.

Garnish with powdered sweetener and additional lemon zest, if desired.

No Bake Lemon Cheesecake Recipe

sleeve of honey graham crackers (9 whole crackers

brown sugar

½ cup 1 sticks salted butter, melted

lemon gelatin

cream cheese (softened)

sour cream

confectioner’s sugar

whipped topping (softened (such as cool whip))

lemon juice (from 2 large lemons)

vanilla extract

Grind

Grind up the graham crackers in your food processor if you don’t have crumbs. Add the melted butter and brown sugar.

Press

Press the crumb mixture into a 9x13 baking pan. (don’t pack upward alongside the edges of the pan). Chill in the refrigerator or freezer until your other ingredients are prepped.

Boil

Boil 1 cup of water and pour over the lemon gelatin in a medium-size bowl. Stir to dissolve.

Cool

Cool the gelatin in the refrigerator for about 20 minutes, until it’s thick but not set.

Beat

In the meantime, using a mixer, beat the softened cream cheese and sour cream until completely smooth.

Add in the confectioner’s sugar and zest mixture, lemon juice and vanilla extract on medium speed.

Stir

Fold

Fold the cooled lemon gelatin into the cream cheese mixture. Taste mixture and add more lemon juice or lemon zest depending on preference.

Pour

Pour the cream cheese mixture over the graham cracker crust and smooth to the edges of the pan.

Chill

Cut into bars and place a dollop of whipped topping on each piece and/or decorate with lemon slices, option.

Cream Cheese Lemon Bars

Preheat oven to 350 degrees and line a 9x13 inch pan with foil or parchment with plenty of overhang around the edges to lift the bars out of the pan before cutting.

Prepare the crust by combining flour, sugar, salt, and butter cubes in a food processor or blender. Cover and pulse until fine crumbs form. (You can also do this with a pastry cutter, fork, or with your fingers in a large bowl.)

Press crust into prepared pan and bake for 10 minutes while you prepare the filling.

Prepare the filling by combining cream cheese and sugar in a large bowl. Cream together until smooth. Mix in flour, powdered sugar, lemon juice, eggs, and vanilla until completely incorporated.

Pour filling over crust and return to oven for 30 minutes.

Allow to cool for about 20 minutes, then cover and transfer chill in the fridge 4 hours or overnight. Lift the foil edges to remove the bars from the pan, slice into squares, sprinkle with additional powdered sugar, and serve.

Nonstick cooking spray

Preheat oven to 325 degrees. Spray 9 x 13 inch baking dish with nonstick cooking spray. In small bowl combine graham cracker crumbs, 6 tablespoons melted butter and 2 tablespoons sugar. Press evenly into baking dish.

Melt 4 tablespoons butter and allow to cool for 5 minutes. In medium microwavable bowl combine 1/2 cup sugar and egg yolks until smooth. Whisk in lemon juice, lemon zest and melted butter. Microwave in one minute intervals, stirring after each minute until the mixture is thick enough to coat the back of a spoon. Curd will thicken more as it cools.

In stand mixer with paddle attachment mix 1/2 cup sugar and cream cheese until smooth. Turn mixer to low; add lemon juice and 1 egg at a time mixing just until incorporated. Pour cream cheese mixture over graham cracker crust.

Using lemon curd make three lines the length of the baking dish going all the way to the edge. Using a shish kabeb stick or chop sticks make small S&#8217;s through each line. Don&#8217;t go too deep as you do not want to disturb the crust. Bake 35-40 minutes or until set in the center.

Cool completely before slicing.  For best results refrigerate for several hours up to overnight.

These are the most delicious and creamy lemon cheesecake bars. They have a buttery shortbread crust with a cheesecake and lemon layer and are dusted with powdered sugar. They are the perfect dessert!

Lemon Cheesecake Bars

Preheat oven to 325 degrees. In a food processor or blender, combine cold butter, flour, brown sugar and salt. Pulse until it is incorporated and the pieces are tiny and course.

Press into the bottom of a 9x13 inch pan and bake for 12 minutes. Remove from oven.

To make the crust:

Combine cream cheese, and sugar. Beat until smooth and creamy. Add the egg, milk, lemon juice, and vanilla. Pour cheesecake over warm crust and bake for 15 minutes. Remove and reduce oven to 300 degrees.

To make the cheesecake layer:

Whisk together eggs, sugar, lemon juice, lemon zest and flour until combined. Pour CAREFULLY over the warm cheesecake layer. If you pour too fast the cheesecake layer will lift. If it does lift a little, (mine did) it is ok! It will still taste amazing.

Bake for an additional 25-30 minutes until lemon layer is set. Remove from the oven and let cool. You can refrigerate for 3 hours and serve cold if desired. I think that way is best. Sprinkle powdered sugar on top and enjoy!

Bake bars 23 to 28 minutes or until set. Cool completely, about 1 hour. Spread with reserved cream cheese mixture. Refrigerate about 3 hours or until firm. For bars, cut into 8 rows by 6 rows. Store covered in refrigerator.
