These Lemon Overnight Oats taste like a creamy lemon cheesecake without the dairy!

Old-fashioned Rolled Oats (Not quick oats or steel-cut oats)

Chia Seeds

Unsweetened Coconut Milk (or non-dairy milk you like)

Lemon Juice

Yogurt of Choice (we used coconut yogurt)

Lemon Zest

Sweetener (maple syrup

Vanilla Extract

Blueberries (fresh

White Chocolate Protein Powder (or vanilla

Desiccated Coconut

Vegan Almond Shortbread Cookies (crumbled)

In a medium airtight container or glass mason jar, add all the ingredients in the order you like: oats, chia seeds, lemon zest, lemon juice, coconut milk, coconut yogurt, vanilla extract, sweetener, and eventually blueberries if you like.

Stir well to combine, it should be runny not overly thick.

Close the lid of the container, and place it in the fridge overnight, or for at least 3 hours. I recommend stirring after 1 hour to prevent the seeds from sinking to the bottom of the container

Stir all the topping ingredients together. Add 1-2 tablespoons of coconut milk or more yogurt if too thick to your liking. Spread on top of the overnight oats the day before or just before serving.

Serve with extra lemon zest, desiccated coconut, blueberries, and crumbled shortbread cookies.

Topping  - The next day, or before refrigerating

Store for up to 4 days in the fridge in an airtight container or in 8-ounce glass mason jars. Freeze in airtight jars and thaw in the fridge the day before.

soy milk (or any unsweetened plant-based milk)

lemon juice

Tablespoon lemon zest (zest of 1 lemon)

maple syrup

vanilla bean paste (or vanilla extract)

vegan lemon curd (more for topping as desired)

Please note: The homemade vegan lemon curd is best made the day before making overnight oats.

Add the oats and chia seeds to a mixing bowl and whisk together. Then, add in the soy milk, lemon juice, lemon zest, maple syrup, and vanilla and mix into a thick batter.

Fill two jars up 1/3 of the way with the lemon overnight oats. Then, add 1-2 Tablespoons of lemon curd on top of the oats. Fill the jars with the remaining lemon overnight oat batter until full.

Seal the jars and store in the fridge overnight. The next day, remove from the jars from the fridge, add toppings, and enjoy!

Mango Overnight Oats are a tropical twist on the classic overnight oats recipe. Infused with fresh mango, coconut, lime and nutritious chia seeds. Vegan, Gluten-Free, Refined Sugar-Free.

Vibrant Mango Overnight Oats Recipe with Chia Seeds

Topping suggestions: nut butter (hemp hearts, almonds, etc.)

Make the Mango “Milk”: Add the mango to a high-speed blender along with the milk, water, lime juice, maple syrup, vanilla, and salt. Blend on high for 45 to 60 seconds, until everything is smooth; the mixture may look thick, but this is ok!

Mix: Add the oats and chia seeds to a large bowl and mix well. Pour the mango milk into the bowl, then add the chopped mango and stir until everything is combined. Let sit for at least 5 minutes, to allow the oats and chia seeds to absorb some of the liquid. Then, mix again to incorporate the extra liquid sitting on top.

Store &amp; Serve: Transfer the oatmeal to jars or other containers, then store in the fridge for at least 4 hours, preferably overnight. Top as desired and enjoy cold or warm; leftovers will keep in the fridge for up to 5 days.

Tasted so amazing! I never understood why people loved overnight oats until now lol. I used soy milk instead of coconut milk and it came out very rich and creamy. Will definitely make lots! Even the mango milk I would make to just eat like icecream, it was so amazing.

Made this today, can't wait to try it! I had a question, I notice in the notes you mentioned the type of milk - I only see the can of coconut milk in the recipe, was I missing an ingredient, should I have added another type of milk as well?  Thanks!
