<p>Adjust the amount of oil, butter, and garlic according to the amount of mushrooms you have. You really can't go wrong with the quantities, however, overcompensate for oil and butter as the mushrooms absorb them fast!</p>

Sautéed Lion’s Mane Mushrooms with Garlic

Heat a cast iron skillet over medium heat, don&#8217;t add any oil yet! Dry sauté the lion&#8217;s mane mushroom slices until the water releases and edges start to brown. Remove from the skillet and transfer to plate.

Add a healthy pad of butter (or olive oil for a vegan alternative) and the garlic. When the garlic is fragrant, add the lion&#8217;s mane mushrooms back into the skillet. 

Sauté the mushrooms on each side until golden brown, about 5 minutes. 

A meatless "crab cake" recipe made with Lion's mane mushrooms, which have a nearly identical taste and texture to crab or lobster meat. You won't believe you're not eating seafood!&nbsp;

Lion's mane mushroom crab cakes (meat-free)

garlic

red sweet peppers

whole wheat bread crumbs

duck eggs chicken eggs, beaten

Place diced lion's mane, onions, and sweet peppers into lightly oiled skillet and sweat for about 15 minutes on low heat (3 on our stove), stirring regularly. The aim is to remove almost all the water from the ingredients, otherwise your crab cakes won't hold together. After 15 minutes, add garlic and sweat for another 5 minutes until no water remains in pan and ingredients are lightly browned. *Our lion's mane was very wet due to recent rains, so if your lion's mane is dry, sweating will be faster (or you may even have to add a little water to your pan when starting so they don't burn). Remove from stove and let cool in bowl for 15-20 minutes.&nbsp;

Add all other ingredients into bowl and stir together. Then mush ingredients together by hand for a few minutes until thoroughly consolidated.&nbsp;

Form and cook a single test cake before making an entire batch. You want to make sure the moisture levels are just right and that the cakes will hold together. Tip 1: Make smaller ~3" diameter cakes to help them stick together and flip easier (larger cakes are more difficult). Tip 2: Let cakes gel together for ~5 minutes before cooking. Cook test cake in buttered skillet on low heat (setting ~3). If the test cake comes apart in the pan, you'll want to add more beaten egg and bread crumbs then try again. Then cook the whole batch!&nbsp; &nbsp; &nbsp;

Serve with Meyer lemon slices and our homemade garlic aioli sauce on top to make them even better! This recipe makes enough cakes for ~6 appetizer-sized servings or 3 large dinner servings.&nbsp;

Shred the mushroom into pieces (the shreds shrink when cooked, so keep a little larger than the size you want). Set aside.

Heat a skillet over medium heat. Add onions and sauté over medium heat, adding a splash vegetable broth or water if things start to stick. Cook until browned, about 3-5 minutes.

Add shredded mushrooms. Do NOT add any liquid to the pan as mushrooms will release liquid as they cook. Sauté about 4 minutes until mushrooms are cooked and edges are browned.

Add 2 tbsp. taco seasoning and cook another minute to allow spices to bloom. Season to taste with salt, soy sauce, or salt substitute as desired. Serve on tortillas with desired toppings.

bacon

celery, diced

large white or yellow onion, diced (1 1/4 cup)

leek, diced (1 1/4 cup)

chopped fresh lions mane mushrooms

russet potatoes, chopped (4 cups)

white wine (to deglaze pan)

chicken stock

whole organic grass milk

organic, whole wheat stone ground flour

grated organic cheddar

tbsp brewers yeast ((just add a bit more cheese

tsp thyme, ideally fresh but dried is fine too

In soup pan, cook bacon on medium heat until crisp, then remove and set aside. Saute lion&#039;s mane mushroom chunks, celery, onion, and leak in the bacon drippings until onions become translucent and lightly browned. Add diced garlic and butter, then cook for another 1-2 minutes until garlic is lightly bronzed. Deglaze pan with white wine.

Next, add the chopped potatoes, chicken stock, pepper, salt, and thyme. Bring to a quick boil, then reduce heat to medium-low (3 on our stove). Continue to simmer uncovered until potatoes are soft enough to easily push a fork through (or about 15-20 minutes). Immersion blend at this point if you&#039;d like a smooth chowder — or leave as-is if you prefer a chunky chowder

In a separate bowl, whisk flour into milk until smooth. Then slowly pour milk-flower mixture into soup stirring as you go to make sure flour doesn&#039;t form chunks. Bring chowder back to a boil, stirring constantly for 1-2 minutes as the flour incorporates and thickens the chowder. Turn to low heat. Add cheese and brewers yeast, stir until incorporated. Carefully (don&#039;t burn your tongue!) do a taste test to determine if more salt needed.

Ladle into bowls and garnish with cheddar cheese, diced green onions, and crumbled bacon (used to season pan).

10-Minute Lion's Mane Mushroom Recipe

Cut off the bottoms of the mushrooms, then slice them into 1/4-1/2 inch pieces.

In a dry, medium skillet over medium-high heat, cook the mushrooms for a couple of minutes on each side. The excess water will evaporate and mushrooms will reduce in size a bit.

Add the butter and cook until browned, about 2 minutes. Flip and cook the mushrooms for another 2 minutes or until golden brown on each side.

Add soy sauce and salt, enjoy!
