Bring a large pot of water to a boil; add 2 tablespoons of salt. Place the potatoes in the pot and boil for 15-20 minutes or until potatoes are tender.

Drain the potatoes. Run the potatoes through the ricer and transfer them back to the pot. Alternatively you can skip the ricing step and simply mash the potatoes with a potato masher or mixer.&nbsp;

Stir in the milk, butter, sour cream and then add salt and pepper to taste. Stir in 1 cup of the cheddar cheese.

Preheat the oven to 350 degrees F. Place the potatoes into a 9 inch square pan or 2 quart casserole dish. coated with cooking spray. Top with remaining 2/3 cup of cheddar cheese.&nbsp;

Cover the pan with foil and place into the oven. Bake for 20 minutes. Remove the foil and add the bacon; bake, uncovered for an additional 20 minutes or until cheese is bubbly and potatoes are heated through.&nbsp;

Sprinkle the chives and parsley over the top and serve immediately.

Peel and cube potatoes.

Place in pot and add water until just covering potatoes. Bring to boil. Once boiling, reduce to a simmer and cook for 18-20 minutes.

Drain water and mash potatoes using a masher or spoon. Add sour cream, butter, cream cheese and milk until well combined. Add salt and pepper. Fold in ½ the bacon, 1 cup cheddar cheese, and parmesan cheese. Mix well.

Spoon into lightly greased 9x13 pan. Top with remaining cheddar cheese and the rest of the bacon.

Bake at 350 for 20-25 minutes. Garnish with green onions and ENJOY!

This Pierogi Casserole is a comforting casserole recipe with layers of lasagna noodles and cheesy potato pierogi filling. It's an easy and delicious weeknight dinner for the whole family!

Preheat oven to 350°F. Coat a 9&#215;13- inch baking dish with nonstick spray. Set aside.

Heat butter in a skillet over medium heat. Add the diced onions into the melted butter and season with 1/2 teaspoon kosher salt. Cook onions until they are soft and caramelized, stirring frequently. Remove from the heat. Set aside.

Bring a large pot of water to a boil and cook the lasagna noodles according to package directions. Drain.

While the noodles are cooking combine the cottage cheese, mashed potatoes, egg, pepper, onion powder, 1 cup of grated cheese, remaining 1 teaspoon kosher salt, and HALF of the onions. Stir to combine.

Place 3 noodles into the bottom of the prepared dish. Top with half of the cottage cheese mixture and spread to cover the noodles. Lay 3 more noodles on top of the filling and top that with the remaining filling mixture. Lay the last 3 noodles on top, sprinkle with the reserved onions and remaining 1/2 cup of cheese.

Cover pan with foil and bake for 30 minutes. Remove the foil and broil for 3 minutes.

Allow the casserole to cool for 15-20 minutes. Sprinkle with parsley and serve.

Preheat the oven to 400 degrees Fahrenheit.

If using frozen chicken tenders, let them sit at room temp for about 5 minutes if you prefer to slice them first, this allows them to soften.

Spread the potatoes on the bottom of a 9 x 13 casserole dish.

Note: If your mashed potatoes are cold, warm them first.

Top with corn and cheese.

Carefully slice the chicken strips into pieces of desired size and top the casserole dish with them.

Bake uncovered for 20 minutes if using frozen chicken tenders and 15 minutes for homemade.

Prepare the gravy on the stove top while the casserole finishes baking.

Drizzle desired amount of gravy over the casserole dish and serve!

Place bacon in a cold non-stick pan over medium heat (no oil). As the pan heats up the bacon fat will melt. Once you see some melted bacon fat, turn the heat up to medium high and stir for 3 minute or until golden.

Drain on paper towels.

Cook bacon:

Potatoes - Peel then cut into 3cm /1&quot; chunks.

Boil - Place in a large pot and cover with water so it’s 10cm / 4” above the potatoes. Add 1 tablespoon salt. Bring to a boil over high heat then reduce heat so it’s simmering rapidly. Cook 15 minutes or until potatoes are very soft (jab with fork to test, they should fall apart).

Drain well, then return into pot. Leave for 1 minute, shaking pot every now and then, to encourage evaporation of water.

Mash - Add milk (including EXTRA milk if making-ahead), butter, sour cream and 1 tsp salt. Mash until smooth. (Do not use food processor, blender or beater, makes it gluey!)

Mash:

Fridge - Allow to fully cool on the counter then cover tightly with cling wrap and refrigerate.

Dechill - Take out onto counter 2 hours prior to reheating.

Make-ahead directions:

Preheat oven to 200°C / 400°F (180°C fan).

Spread the potato in a 2 litre / 2 quart baking dish (Note 5). Smooth the surface.

Sprinkle - Sprinkle potato with the cheeses, then bacon.

Bake covered - Cover loosely with foil. Bake for 20 minutes covered (if freshly made) or 35 minutes (make-ahead option).

Bake uncovered - Remove foil then bake a further 10 minutes until the cheese is bubbly and golden.

Serve - Sprinkle with green onion then serve! It stays warm for a good 20 minutes thanks to that protective layer of cheese. Oh, the powers of cheese!
