A very tender and moist beef roast made effortlessly in the crockpot.

Crockpot Mississippi Roast (low carb)

beef roast (either chuck roast or outside round)

beef broth

5-6 Pepperoncini peppers (plus ½ cup juice)

parsley

onion powder

garlic powder

black pepper

dill weed

salt

Combine dried seasonings in a small bowl.

Massage outside of beef roast with seasonings. Place in the bottom of a 6qt slow cooker.

Pour beef broth in the sides of the slow cooker. Add 6-8 pepperoncini peppers and 1/2 cup of liquid from the peppers.

Place 1 stick of butter on top of the beef, cover and cook on low 8-10 hours or high 4-5 hours or until beef is fork tender.

Remove beef from the slow cooker and using a fork, gently pull apart large chunks of beef. Stir into juices.

Serve over mashed cauliflower and drizzle with juices from the slow cooker.

Tangy and savory Mississippi pot roast flavors come together in this quick-cooking sloppy joe recipe!

Mississippi Roast Sloppy Joe Recipe

olive oil

beef (I usually use 85/15)

yellow onion, diced

garlic,

tsp kosher salt

tsp black pepper

Tbsp sliced pepperoncini peppers

Worcestershire sauce

tsp ketchup

Tbsp butter

cornstarch

provolone cheese

brioche buns (or your favorite type)

mayonnaise

apple cider vinegar

tsp milk

paprika

pepperoncini juice

To a large skillet, add olive oil and heat over MED HIGH heat.&nbsp; Add beef and cook, crumbling as it browns, for about 4-5 minutes.&nbsp; Drain beef and set aside on a plate.

To same skillet, add onion and cook another 4-5 minutes, stirring just occasionally, so the onions are softened, but a little charred on the edges.&nbsp; Add the beef back to the pan, along with the minced garlic.&nbsp; Cook about 1 minute.&nbsp;

Reduce heat to MED.&nbsp; Season with salt and pepper, then add in sauce ingredients (mayonnaise, vinegar, milk, dill, paprika, and pepper juice), and stir well to combine.&nbsp; Stir in peppers, Worcestershire sauce and ketchup.

Top with butter and stir until melted.&nbsp; In a small bowl, whisk together beef broth and cornstarch.&nbsp; Pour into the skillet and cook, stirring often, until thickened... usually about 5 minutes or so.

Serve on toasted buns with a slice of provolone cheese and a couple extra slices of pepperoncini peppers (optional)

chuck roast ((about 1.5 kg), boneless and trimmed of excess fat)

au jus mix ((1 oz), or brown gravy mix)

ranch mix ((1 oz))

Place the chuck roast into a 6-quart slow cooker.

Sprinkle au jus mix and ranch mix on top of the roast.

Add butter and peppers around the roast.

Cover the slow cooker. Cook on LOW setting for 8 hours, or HIGH for 4-5 hours, or until the meat is fork-tender.

Remove cover and shred the roast using two forks.

Garnish with optional minced parsley and drizzle with gravy. Serve with potatoes, mashed potatoes, rice or noodles.

Slow Cooker:

Turn the instant pot onto Sauté mode. Add 1 tablespoon oil followed by the meat. Sear the roast on all sides (4-5 minutes each side) until nicely browned.

Add the pepperoncini peppers, ranch mix, au jus mix, butter and ¾ cup of water. Cover with the lid and close the steam valve.

Turn off Sauté mode and set to “Manual” mode for “High” Pressure Cook for 80 minutes.

After the cooking cycle finishes, allow for a natural pressure release (about 15 minutes). After that, use the quick pressure lever to manually release any remaining pressure and turn off the pot.

Carefully remove the lid and transfer the roast to a plate and serve.

Instant Pot:

Preheat oven to 350°F (175°C).

Place an oven-proof pot on medium heat and add 1 tablespoon oil. When hot, sear the roast on all sides (4-5 minutes each side) until brown.

Add the pepperoncini peppers, ranch mix, au jus mix, butter and ¾ cup of water. Bring to a simmer and cover.

Transfer to the oven and roast for 3-4 hours until the meat is fork-tender.

Place the chuck roast in the crockpot. Sprinkle ranch powder and au jus gravy mix all over the beef roast.

Place pepperoncinis on top of the roast. Place a stick of butter on the top of the peppers.

Put the lid on and set it on the low setting. Cook for 8-9 hours. Do NOT open the lid to check on the roast until it has cooked for at least 8 hours on low. This roast may be cooked on high for 5 hours but I wouldn&#39;t suggest it as it won&#39;t be as tender.

Shred the beef with two forks. Taste for seasonings and add salt and pepper, if needed. Serve with the gravy on top of mashed potatoes.

This is one of our family's favorite recipes/meals. We shred the roast and eat it on Hawaiian roll buns or hoagie buns with some kettle cooked potato chips as a side! So good!!

I can say I love this so many ways. Beef , Pork , chicken. I have one question can I add one more packet of aus jus gravy?

I love this roast. I do sear my on both side with some salt and pepper in my cast iron with a bit of oil. I'm a fan of french onion in place of the au jus.

I did not add a “little bit of the juice” I dumped the whole jar sauce n all since I never saw “drained” just “add peppers” but still turned out AMAZING.  I used 2 of everything  2  almost 3 LB roasts, 2 ranch, 2 aujus packets, 2 pepper jars, 1 stick of butter. THIS IS SO DELICIOUS THERE’S no right or wrong way to make it.

Do you use the 1 oz package of ranch mix? There’s a .4 and .6. I found as well.

This is the only way I may a pot roast anymore.  So simple and delicious, and it's easy to keep the ingredients on hand.  We have had it several times using a London Broil and eye round roast instead of a chuck roast. Results are the same.  It's a crowd pleaser.  Highly recommend.

This is our go to for roasts…it’s seriously the tastiest roast I have ever had. My 2 slightly picky teen daughters demolish it every time.

Yes, a large pot that can be covered will be fine. I usually brown (sear) all sides of my roast (w/a little oil) in a large cast iron skillet…remove the roast to a plate for a few seconds, and I quarter a medium onion (you want large pieces) and saute that (just a teeny bit)in the oil. Then I place the roast over the onions ..add the seasonings,…and for this I DO add maybe a 1/2 cup water or beef broth -I’m always worried I’ll burn the bottom of the roast… so I kinda use the onions and water as an extra precaution…. I bring the liquid to a boil, and then I cover it with my cast iron lid and  turn the heat to low. You gotta make sure your skillet is deep enough (or whatever you’re gonna use - a big pot, whatever) that you can easily cover it with the lid. It’s best to check on it every say, 20 mins or so, just to make sure nothing is sticking to the bottom. May have to add liquid, just use your judgement. I guess it also depends on how thick your pot or whatever is too. If it’s thin aluminum, just be really careful. Also worth noting, I have cut a larger roast into a couple smaller chunks, brown the outside all sides of them, and proceed as written …. If you want to save some time-seems to cook faster. But honestly this should prob only take like 3-4 hours on the stove top., and it comes out really good! This is the way my grandma always did it, and how I was first taught ti make a roast… at the time I didn’t have a crock pot and I didn’t want to heat up the house doing it in the oven for hours! Now that I have all the gadgets, it’s actually still my preferred method! Hope this helps!
